RICE NOODLES WITH THAI BASIL, MINT AND PEANUTS



Rice Noodles With Thai Basil, Mint and Peanuts image

Sort of a conglomeration of Asian cuisines. The original recipe has fresh cilantro only, but we liked both cilantro and Thai basil. From Bon Appetit April 1996. Rice noodles are available at Asian markets. I also like to throw in a fresh tomato or two (sliced or diced) to the mix.

1/4 cup rice vinegar
1 tablespoon sugar
1/2 sweet onion, thinly sliced and separated into rings
8 ounces firm dried rice noodles
1/4 cup fresh lime juice
2 teaspoons vegetable oil
1/2 teaspoon dried red pepper flakes (I used a little bit of red jalapeno)
1/3 cup of fresh mint, chopped
1/3 cup fresh Thai basil or 1/3 cup fresh cilantro, chopped
1 large cucumber, peeled, halved lengthwise, seeded and thinly sliced
1 -2 small fresh tomato (sliced or diced)
4 green onions, white and green parts, thinly sliced
2 tablespoons dry roasted salted peanuts
salt, to taste
pepper, to taste

Steps:

  • In a non-reactive bowl, whisk the rice vinegar and sugar together. Add the onion rings and toss to coat. Let stand at least 30 minutes but up to 4 hours. Drain, reserving 2 tablespoons of the soaking liquid.
  • In a large pot of boiling water, cook the rice noodles until al dente, about 2 minutes. Drain and rinse under cold water. Drain well.
  • In a small bowl, whisk together the lime juice, oil and red pepper flakes (or fresh minced red jalapeno). Stir in the mint and Thai basil.
  • Cut the cooked noodles into 3-4" long sections. Add a small amount of the noodles to a serving bowl and toss with the reserved vinegar/onion liquid. Add the remaining noodles, cucumber, fresh tomatoes, green onions and marinated onions.
  • Drizzle the lime juice mixture over the rice noodles and toss gently. Season with salt and pepper to taste.
  • Garnish with the roasted peanuts.

8 oz rice stick noodles
1/2 cup creamy peanut butter
2 tablespoons soy sauce
1 teaspoon grated gingerroot
1/2 teaspoon crushed red pepper
1/2 cup vegetable or chicken broth
1 cup shredded carrots (1 1/2 medium)
1 small red bell pepper, cut into 1/4-inch strips
2 medium green onions, sliced (2 tablespoons)
2 tablespoons chopped fresh cilantro, if desired

Steps:

  • In 3-quart saucepan, heat 2 quarts water to boiling. Break noodles in half and pull apart slightly; drop into boiling water. Cook uncovered 1 minute; drain. Rinse with cold water; drain.
  • In small bowl, beat peanut butter, soy sauce, gingerroot and crushed red pepper with wire whisk until smooth. Gradually beat in broth.
  • Place noodles in large bowl. Add peanut butter mixture, carrots, bell pepper and onions; toss. Sprinkle with cilantro.

I had peanut noodles at a Thai carry-out place and then craved them again days later (and miles away). This recipe cures my craving for those noodles. I love cilantro and I add more than the recipe states :)

16 ounces thin spaghetti
3 tablespoons sesame oil
1 tablespoon black sesame seed
1 tablespoon sesame seeds
1/2 cup vegetable broth
1/2 cup reduced-fat creamy peanut butter
1/2 cup reduced sodium soy sauce
1 tablespoon sugar
2 tablespoons rice wine vinegar
2 garlic cloves, minced
1/4 cup chopped fresh cilantro
1/4 cup chopped green onion
1/4 cup chopped roasted peanuts
1 inch piece fresh gingerroot, finely chopped

Steps:

  • Cook pasta according to box directions, drain and rinse with cold water in a colander. Transfer pasta to a large bowl and toss with sesame oil and sesame seeds. Set aside.
  • Heat the broth in a medium saucepan over medium heat; cook about 2 minutes. Set aside. Puree peanut butter, soy sauce, sugar and vinegar in a blender or food processor; stir mixture into broth. Cook until flavors combine, about 2 minutes. Remove from heat.
  • Toss together the pasta and peanut butter dressing. Add garlic, cilantro, green onions, peanuts and ginger. Serve at room temperature.

1 tablespoon vegetable oil
¾ white onion, chopped
4 cloves garlic
½ teaspoon red pepper flakes
1 pound frozen shrimp, thawed
2 (14.5 ounce) cans fire-roasted diced tomatoes
2 tablespoons creamy peanut butter
1 teaspoon red chile paste, or more to taste
1 (8 ounce) package wide rice noodles
hot water to cover
¼ cup chopped fresh cilantro, or to taste
¼ cup Greek-style yogurt, or to taste
¼ cup chopped peanuts, or to taste

Steps:

  • Heat vegetable oil in a large pan or skillet over medium heat; saute onion, garlic, and red pepper flakes until garlic is slightly browned, 2 to 3 minutes. Add shrimp; cook and stir until shrimp begin to firm, about 5 minutes.
  • Stir tomatoes, peanut butter, and red chile paste into shrimp mixture; bring to a boil. Reduce heat and simmer until sauce thickens, about 20 minutes.
  • Place noodles in a large bowl and cover with hot water. Set aside until noodles are softened, about 15 minutes. Drain and rinse thoroughly.
  • Divide noodles among serving plates; top with shrimp sauce. Garnish each serving with cilantro, yogurt, and peanuts.

The cilantro blended with the rice noodles gives this pesto pasta dish an Asian feel.

2 teaspoons salt, plus more for water and pine nuts
2 cups fresh cilantro leaves (1 bunch)
1 tablespoon freshly squeezed lime juice (1/2 lime)
5 tablespoons extra-virgin olive oil
1 tablespoon plus 1 teaspoon unsalted butter, room temperature
Freshly ground pepper
3 tablespoons pine nuts
8 ounces wide rice noodles or fresh or dried fettuccine

Steps:

  • Bring a large saucepan of generously salted water to a boil. Combine cilantro, lime juice, olive oil, 1 tablespoon butter, 2 teaspoons salt, and pepper to taste in the bowl of a food processor, and puree. Remove from the food processor, transfer to a small bowl, and set cilantro pesto aside.
  • Melt remaining teaspoon butter in a small saute pan over medium-high heat. Add pine nuts; cook, tossing until golden brown, about 1 minute. Sprinkle with salt, and transfer to a paper towel to drain. Set aside.
  • Cook noodles until al dente, about 2 minutes. Drain in a colander. Transfer to a large bowl. Add the cilantro pesto; toss, and garnish with pine nuts.

  • Whisk vinegar and sugar in medium bowl to blend. Add onion rings and toss to coat. Cover and let stand at least 30 minutes and up to 4 hours. Drain, reserving 2 tablespoons vinegar mixture.
  • Cook noodles in large pot of boiling water until tender but still firm to bite, about 2 minutes. Drain. Rinse under cold water. Drain well.

Using kitchen shears, cut noodles into 3- to 4-inch-long sections. place handful of noodles in large bowl. Drizzle with reserved 2 tablespoons vinegar mixture and toss to coat.
