WARM AND CHEESY ARTICHOKE DIP WITH TOAST



Warm and Cheesy Artichoke Dip with Toast image

Number Of Ingredients 7

3 cups artichoke hearts, coarsely chopped
1 cup mayonnaise
1 cup grated Parmesan
1 tablespoon chopped fresh parsley
Salt and freshly ground black pepper
1/4 cup breadcrumbs
1 baguette, cut into 1/2-inch slices

Steps:

  • Preheat the oven to 375 degrees F.
  • Combine the artichoke hearts, mayonnaise, Parmesan, parsley, a small pinch of salt and lots of pepper in a mixing bowl. Fold it all together to combine, then transfer to a small baking dish or oven-safe serving bowl. Top with the breadcrumbs and cover with aluminum foil.
  • Bake until golden and bubbly, 30 minutes.
  • Meanwhile, arrange the baguette slices on a baking sheet and toast in the oven for 3 or 4 minutes.
  • Allow the dip to cool slightly. Serve with the toasts.

3 Tlbs. unsalted butter
1 large onion, sliced (about 2 cups)
½ tsp. salt
1 large garlic clove, minced
¼ tsp. red pepper flakes (optional)
¼ cup sweet vermouth
8 ounces light cream cheese, softened
½ cup light sour cream
1 cup shredded gruyere cheese
1 cup shredded mozzarella cheese
2 tsp. whole-grain mustard
¼ tsp. pepper
½ cup chopped artichoke hearts

Steps:

  • Preheat oven to 425 degrees. Grease a 1-quart baking dish.
  • Add butter to a small skillet. Turn the heat on medium-high. Once butter has melted and begins to brown on the edges, swirl the pan. Continue to swirl the pan until the butter turns a deep brown color and smells nutty, about 2 minutes. Add onions and salt. Reduce the heat to a medium-low and cook onions and caramelized and brown, about 10 minutes. Stir frequently.
  • Once onions have caramelized add garlic. Cook 1 minute. Add red pepper flakes and sweet vermouth. Bring to a boil and reduce to a simmer until the liquid is reduced by half, about 1 minute.
  • Add cream cheese, sour cream, gruyere. mozzarella, mustard, pepper and artichoke hearts. Stir until combined. Transfer to a baking dish and bake until bubbly and golden brown, about 15 minutes.
  • Serve with crackers

1 teaspoon olive oil
1/2 onion
Salt and pepper
One 8-ounce package Neufchatel-style cream cheese
1/2 cup light mayonnaise
One 14-ounce can artichoke hearts
3/4 cup shredded part-skim mozzarella cheese
1/3 cup grated Parmesan
Dash hot sauce
Dash Worcestershire sauce
4 green onions

Steps:

  • Heat the oil in a nonstick medium skillet. Add the onions, season with 1/4 teaspoon kosher salt and cook over low heat, stirring frequently, until caramelized, 25 minutes; set aside.
  • Preheat the oven to 350 degrees F.
  • In a large mixing bowl, beat the cream cheese with a hand-held electric mixer until smooth; beat in the mayonnaise until smooth. Add the reserved caramelized onions, the artichoke hearts, mozzarella, Parmesan, hot sauce, Worcestershire and half of the green onions. Add an additional 1/4 teaspoon of salt and some black pepper to taste and stir together until combined. Transfer the dip to a pie plate or shallow gratin dish and bake until the top is golden brown, 30 to 40 minutes.
  • Serve hot with crackers, tortilla chips, crostini or veggies. Garnish with the remaining green onions.
