LAMB FRICASSEE: GREEK STYLE LAMB & GREENS IN AVGOLEMONO SAUCE image

Number Of Ingredients 11

2 - 2 and ½ pounds lamb
¼ cup olive oil
Salt and freshly ground pepper to taste
8 scallions, finely sliced
1-pound greens: Romaine lettuce, mustard greens, spinach, or dandelion greens, roughly chopped
¼ cup dill, finely chopped
2 tablespoons mint, finely chopped
3 egg yolks
¼-1/2 cup fresh lemon juice
Pinch of salt
1 tablespoon cornstarch

Steps:

  • A traditional Greek dish made with lamb and greens in a refreshing lemon sauce.
  • Season the meat on both sides with salt and pepper.
  • Heat olive oil in a pot and brown the meat in a few batches all around. About 5-8 minutes. Do this in batches as to avoid overcrowding the pot. Overcrowding the pot will prevent the meat from browning.
  • Note: the meat can also be browned in the oven by placing it in a baking pan, drizzled with olive oil and seasoned with salt and pepper. Roast at 500 °F, 260 °C for about 10 minutes.
  • Add the sliced scallions to the pot with the meat and cook over high heat for 3-5 minutes or until the scallions soften a bit.
  • Cover the meat with water and bring to a boil.
  • Cover the pot with the lid and reduce the heat to a medium low. Cook for approximately 1 and ½ to 2 hours or until the meat is tender. Stir often and add more water if needed.
  • Wash, dry, and coarsely chop the greens.
  • Once the meat is soft, add the chopped greens to the pot, cover with lid and cook until they are wilted.
  • Taste and add more salt and pepper if desired.
  • Prepare the Avgolemono sauce by combining the egg yolks, lemon juice, and corn starch in a small bowl. Whisk until smooth.
  • Temper the sauce by adding about ½ cup of hot liquid from the pot and whisking to combine.
  • Pour the sauce into the pot and mix to distribute.
  • Cook over medium heat 3-5 minutes. Stir in the chopped mint and dill and serve.

Try this unusual Greek-inspired roast - a fantastic alternative Sunday dish

1 leg lamb weighing 2.5kg-2.7kg/5lb 8oz-6lb
2 tbsp Dijon mustard
1 tsp plain flour
1 tsp cornflour
4 egg yolks
juice of 2 lemons
300ml hot chicken stock
4 spring onions , finely sliced

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Set the leg of lamb into a roasting tin. Season with a little salt and plenty of black pepper. In a bowl, mix together the mustard and plain flour to a smooth paste. Spread it all over the lamb. Roast for 20 mins, then reduce the heat to 160C/fan 140C/gas 3 and cook for a further 1 hr 20 mins. Remove the lamb from the oven and leave to stand, covered in foil, for 15 mins.
  • For the sauce, mix together 2 tbsp cold water and the cornflour to make a smooth paste. Beat together the egg yolks and lemon juice in a small saucepan and add 2-3 tbsp of the hot stock, whisking well. Stir in the cornflour paste and heat gently. Pour over the rest of the stock, then over a low heat stirring constantly, cook for 7-10 mins until the sauce has thickened. Do not boil. Add the spring onions, adjust the seasoning to taste, and serve hot with thin slices of the lamb.

Traditional Lamb Fricassée with Avgolemono Sauce image

A lovely Spring dish with succulent lamb, tender greens and a creamy avgolemono sauce!

3 lbs. of boneless leg of lamb
½ cup extra virgin olive oil
1 medium leek, sliced
10 scallions, chopped
3 stalks of celery, with their leaves, chopped
3 cups chicken stock
2 tsp. salt
1 tsp. pepper
2 heads of lettuce, (Little Gem or Romaine), coarsely chopped
a bunch of fresh dill, chopped
For the Avgolemono Sauce:
3 medium eggs, separated
--- juice of 2 medium lemons
1 Tbsp. cold water
½ tsp. corn flour

Steps:

  • Trim most of the visible fat from the lamb then cut the meat into 1½" - 2" chunks. Pat down the lamb to remove any excess moisture then brown it on all sides over medium-high heat in the olive oil in a large Dutch oven.
  • Add the leeks, onions, and celery to the pot and sauté until the vegetables soften. Add the chicken stock to cover the mixture and season it generously with salt and pepper. Cover and cook on medium heat for about 40 minutes.
  • Mince the dill, reserving some for garnish. Chop the lettuce and add it to the pot, along with the dill. Reduce the heat, cover, and simmer for 30 minutes, or, until the lamb is fork-tender and a small amount of liquid (about a cup or so) remains in the pot. Turn off the heat.
  • Prepare the egg-lemon (avgolemono) sauce. In a small bowl whisk the egg whites with the teaspoon of cold water and a little corn flour until very frothy. Whisk in the egg yolks and lemon juice (start with only one lemon if you do not like the acidity of the lemon too much). Temper the avgolemono sauce by slowly adding one ladleful of the hot liquid from the pot to the small bowl with the eggs, while whisking the whole time. Continue with a second ladleful of the hot liquid and whisk again. Now add the avgolemono to the pot and stir gently to incorporate. Shake the pot a few times to make sure everything is thoroughly mixed together.
  • If you need to reheat the lamb fricassée before serving, do so very gently, making sure the stew does not come to a boil. Place on a serving platter, topped with the reserved minced dill, a drizzle of olive oil and a few wedges of lemon. Good, crusty bread is a must and a Greek salad on the side is always a good idea.

