This cozy, hearty Sausage Stuffed Acorn Squash with apples, mushrooms, and herbs is a fantastic blend of sweet and savory flavors. Easy and ultra delicious!

2 acorn squash (halved through from the stem to the base and seeds removed)
4 teaspoons olive oil
Kosher salt and ground black pepper
1/2 tablespoon olive oil
1 pound Italian chicken or turkey sausage (about 2 links, casings removed, sweet or spicy (we use spicy))
8 ounces cremini baby bella mushrooms (finely chopped)
1 small yellow onion (chopped)
1 medium sweet-crisp apple (cored and finely diced (peel off or on; I left it on))
½ teaspoon kosher salt
¼ teaspoon ground black pepper
1/4 teaspoon ground nutmeg
1/8 teaspoon ground allspice
2 cloves minced garlic
1 tablespoon chopped fresh sage (thyme, or a mix (plus additional for serving))
½ cup shredded Parmesan cheese (divided)

Steps:

  • Bake the squash: Place a rack in the center of the oven and preheat the oven to 400 degrees F. With a sharp, sturdy chef's knife, carefully cut the squash in half from stem to base. Scoop out and discard the stringy core and seeds. Arrange the halves cut-sides up on a rimmed baking sheet. Brush each half with 1 teaspoon olive oil and sprinkle with salt and pepper. Place in the oven and bake for 40 minutes, until the edges begin to wrinkle and the flesh is fork-tender. Set aside. Reduce the oven temperature to 375 degrees F.
  • While the squash bakes, prepare the filling: Heat the olive oil in a large skillet over medium-high heat. Add the sausage. Brown the meat, breaking it apart into small pieces for 3 minutes.
  • Add the mushrooms, onion, apple, salt, pepper, nutmeg, allspice, and minced garlic. Cook, stirring frequently, until the sausage is cooked through, the vegetables and apple are softened, have given up liquid, and the liquid has cooked off, about 8 additional minutes.
  • When the squash is cool enough to handle, scoop out its flesh, leaving a wall all the way around that is about ¼-inch thick. Add the scooped squash to the pan with the sausage. Add the herbs and ¼ cup Parmesan. Stir to combine. Taste and adjust salt and pepper as desired.
  • Mound the filling inside of the hollowed squash halves. Sprinkle the remaining Parmesan over the top. Place the pan in the oven and bake until the cheese is melted and the filling is nice and hot, about 15 minutes. Sprinkle with additional fresh herbs as desired. Serve hot.

3 acorn squash
4 tsp olive oil, divided
1 Italian sausage link, casing removed
1/2 cup chopped celery
1/2 cup diced onion
2 tbsp minced sage
3/4 tsp salt,divided
2 cups cubed dried out sourdough bread (1/4-inch cube)
2 cups crumbled cornbread
1 tbsp unsalted butter, melted
1/2 tsp poultry seasoning
1/2 cup low-sodium chicken stock (plus more if you like)
1 egg

Steps:

  • Preheat oven to 400 degrees. Cut ends off of acorn squash, so you can stand both ends up straight. Cut in half. Try to make sure to leave enough of the end so there is a bottom for the stuffing to rest in.
  • Brush the squash on all sides with three teaspoons of olive oil. Sprinkle with salt and pepper. Place flesh-side down on a large, rimmed baking sheet. Roast for 30 minutes.
  • While the squash roasts, make the stuffing. Add sausage to a medium non-stick skillet. Set on a medium-high heat and use a wooden spoon to break it up, cook until browned. Add a teaspoon of olive oil along with celery, onion, sage and 1/2 teaspoon salt. Saute until slightly softened, 5-6 minutes.
  • Add bread, cornbread, butter, poultry seasoning, chicken stock, egg, hot sausage, veggies and remaining 1/4 teaspoon salt to a medium bowl. Stir to combine. Season to taste with salt and pepper.
  • Once the squash roasts for 30 minutes, remove from the oven. Use a spatula to flip the squash over, then evenly divide the stuffing between the squash. Place back in the oven for another 25-30 minutes until the squash is soft and stuffing is crisp and golden brown.

1 pound bulk spicy pork sausage
1/2 cup chopped onion
1 cup fresh spinach, finely chopped

1-1/2 cups soft bread crumbs

  • Halve squash lengthwise; discard seeds. Place squash in a microwave-safe dish, cut side down. Microwave, covered, on high until tender, 10-12 minutes. , Meanwhile, in a large skillet, cook and crumble sausage with onion over medium heat until no longer pink, 5-7 minutes; drain. Remove from heat; stir in spinach, cranberries and bread crumbs. In a small bowl, whisk together egg and milk; add to sausage mixture and toss until moistened. , Turn over squash; fill with sausage mixture. Microwave, covered, until a thermometer inserted in stuffing reads 165°, 2-3 minutes.

