Steps:
- In a small saucepan over high heat, dissolve the salt and honey in a cup of water. Remove the pan from the heat, and add the juniper, rosemary, peppercorns, bay leaf, and garlic. Let steep until the water cools to room temperature, about 20 minutes. Add the brine mixture to a large container with a lid, and add enough very cold water until you have a gallon. Submerge the pork in the brine and cover a lid. Let marinate, overnight, in the refrigerator.
- Preheat the oven to 350 degrees F.
- Remove the pork from the marinade, rinse and pat dry, Add a coating of olive oil to an oven-safe pan. Sear the pork until all of the sides are a deep golden brown. Transfer the pan to the oven and roast the pork until an instant-read thermometer inserted in the middle, reaches 150 degrees F, about 20 minutes a pound. Remove to cutting board, tent with foil and let rest for at least 15 minutes.
- While the meat is resting, prepare the compote.
- Pear Apple Compote:
- Drain all but 2 tablespoons of fat from the roasting pan. Put the fat in a medium pan and add the shallots. Saute the shallots over medium heat for 5 minutes. Add all of the remaining ingredients, bring to boil. Reduce the heat to medium and cook the mixture until soft and thickened, about 5 to 8 minutes.
- Transfer the compote to a serving bowl. Carve the pork into individual chops and serve with compote.

- Heat 1 tablespoon oil in same pot over medium heat. Add onion and apricots. Sauté until onion begins to soften, about 3 minutes. Add broth and honey. - Mix remaining 2 tablespoons oil and 2 teaspoons ras el hanout in small bowl to blend. Rub mixture all over pork tenderloins. Transfer pork to roasting pan. Roast until meat thermometer inserted into center of pork registers 155°F, about 30 minutes. Transfer pork to cutting board. Let stand 10 minutes.
- Meanwhile, reheat sauce over medium heat, stirring constantly. Cut pork crosswise into 1/2-inch-thick slices. Divide pork among 6 plates. Spoon sauce and pears over pork. Sprinkle with almonds.

- Adjust oven rack too middle position and heat oven to 450 degrees. Melt 1½ Tablespoon butter in oven safe 12 inch skillet on medium-high heat. Place pear halves, cut side down in skillet. - 1. Position an oven rack in the center of the oven and preheat to 375°F. Pat the pork loin dry and sprinkle generously with salt and pepper. Add olive oil to a large oven-proof skillet and heat over medium-high heat. When very hot, add the pork and brown on all sides, about 8 minutes. Transfer to a platter.

- In a small bowl, mix apricots with 1/2 cup hot water and let stand until soft, about 10 minutes; drain.
- Meanwhile, peel and core pear; cut into 1-inch cubes and put in another small bowl. Add lemon juice; mix to coat.
- Preheat oven to 375 degrees F. Trim fat from meat and discard. Cut through loin lengthwise to within 1/2 inch of bottom side. Spread halves open like a book and lay meat flat. Scatter apricots and pear cubes evenly down the center. Gently press halves back together and tie loin with cotton string at 1- to 1 1/2-inch intervals to secure.
- Set roast, with cut to the side, in a 10- by 15-inch pan. Sprinkle lightly with salt and pepper.
- Bake until a thermometer inserted in center of loin (not in fruit) reaches 140 degrees, about 45 minutes (30 minutes in a convection oven). Meanwhile, heat 2 tablespoons red currant jelly in a small microwave-safe bowl in a microwave oven at full power (100%) just until melted, about 15 seconds. - Position a rack in the lower third of an oven and preheat to 400°F
- In a mini food processor, process the parsley, chopped sage, whole garlic, salt, pepper and 3 Tbs. of the olive oil until a fine paste forms.
- Spread the mixture on the cut side of one half of the pork loin, then place the other half on top. Tie the roast together with kitchen twine and tuck whole sage leaves underneath the twine.
- Season the roast with salt and pepper.
- In a 5 1/2-quart Dutch oven over medium-high heat, warm the remaining 2 Tbs. olive oil. Add the pears, cut side down, and cook until browned, about 5 minutes. Transfer to a plate.
- Add the pork to the pot and brown on all sides, about 8 minutes total. Transfer to a plate.
- Place the leeks, cut side down, in the pot in a single layer. Set the pork on top and place the pears along the sides of the pot.
- Roast until an instant-read thermometer inserted into the center of the pork registers 140°F, 45 to 55 minutes.
- Transfer the pork to a carving board, cover loosely with aluminum foil and let rest for 10 minutes before carving.
- Transfer the leeks and pears to a platter.

- Preheat oven to 375°F.
- Make stuffing:
- Cut just enough bread into 1/3-inch pieces to measure 1 cup and spread evenly in a shallow baking pan. Toast bread in middle of oven, stirring occasionally, until golden, about 10 minutes, then transfer to a bowl. Leave oven on (for pork).
- Cook shallots in butter in a large nonstick skillet over moderately low heat, stirring occasionally, until softened, about 10 minutes. Add apricots and cook, stirring, until slightly softened, about 3 minutes. Remove from heat and stir in bread, parsley, salt, and pepper.
- Stuff and roast pork:
- Make a hole for stuffing that runs lengthwise through pork loin: Beginning in middle of 1 end of roast, insert a sharp long thin knife lengthwise toward center of loin, then repeat at opposite end of loin to complete incision running through middle.
- Open up incision with your fingers, working from both ends, to create a 1 1/2-inch-wide opening, then pack with all of stuffing, pushing from both ends toward center.
- Pat pork dry and and season well with salt and pepper.
- Heat oil in a 12-inch heavy skillet over high heat until very hot and just smoking, then brown pork on all sides, about 2 minutes. Transfer to a roasting pan and roast in middle of oven until a meat thermometer inserted diagonally 2 inches into meat (avoid stuffing) registers 160°F, 45 to 50 minutes. - Simmer the dried fruits in their soaking liquid until they are tender (about 15 minutes) and allow them to cool. If the butcher has already tied the pork loin, untie it. Season the meat with salt and pepper, sprinkle with garlic and half the sage leaves and stuff it with peaches and apricots. Bind the meat again to form a roll.
- Preheat the oven to 350 degrees. Using a heavy Dutch oven or enameled casserole just large enough for the pork, brown the meat under a broiler on all sides or on top of the stove. Remove it from the casserole and add the vinegar and the wine, scraping up the cooking juices over medium heat.
- Return the pork to the casserole and cover. Cook, basting from time to time, for about two hours, or until the temperature on a meat thermometer registers 155 degrees, which is high enough to kill any trichinosis bacteria. For the last 30 minutes, uncover the pork so that it browns. Do not overcook the pork or it will be dry and tough.
- Remove the pork from the cooking juices and put it on a platter. Keep it warm on the back of the stove. Bring the juices to a boil and skim off excess fat. Add any excess fruit to the sauce and heat through. To serve the pork, slice it thin and arrange it on a serving platter. Spoon on the sauce and decorate with chopped sage leaves.