AVGOLEMONO RICE



Avgolemono Rice image

This avgolemono rice uses lamb stock because we love its connection to the roast leg of lamb at Easter, but you can happily use chicken stock at any time of year. The rice is cooked "pasta style," in plenty of boiling salted water and drained when done, which is how we cook rice pretty much all the time now, dodging the sometimes mushy, sometimes waterlogged, sometimes al dente results of the usual cooking method. The egg-lemon sauce is tart and creamy at the same time, a unique richness without any cream or butter, that is killer almost anywhere it lands, from warm asparagus, to gently roasted salmon, to cold poached chicken, to steamed artichokes, even to orzo pasta.

Coarse kosher salt, for cooking rice and for seasoning the sauce
1 1/4 cups jasmine rice
3/4 cup frozen small peas
2 cups excellent homemade brown lamb stock (using well-roasted bones; even better if bits of meat remain)
5 large egg yolks
1/4 cup freshly squeezed lemon juice
4 scallions, sliced in 1/3-inch rings, on a slight bias
Freshly and finely ground black pepper

Steps:

  • Bring 8 cups of water to a rolling boil. Season lightly with salt. Rinse the rice, and pour into boiling water, stirring well to keep grains from clumping. When the water returns to a boil, lower heat a little to a gentle boil, and cook the rice "pasta-style" until just done.
  • Drain the rice through a fine-mesh colander, giving it a couple of hearty shakes to remove the last of the water. Immediately spread cooked rice out on a sheet pan lined with parchment to cool quickly. Do not pat down or pack the rice - you want it fluffy and to be able to cool and dry quickly.
  • Rinse the peas under cool water briefly to remove any frosty crystals.
  • Bring the lamb stock to a simmer.
  • In a stainless bowl, whisk egg yolks and lemon juice together until fully incorporated.In a slow steady stream, while constantly whisking, add half the hot lamb stock into the yolks. Then whisk the egg-lemon mixture back into the remaining stock.
  • Return the pot to the stove, and simmer (still whisking constantly so as not to cook the egg too fast and too hard), until the avgolemono sauce is full-bodied, approximately the consistency of buttermilk - a minute or 90 seconds more.
  • Stir in the scallions, then the peas, and when they both turn bright green, turn off the heat, and stir in the rice. Season to taste with salt and pepper. The rice should be as soupy as risi e bisi and as creamy as risotto.

I've done more than a few lamb dishes dedicated to Easter, but inexplicably have never posted one for a whole leg of lamb. It's such a classic Easter menu option, and, when prepared using this method, makes for a very user-friendly hunk of meat.

¼ cup pomegranate molasses
4 cloves garlic, minced
1 tablespoon chopped fresh rosemary
1 tablespoon kosher salt
2 teaspoons freshly ground black pepper
1 teaspoon Aleppo pepper
1 teaspoon dried mint
1 teaspoon ground cumin
1 (5 pound) boneless leg of lamb, butterflied
kitchen twine
salt to taste
water as needed
1 tablespoon pomegranate molasses, or as needed

Steps:

  • Stir 1/4 cup pomegranate molasses, garlic, rosemary, kosher salt, black pepper, Aleppo pepper, mint, and cumin together in a bowl.
  • Arrange the butterflied leg of lamb onto a work surface with the fatty side facing down. Cut 2 deep slashes in each of the the fleshy ends of the meat. Flip the lamb and cut 10 to 20 shallow slashes across the surface of the fat.
  • Spread 3/4 the pomegranate molasses mixture onto the meat-side of the lamb to coat completely. Fold meat together and turn into a large bowl. Spread remaining pomegranate mixture over the fatty side of the meat. Cover the bowl with plastic wrap and refrigerate 8 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C). Place a roasting rack in the bottom of a roasting pan.
  • Remove lamb from marinade and discard excess marinade. Gather roast and place onto a work surface with fatty side facing upwards. Tie the center section of the roast with kitchen twine to cinch the roast together. Repeat ties four times along the length of the roast.
  • Season roast with salt and transfer to prepared roasting pan. Pour water below the rack to cover the bottom of the pan.
  • Roast in the preheated oven until hot and slightly pink in the center, about 1 3/4 hours. An instant-read thermometer inserted into the center should read at least 135 degrees F (57 degrees C). Rest for 15 minutes, transfer to a plate, and brush with remaining pomegranate molasses.

