- Start by browning the ground beef in a large pot over medium-high heat. Drain off the fat.
- Add in the green peppers and onions. Stir, and then add 1 cup water, the ketchup and garlic. Stir it around to combine, and then add the brown sugar, chili powder, dry mustard, red pepper flakes, and hot sauce, Worcestershire, salt and pepper to taste. Stir to combine, and then cover and simmer over medium-low heat, about 20 minutes.
- To serve, spread the rolls with the butter and brown them on a griddle or in a skillet. Spoon a good amount of the meat mixture onto the bottom roll, and then top with the other half. Serve with chips, salad or just enjoy it by itself.
SUPER SLOPPY JOES

- Heat a large skillet over medium high heat. Add oil and meat to the pan. Spread the meat around the pan and begin to break it up. Combine brown sugar and steak seasoning. Add sugar and spice mixture to the skillet and combine. When the meat has browned, add onion and red peppers to the skillet. Reduce heat to medium and cook onions, peppers, red wine vinegar and Worcestershire sauce with meat for 5 minutes. Add tomato sauce and paste to pan. Stir to combine. Reduce heat to simmer and cook Sloppy Joe mixture 5 minutes longer. Using a large spoon or ice cream scoop, pile sloppy meat onto toasted, buttered bun bottoms and cover with bun tops. Serve with your favorite sides or sliced tomatoes seasoned with salt and pepper, dill pickles and Deviled Potato Salad. Have plenty of napkins on hand!
- Boil potatoes in water seasoned with coarse salt until they are tender, about 10 minutes. Drain cooked potatoes and return to the warm pot to dry them out. Let the potatoes stand 2 minutes, then spread potatoes out on to a cookie sheet to quick-cool them.
- In the bottom of a medium mixing bowl, grate 1/4 onion using a hand grater. Add mustard and mayonnaise, paprika and cayenne pepper sauce to the grated onion and stir to combine. Add potatoes to the bowl and stir to evenly distribute dressing. Season potato salad with salt and pepper and taste to adjust your seasonings. Top servings of salad with chopped scallions.

- Stir in soup, ketchup, yellow mustard, water, salt and pepper. Turn heat to medium-low; simmer uncovered for about 1 hour until liquid is absorbed and mixture is thickened.

SLOPPY JOES
This simple version of sloppy Joes, the classic sandwich served in school cafeterias and at kitchen counters across the country, comes together in about 20 minutes and can be made with ground beef, chicken or turkey. As the name suggests, they are messy, so serve with a fork and plenty of napkins.

- In a saucepan over low heat combine the sauce ingredients. Season to taste with salt and pepper. Mix well, and simmer while preparing the meat.
- Heat a heavy nonstick or cast-iron skillet, at least 10 inches in diameter, over medium-high heat. Add the ground sirloin, and saute, stirring occasionally, for 4 to 5 minutes, or until the meat is no longer pink. Turn the meat into a strainer or colander lined with paper towels, allowing the fat to drain off.
- Add the onion to the pan, and sauté, stirring frequently, for about 5 minutes, or until the onion is translucent. Return the meat to the pan, and add the sauce. Heat for 3 minutes, stirring occasionally. Taste and season with salt, pepper or more hot sauce, if desired. Spoon 1/2 cup of the mixture over each bun. Serve immediately.

- To make the sloppy (BBQ Sauce) heat a saucepan over medium high heat and add the oil, onion, garlic, and thyme and a pinch of salt
- Cook stirring often until the onion is softened but not browned, about 5 minutes.
- Meanwhile, combine the sugar and water in a skillet over medium high heat.
- Cook, stirring the sugar in the skillet until the caramel is dark brown.
- Add the vinegar and clam juice and simmer until caramel is dissolved.
- Add the caramel clam juice mixture along with the ketchup, Tabasco, Worcestershire and white pepper to the onions and simmer for 20 minutes (sauce can be made in advance).
- For the Joe (fish) heat a saucepan over medium high heat.
- When the pan is hot add the oil, pepper, and onion and cook until soft.
- Add the paprika and saute for 1 minute.
- Add the catfish and saute for 1 minute.
- Add the BBQ sauce and bring to a simmer, reduce heat to low and cook 6-7 minutes.
- Meanwhile, butter the buns and toast them on a hot skillet.
- Serving suggestion: pile potato chips and pickles on the buns for crunch and then pile them high with the catfish sloppy joe.

- Combine the ground beef and onion in a cold skillet, place the skillet onto a stove burner, and turn the heat to medium; cook and stir until the beef is crumbly and browned. Stir the garlic and bell pepper into the beef mixture; continue cooking and stirring until the vegetables are tender, 2 to 3 more minutes. Add 1 cup of water. Mix in ketchup, brown sugar, Dijon mustard, Worcestershire, salt, and pepper. Pour in 1 more cup of water. Bring to a simmer. Reduce heat to low and cook until the mixture becomes very thick, 30 to 45 minutes. Adjust salt and pepper as needed. Season with cayenne.

- Season catfish with salt.
- Heat medium-sized skillet over medium-high heat. When pan is hot (drop of water will sizzle on contact), add oil, onion, and bell pepper. Cook, stirring often, until vegetables begin to soften, about 3 minutes.
- Stir in paprika and cook, stirring constantly, for 1 minute.
- Add catfish and cook for 1 minute, stirring frequently so all sides of fish come in contact with hot pan.
- Stir in barbecue sauce and bring to a simmer.
- Reduce heat to low and simmer until thick, about 10 to 12 minutes. Butter rolls and lightly toast, buttered side down, in skillet. Fill buns and serve hot.
