REINDEER POPS

- Insert one lollipop stick into each marshmallow. In a microwave, melt chocolate and shortening; stir until smooth. Dip marshmallows in chocolate mixture, turning to coat; allow excess to drip off. Insert pops into Styrofoam to keep upright. Let stand to set slightly, about 15 minutes., Decorate faces, attaching eyeballs and using red-hot candies for noses. Using a toothpick, poke two holes in top of each marshmallow; insert pretzel pieces for antlers. If desired, decorate with sprinkles. Refrigerate until set.

- Crumble the cake into fine crumbs using your hands or in a food processor. Put into a bowl. In another bowl, beat together the butter and icing sugar until creamy.
- Melt the plain chocolate in the microwave or in a bowl over a pan of barely simmering water. Add the melted chocolate to the butter mixture and combine well. Add this to the cake crumbs and mix thoroughly using your hands, until it sticks together. Divide the mixture into eight and shape each one into a smooth ball. Insert a cake pop stick, place on a tray lined with baking parchment and chill for at least 2 hours.
- Melt the milk chocolate in the microwave or in a bowl over a pan of barely simmering water. Take a cake pop and dip in the chocolate. Shake gently until the excess has drained off. Push into a polystyrene block.
- Make two holes in the top of the head and insert a pretzel 'antler' in each one. Press a sweetie nose onto the front and hold for a few seconds until attached. Repeat with all the other cake pops. Leave to set for about 20 mins and then using black icing, pipe on eyes and a mouth.

Cute reindeer cupcakes for Christmas that the kids will absolutely adore. These cupcakes are great anytime of year, however, simply skip the reindeer decorating! You can get the kids to help you decorate for loads of family fun.

- Preheat oven to 375 degrees F (190 degrees C). Grease a 12-cup muffin tin or line cups with paper liners.
- Combine 9 tablespoons butter, white sugar, and vanilla extract in a large bowl; beat with an electric mixer until smooth and creamy. Add eggs one at a time and beat until well combined. Fold in half the flour and 1/4 cup milk and stir to combine. Repeat with remaining flour and milk. Spoon batter into the prepared muffin cups, filling each 3/4 full.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 18 minutes.
- Remove tin from oven and cool on a wire rack for 5 minutes. Remove cupcakes from the tin and cool completely on a wire rack before decorating, about 1 hour.
- Combine confections' sugar, 1 tablespoon butter, and 1 tablespoon milk in a large bowl; beat with an electric mixer until smooth and creamy. Thin frosting with a little milk or water, if necessary. Add food coloring and stir until frosting is uniformly brown. Add more food coloring, 1 drop at a time, until frosting is the color you like.
- Spread a thin layer of frosting on top of each cupcake. Break vanilla cookies in half. Place a cookie half on each cupcake as a mouth. Use a bit of frosting to "glue" a jelly bean onto the cookie for Rudolph's red nose. Stick 2 candy eyeballs into each cupcake. Break off a piece from each pretzel so they look like antlers and stick 2 into the top of each cupcakes. Shape chewy candies into ears and stick 2 into the sides of each cupcake.

- Make the boxed cake mix, but using the substitutions recommended in “Make Boxed Cake Mix Taste Like It Was Made From Scratch”. (Substitute melted butter for oil, milk for water, and add an extra egg.) Bake according to package directions in 9″ x 13″ pan.
- While cake is cooling, make frosting. Verify cream cheese and butter are at room temperature. Allow to warm naturally (do not try to microwave).