This Greek lamb stew has pearl onions, olive oil, and lots of fresh dill. It is finished off with an egg, and lemon sauce-avgolemono.

2 lb lamb stew meat
2 cups broth
1 lb pearl onions
1 onion (finely chopped)
1 tablespoon black pepper morcels
1-2 bay leaf
1 cup white wine
½ bunch fresh dill
3 tablespoon extra virgin olive oil
2 eggs (beaten)
2 lemons (juiced)
freshly ground pepper (optional)
red pepper flakes (optional)

Steps:

  • Season the lamb pieces with sea salt and freshly ground pepper.
  • Add the pearl onions with two cups of broth in a sauce pan and simmer in medium high heat for 15 minutes.
  • Heat 2-3 tablespoons olive oil in a pot. Add the diced onion, season with a pinch or two sea salt, and saute for 2-3 minutes. Add the lamb and saute for 3-4 minutes or until lamb is browned all over. Add the black pepper kernels and bay leaf.
  • Add the white wine and simmer on high for 1-2 minutes until the alcohol evaporates. Add the pearl onions and broth and the chopped dill. Season with sea salt and freshly ground pepper, cover the pot, and turn the heat to low. Slowcook until lamb is soft and can be pulled apart, about 60 minutes. Let it sit for 10 minutes after it is done to cool the broth.

For the Lamb Fricassee:
3 1/4 to 3 1/2 pounds of lamb (cut into large chunks)
2 large heads of Romaine lettuce (broken into large pieces)
1/2 bunch of fresh dill (chopped)
2 to 3 stalks of celery (chopped)
10 green onions (chopped)
1 cup of olive oil
1/2 cup of water
2 teaspoons of salt
1/2 teaspoon of pepper
For the Avgolemono:
3 eggs (separated)
Juice of 3 lemons
1 tablespoon of cold water

Steps:

  • Boil the lamb in enough water to cover for 10 minutes. Drain.
  • In a frying pan, heat the oil over high heat, and brown the meat. Add the onions, and cook until they soften.
  • Transfer to a stew pot with 1/2 cup of water, celery, salt, and pepper. Cook, covered, for 30 minutes over medium-high heat.
  • Add dill and lettuce, resume boil, reduce heat, cover, and simmer for 1 hour.
  • When the fricassee has cooked and only a small amount of liquid remains in the pot, turn off heat.
  • In a small bowl, whisk together the egg whites with 1 tablespoon of cold water until frothy. Whisk in the egg yolks and lemon juice.
  • Add 1 to 2 ladleful of liquid from the pot to the egg-lemon mixture and stir gently. Slowly pour the egg-lemon sauce over the meat.
  • With a wooden spoon, stir gently 4 times. Then shake the pot gently side to side to distribute.
  • Allow to sit covered on the stove for 20 minutes before serving.

This comes from the 'Great Dinner Parties" cookbook by Barbara Myer. I've served this several times over the past twenty years and my guests have always enjoyed it. You may use a gas/ charcoal grill if desired and this can be partially made ahead. The avgolemono sauce is a delicate Greek lemon sauce, delicious with the lamb.Marinating time is not included in prep time;meat must be prepared a day in advance.

8 lbs leg of lamb, boned and butterflied
1/4 cup red wine vinegar
1/2 cup olive oil
6 garlic cloves, minced
1 tablespoon salt
10 peppercorns, crushed
1 tablespoon cornstarch
2 tablespoons lemon juice, strained to remove pulp and seeds (one large lemon)
5 egg yolks, unbeaten
1 teaspoon salt
1/8 teaspoon cayenne pepper
1 teaspoon dried mint, crushed
2 cups chicken broth

Steps:

  • For the Lamb:.
  • Remove all but 1/4 inch of fat from surface of lamb.
  • Combine the vinegar, oil, garlic, salt and pepper in a large non-metal pan large enough to accommodate the meat spread flat.( I like to use a large zip-lock bag).
  • Put the lamb in the marinade, turn over once, cover with plastic wrap, then with aluminum foil, and refrigerate at least 24 hours before cooking, turning occasionally.
  • Remove from the refrigerator and let lamb come to room temperature before broiling.
  • Preheat broiler 15 to 20 minutes, with broiler rack in place, about 4 inches below the source of heat.
  • Remove lamb from marinade, drain and place on hot broiler rack, fat side down.
  • Broil 15 minutes, turn and broil 15 to 20 minutes longer for medium-rare lamb.
  • Test with a knife in the thickest part, and if not done sufficiently, broil for a few minutes longer.
  • The lamb should be charred in places; however, watch carefully so it does not catch on fire.
  • To serve, carve across the grain into 1/4 inch thick slices, and arrange overlapping on a hot serving platter.
  • Spoon a little warm avgolemono sauce over middle of sliced lamb and pass the remainder.
  • For the Avgolemono Sauce:.
  • In a 1 quart heavy saucepan, dissolve the cornstarch in the lemon juice.
  • Add the egg yolks, salt, cayenne, and dried mint leaves; stir with a whisk to blend, then stir in chicken broth.
  • Stirring constantly, cook over medium heat until the mixture begins to thicken and coats a spoon( it should not approach a boil).
  • Remove from heat and use immediately or keep warm over hot, but not boiling, water until ready to serve.
  • To prepare in advance, complete sauce, cool, and cover with plastic wrap and refrigerate. When ready to serve, reheat slowly until warm (do not let boil).