2 acorn squash, halved and seeded
1 pound ground sausage
1 cup chopped celery
½ cup chopped mushrooms
¼ cup chopped onion
1 egg, beaten
½ cup sour cream
½ cup grated Parmesan cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a baking sheet or line with aluminum foil.
  • Place squash, cut sides down, on the prepared baking sheet.
  • Bake in the preheated oven until tender, about 1 hour. Flip squash halves over and set aside to cool.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add celery, mushrooms, and onion; cook and stir until celery is softened, 5 to 10 minutes. Remove skillet from heat.
  • Beat egg in a large bowl; stir in sour cream and Parmesan cheese. Stir cheese mixture into sausage mixture. Fill squash halves with sausage filling.
  • Bake in the preheated oven until filling is cooked through, about 20 minutes.

This is the quintessential Fall recipe: acorn squash halves are stuffed with a flavorful mixture of chicken sausage, diced apple, cornbread, and seasonings. Roasted until tender, this stuffed acorn squash is the perfect hearty side dish, or main course when paired with a fresh salad. 2 acorn squash
kosher salt
fresh cracked pepper
2 links sweet Italian chicken sausage (I use Premio brand)
1 onion
2 cloves garlic (minced)
olive oil spray
1/2 tsp kosher salt
1/2 tsp thyme (dried)
1/2 tsp coriander (dried)
1 pinch nutmeg
1 apple (small)
2 oz cornbread
1 tbsp maple syrup

Steps:

  • Preheat the oven to 350F.
  • Cut the acorn squash in half and scoop the seeds out, leaving a vessel for stuffing.
  • Spray the cut side of the acorn squash with olive oil spray, and season with a pinch of kosher salt and pepper.
  • Preheat a frying pan over medium high heat. Add olive oil spray to the pan.
  • Remove the chicken sausage from the casings. Dice the onion.
  • Add the sausage and onion to the pan.
  • Add the salt, thyme, coriander and nutmeg.
  • Cook for about 10 minutes, or until the sausage is no longer pink and the onions are tender and slightly caramelized.
  • Mince the garlic. Dice the apple (you can leave the skin on).
  • Add more olive oil spray to the pan, and add the minced garlic. Cook for 1 minute or until fragrant.
  • Add the diced apples and cornbread to the mixture.
  • Place and acorn squash halves in a baking dish.
  • Add the stuffing mixture to the inside of each acorn squash half.
  • Drizzle with the maple syrup.
  • Pour about 1/2 cup of water around the acorn squash halves. Cover the baking dish with foil.
  • Bake the acorn squash for 45 minutes to 1 hour or until fork tender. Cook longer if needed.

I made this recipe over 45 years ago for the first pheasant I ever roasted-it was a special dinner I prepared to thank a wonderful sister and brother-in-law for all of their help when we bought our first home. To this day, it's a favorite with our friends and family when they come to visit.

Traditionally, southern dressing or stuffing is baked alongside a hen or turkey. This is pretty much the same dressing recipe but it's baked inside acorn squash. The squash keeps the dressing from drying out and provides another side dish.

2 tablespoons butter
1 cup onion, chopped
1 cup celery, chopped
2 cups chicken broth (may need more or less)
1 1/2 teaspoons dried sage
1 teaspoon dried thyme
1/4 teaspoon black pepper, to taste (I like mine peppery)
6 slices stale bread, cubed
4 cups cornbread, crumbled
2 whole eggs, beaten
4 small acorn squash (small size, about 4 pounds total)
4 tablespoons butter, melted

Steps:

  • Preheat oven to 400°F.
  • In a skillet, melt 2 tablespoons butter on medium heat and cook onion and celery for 3 to 4 minutes until tender, stirring occasionally.
  • Add chicken broth, sage, thyme and pepper to taste and cook over medium heat for 1 minute.
  • In a large bowl, combine bread cubes and cornbread. Pour broth/vegetable mixture over all and stir to combine. If the mixture is dry or crumbly looking, add broth until it will hold together.
  • Stir in the eggs. (Stirring in the eggs last prevents the hot broth from scrambling them.).
  • Cut acorn squash in half and scoop out the seeds. Cut a small slice off the sides, so the squash will lay flat in the baking dish.
  • Generously brush insides of squash with melted butter.
  • Spoon a heaping 1/2 cup of the stuffing mixture in each squash half and place in a large shallow baking dish. Drizzle on any remaining melted butter.
  • Cover tightly with foil and bake for 1 hour or until squash is tender and dressing is warmed through. If desired, remove foil during the last 10 minutes to brown up the top.

Bake, uncovered, at 400° until tender, about 30 minutes. , When squash is cool enough to handle, scoop out flesh, leaving a 1/4-in. shell (flesh will measure about 3 cups). Drain water from pan; place squash shells cut side up in pan and set aside. , In a large bowl, combine the flesh, egg, salt and pepper. Dissolve bouillon in boiling water; add to squash mixture. Add stuffing; spoon into squash shells. If desired, top with cheese. Sprinkle with paprika. Bake, uncovered, at 400° until heated through, 20-25 minutes. If desired, top with chopped parsley.
