OMA'S RHUBARB CAKE
Oma always makes this for her grand kids after she picks through her garden. Probably not good for the thighs but Oma's cooking is always good for the taste buds.

- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking dish.
- In a large bowl, stir together 1 1/4 cups sugar, baking soda, salt and 2 cups flour. Stir in the eggs and sour cream until smooth, then fold in the rhubarb. Pour into the prepared dish and spread evenly. In a smaller bowl, stir together the remaining 1 cup sugar and butter until smooth. Stir in 1/4 cup flour until the mixture is crumbly. Sprinkle the mixture on top of the cake then dust lightly with cinnamon.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 45 minutes.

Delicious served warm with ice cream. If you don't have buttermilk, you may substitute sour milk. Stir 1 tablespoon of vinegar or lemon juice together with 1 cup of milk and let stand for 10 minutes.

- In a large bowl, rub the fat into the flour, baking powder and sugar with your fingertips until the mixture resembles breadcrumbs.
- Chop the rhubarb into small pieces and stir into the cake mixture.
- Make a well in the centre and add the eggs. Stir together with a flat bladed knife until it all comes together.
- Tip into a 20cm (8") silicone round cake mould or lined tin and level with the back of a spoon. Sprinkle the remaining tsp of sugar over the top.
- Bake at 180℃ (350℉, Gas 4) for about 35 minutes until the cake is well risen and a skewer inserted into the middle comes out clean.
- Leave to cool for about ten minutes, then turn out onto a wire rack to cool completely.

- Set oven to 350 degrees F.
- Grease a 13 x 9-inch baking dish.
- In a small bowl using fingers mix together the topping ingredients until crumbly; set aside.
- In a large bowl cream 1/2 cup butter with sugar until fluffy (about 2 minutes).
- Add in egg and vanilla; beat until well combined.
- In a small bowl mix together 2 cups flour with baking soda, salt and a pinch of nutmeg; add to the creamed mixture alternately with buttermilk.
- Toss the chopped rhubarb with 1 tablespoon flour then stir into the batter along with the walnuts.

- Preheat oven to 350 degrees.
- In a large bowl, mix eggs, sour cream, sugar, baking soda and salt blending well.
- Add in flour a little bit at a time.
- Add in rhubarb. Blend well.
- Place batter in a greased or parchment lined 9 x 13 cake pan or two loaf pans.
- In a separate bowl, add crumble ingredients and blend well.
- Drop dollops of cinnamon mixture with your fingers on the top of the batter which will spread out a bit and create crispy pockets of sweet cinnamon goodness.
- Bake for 45 minutes in a 350 degree oven.
