1 1/2 cups heavy cream
1/2 cup brown sugar
2 tablespoons brown sugar
1/2 teaspoon cinnamon
2 1/2 tablespoons dark rum
1/4 teaspoon salt
2 tablespoons cocoa powder
1/4 cup bittersweet chocolate, finely chopped
4 cups white bread, 1 inch cubes
whipped cream

Steps:

  • Preheat oven to 350 F degrees.
  • In a large mixing bowl, whisk together eggs and cream.
  • Add sugar, cinnamon, rum, salt, cocoa, bittersweet chocolate and whisk until well combined.
  • Spread bread over the bottom of a buttered 2 qt baking dish.
  • Pour the egg-cream mixture over the bread and let sit 10 minutes.
  • Place the baking dish inside a larger baking pan, add enough boiling water to reach halfway up the baking dish.
  • Bake 50- 60 minutes or until a knife inserted in the center comes out clean.
  • Serve warm with whipped cream.

Small cubes of chocolate cake or chocolate cookies
2 tablespoons cacao rum liqueur, such as Cacao Prieto
5 tablespoons cocoa powder, such as Valrhona
1/4 teaspoon salt
1/2 cup sugar
5 tablespoons cornstarch
1 quart cold half-and-half
2 ounces chocolate, such as Valrhona Manjari
1 teaspoon vanilla extract
6 to 8 teaspoons crystallized candied violets
6 to 8 tablespoons soft whipped cream

Steps:

  • Place the cubes of chocolate cake or cookie crumbles in the bottom of six to eight 12-ounce champagne coupes or medium-size stemmed wine glasses. Brush with the cacao rum liqueur.
  • In a small saucepan, sift the cocoa powder, salt, sugar and cornstarch into the half-and-half and then begin to heat. Heat, stirring, until the mixture reaches 180 degrees F. Add the chocolate and vanilla extract and cook, stirring, for one full minute. Pass the pudding through a fine-mesh sieve and then pour directly into the champagne coupes. Place plastic wrap on the surface of the pudding and set aside to cool for 30 minutes to 1 hour.
  • Finish with 1 teaspoon candied violets and 1 tablespoon soft whipped cream per serving.

1 large egg yolk
1 tablespoon plus 1/2 teaspoon sugar
1 1/2 teaspoons all-purpose flour
1/3 cup whole milk
6 tablespoons chilled heavy cream
1 1/2 oz fine-quality bittersweet chocolate (not unsweetened)
1 to 2 teaspoons dark rum
1/4 teaspoon instant-espresso powder (optional)

Steps:

  • Vigorously whisk together yolk, 1 tablespoon sugar, flour, and a pinch of salt until well blended. Heat milk and 3 tablespoons cream in a small heavy saucepan until hot but not boiling. Add about one third of hot milk to yolk mixture in a slow stream, whisking constantly. Add remaining milk, whisking, then transfer to saucepan. Bring to a simmer, whisking constantly, then continue to simmer, still whisking constantly, until thickened, about 1 minute.
  • Remove from heat and add chocolate, rum (to taste), and espresso powder if using. Let stand until chocolate is melted, about 30 seconds, then whisk until smooth. Transfer to a glass and chill, covered, at least 30 minutes to cool quickly to room temperature.
  • Just before serving, vigorously whisk remaining 3 tablespoons cream with remaining 1/2 teaspoon sugar in a small bowl until it holds soft peaks. Top pudding with whipped cream.

6 ounces semisweet chocolate morsels
3 eggs, separated
2 tablespoons light rum
1/4 teaspoon almond extract
1/4 teaspoon ground nutmeg
whipped cream, for garnish
chocolate curls, for garnish

Steps:

  • Melt the chocolate in a double boiler over gently boiling water.
  • Beat the egg yolks until thick and lemon colored; gradually stir in about one quarter of the melted chocolate.
  • Add the yolks and chocolate to the remaining chocolate in the double boiler, stirring constantly.
  • Remove from heat and add the rum, almond extract and nutmeg.
  • Beat the egg white until stiff peaks form.
  • Gently fold into the chocolate mixture.
  • Spoon into stemmed glasses or demitasse cups and chill.
  • When ready to serve, top with whipped cream and garnish with chocolate curls.

1 (3.9 ounce) package instant chocolate pudding mix
4 eggs
½ cup water
½ cup vegetable oil
½ cup white rum
½ cup chopped walnuts
½ cup butter
1 cup white sugar
¼ cup white rum
¼ cup water

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease one 10 inch Bundt pan. Place chopped nuts in the bottom of the Bundt pan.
  • With an electric mixer beat cake mix, pudding mix, eggs, oil, 1/2 cup of the water, and 1/2 cup of the rum on high speed for 2 minutes. Pour batter into prepared Bundt pan over the top of the chopped nuts.
  • Bake at 325 degrees F (165 degrees C) for 50 to 60 minutes.
  • To Make Rum Glaze: In a saucepan combine the butter or margarine, sugar, 1/4 cup of the rum, and 1/4 cup of the water. Bring mixture to a boil and cook for 2 minutes. Pour immediately over still warm cake.

5 cups 1 x 1 x 1/2-inch pieces trimmed whole wheat bread
2/3 cup sugar
1/3 cup light corn syrup
1/3 cup water
1/4 cup apple cider
3 tablespoons unsalted butter
1/2 cup raisins
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground coriander
1 teaspoon ground ginger
2 large eggs, beaten to blend
1/4 cup dark rum
5 ounces good-quality white chocolate, coarsely chopped

Steps:

  • Preheat oven to 325°F. Arrange bread on large baking sheet; bake until dry, about 10 minutes. Transfer bread to large bowl. Increase temperature to 350°F.
  • Stir sugar, syrup and water in heavy medium saucepan over low heat until sugar dissolves. Increase heat and boil without stirring until amber color, brushing down sides of pan with wet pastry brush and swirling pan occasionally, about 12 minutes. Remove from heat. Add cider and butter. Return to low heat; stir until sauce comes to simmer. Cover pan and simmer until caramel bits dissolve, stirring occasionally, about 5 minutes. Set pan over ice; stir until caramel cools to lukewarm, about 5 minutes.
  • Mix raisins, spices, eggs, then rum into caramel. Add to bread. Mix in white chocolate. Let stand about 10 minutes, stirring occasionally.
  • Butter eight 3/4-cup custard cups. Divide pudding among cups. Place in large baking pan. Pour hot water into pan to come halfway up sides of cups.
  • Bake puddings until set in center, about 30 minutes. Cool 10 minutes.