12 garlic cloves (about 1 head), peeled
1/4 cup olive oil
1 tablespoon dried oregano
1/2 plus 1/8 teaspoon ground cinnamon
Coarse salt and freshly ground pepper
1 boned leg of lamb (5 to 6 pounds), rolled and tied
1 1/2 cups low-fat plain yogurt
1/2 cup lightly packed flat-leaf parsley leaves, finely chopped

Steps:

  • Preheat oven to 475 degrees. In a blender, puree garlic, oil, oregano, 1/2 teaspoon cinnamon, 1 tablespoon coarse salt, and 1 1/2 teaspoons pepper. Place lamb in a roasting pan; rub with garlic mixture. Roast, turning pan once, 30 minutes. Reduce temperature to 350 degrees; roast, until a thermometer inserted in center registers 130 to 135 degrees, 50 to 60 minutes for medium-rare.
  • Meanwhile, make yogurt sauce: In a bowl, whisk together yogurt, parsley, and remaining 1/8 teaspoon cinnamon; season with salt and pepper. Refrigerate until ready to serve.
  • Transfer lamb to cutting board, and tent loosely with foil; let rest 20 minutes. Remove strings from lamb, and cut into 1/2-inch-thick slices. Serve with yogurt sauce.

I'm Hispanic, my husband is a first generation Greek-American. Suffice to say that he's a Greek Food Purist...!!! He never thought I'd be able to produce anything that would be considered authentic. This easy version of Avgolemono Sauce, I'm happy to say, passes muster. This can be served on so many things, but our favorite is over Dolmades and over stuffed peppers. Nothing scary here, it's easy so long as you temper the eggs carefully and never let the sauce come to a boil.

2/3 cup chicken broth (preferably homemade)
2 large eggs
1/4 cup lemon juice
salt
pepper

Steps:

  • In a small saucepan, bring broth to a boil.
  • In a medium bowl, whisk the eggs, then add the lemon juice and whisk until frothy.
  • While continuing to whisk, pour half the boiling broth into the eggs in a small stream, whisking vigorously and continually so that the eggs don't cook.
  • Return the broth to the flame and pour the tempered eggs into the remaining broth, whisking the whole time. Cook until the sauce thickens slightly, but NEVER LET THE SAUCE BOIL. This will take about five minutes.
  • Serve immediately. This sauce doesn't reheat well.

4 lamb shanks (about 4 pounds total), cut crosswise into 1 1/2-inch -thick pieces by butcher
1 3/4 cups chicken broth
1/4 cup water
3 zucchini (about 1 1/2 pounds total), cut into 1/4-inch-thick slices
1 large egg
1/3 cup fresh lemon juice
1 tablespoon olive oil
1 tablespoon minced fresh dill
Accompaniment: cooked orzo (rice-shaped pasta)

Steps:

  • Preheat oven to 275°F.
  • In a heavy casserole large enough to hold lamb shanks in one layer without crowding arrange shanks and season with salt and pepper. Roast shanks in middle of oven, covered tightly, 3 hours, or until tender. (Meat will give off juices as it cooks.) Pour off pan juices, reserving about 1 cup, and skim fat. Keep shanks warm, covered.
  • In a small saucepan combine broth, reserved pan juices, water, and one-third zucchini and simmer 5 minutes, or until zucchini is tender but still bright green. In a blender purée broth mixture until smooth.
  • In a bowl whisk together egg and lemon juice and whisk in puréed; broth mixture. Return mixture to pan and heat over moderate heat, stirring constantly, until 170°F. on a candy thermometer and thickened slightly (do not boil). Season avgolemono with salt and pepper and keep warm.
  • In a large non-stick skillet heat oil over moderately high heat until hot but not smoking and sauté remaining zucchini until crisp-tender, about 5 minutes. Stir in dill and salt and pepper to taste.
  • Arrange shanks on a deep platter and scatter with zucchini. Drizzle shanks with some avgolemono and serve remaining sauce separately. Serve shanks with orzo>/I>.
