1/2 cup shortening
1 1/4 cups brown sugar
1 teaspoon baking soda
2 tablespoons boiling water
1/2 teaspoon vanilla
1 1/2 teaspoons lemon extract
2 cups flour, sifted
1/2 teaspoon salt
2 cups rolled oats
3/4 cup coconut

Steps:

  • Cream butter and shortening.
  • Blend in brown sugar. Add baking soda dissolved in boiling water, vanilla, and lemon extract.
  • Add gradually, sifted flour, salt and coconut. Work in 2 cups rolled oats.
  • Form dough into small balls. Place on greased baking sheet. Press flat with floured fork.
  • Bake at 350 for 12-15 minutes.

2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup unsalted butter (2 sticks), at room temperature
1 1/4 cups dark brown sugar
1 tablespoon honey
1 teaspoon vanilla extract
2 eggs
1/2 cup sweetened coconut flakes
3/4 cup dried cranberries
2 cups quick oats
1/2 teaspoon fresh rosemary, finely chopped

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium bowl, sift together flour, soda, powder, cinnamon and salt. Set aside.
  • In a large bowl, cream butter and sugar with a mixer. Mix in honey and vanilla until fluffy. Add eggs one at a time, until fully incorporated. Mix in coconut, dried cranberries, oats and rosemary. Fold dry ingredients into butter mixture. Form into balls, approximately 2 tablespoons. Place 2 inches apart on parchment lined cookie sheets. Bake until cookies turn golden, 13 to 15 minutes. Remove from oven to cooling rack. Let sit 5 minutes in the pan before transferring to a rack to cool completely.

1 cup (2 sticks) unsalted butter, room temperature
1 cup packed light-brown sugar
1 cup granulated sugar
2 large eggs, room temperature
1 teaspoon pure vanilla extract
3 cups old-fashioned rolled oats
1 cup all-purpose flour
1/2 cup wheat germ
1 teaspoon baking soda
1 teaspoon baking powder
1 1/2 cups mixed dried fruits and nuts, such as golden raisins, currants, coarsely chopped dried apricots, dried cherries, coarsely chopped pecans, or a combination of above

Steps:

  • Heat oven to 350 degrees. Line baking sheets with Silpats; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream butter, brown sugar, and granulated sugar on medium speed until light and fluffy, about 3 minutes. Add eggs; mix on high speed to combine. Mix in vanilla; set aside.
  • Combine oats, flour, wheat germ, baking soda, and baking powder in a large bowl. Stir to combine. Add the flour mixture to the butter mixture, and beat on low speed to combine, 10 to 15 seconds. Remove bowl from mixer, and stir in dried fruits and nuts.
  • Using a large metal scoop, drop dough onto prepared sheets, about 2 inches apart. Bake until golden and just set, about 18 minutes. Transfer sheets to wire rack to cool.

2 cups shortening
2 cups brown sugar
½ cup white sugar
4 eggs
2 teaspoons vanilla extract
4 cups all-purpose flour
1 ½ teaspoons baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground allspice
1 teaspoon ground cloves
6 cups rolled oats
1 cup milk
2 cups raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the shortening, brown sugar and white sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking soda, salt, cinnamon, allspice and cloves; stir into the sugar mixture until well blended. Mix in the rolled oats alternately with the milk. Finally, stir in the raisins. Drop by heaping spoonfuls 3 inches apart onto the prepared cookie sheets.
  • Bake in the preheated oven for 10 to 11 minutes, or until edges are golden and tops are dry. Cool on cookie sheets for 1 minute before removing to cool on wire racks.

This recipe was rec'd from Anne O'Rielly many years ago when I was selling my baking. Its a very nice cookie.

2 cups cake flour
1/2 teaspoon salt
1/2 cup butter
1/2 cup Crisco shortening
1 1/4 cups brown sugar
1 teaspoon vanilla
1 teaspoon baking soda
2 tablespoons boiling water
2 cups rolled oats (five or twenty minute)

Steps:

  • Measure the flour and salt and set aside.
  • Dissolve the baking soda in the boiling water.
  • Cream the butter, shortening, blend in the sugar well.
  • Add the dissolved soda, then vanilla.
  • Add in the dry ingredients, and combine until well blended.
  • Shape into small balls 2 inches apart set onto parchment lined cookie sheet. Press down with a floured fork.
  • Bake in preheated oven 350 degrees, for 10 to 14 minutes, until golden.
