The Best Bacon Cheddar Stuffed Burger. How to make a perfect juicy burger. Stuffed with flavor filled center of cheddar cheese, onion, jalapeño, and bacon.

1 pound extra lean ground beef (good quality, 90% or higher)
1 egg
1 tablespoon Worcestershire sauce
1 teaspoon salt
½ teaspoon ground black pepper
2 tablespoons minced onion
½ cup shredded cheddar cheese (divided)
2-3 bacon strips
4 pickled jalapeño slices (chopped)
2 hamburger buns (sourdough, ciabatta or gluten-free)
1 avocado

Steps:

  • In a medium bowl, mix together ground beef, egg, Worcestershire sauce, onion, salt, pepper and ¼ cup cheddar cheese. You may need to use your hand to get in evenly combined. Let stand (see cooking tips section above for reasons).
  • Heat a medium skillet or non-stick pan to medium-high heat. Add bacon strips, cook for 3-4 minutes without touching. Rotate and cook other side 2-3 minutes, or until slightly crispy. Remove from heat, drain off excess oil, and break bacon into chunks.
  • Divide meat mixture in half for each burger. Press about 2/3 off one half into the burger press (it should be almost full). Press top mold to create an open center. You may need to practice a couple times to get the right amount (see animated photo above for help). Fill one burger with 1/8 cup cheese, and half of cooked bacon and jalapeño. Top with more meat and use burger press to seal top down. Remove and repeat steps for second burger.
  • Preheat barbecue (I used gas) to medium-high. Lightly grease grill slats with oil; this helps prevent sticking. Place patties onto grill, close, and cook first side for 4-6 minutes. It should release from the grill and have grill marks. Flip and cook other side for 4-6 minutes until cooked to desire doneness. With those times it should be just over medium. If you're used to using your fingers to test firmness, the stuffed center makes it more squishy, so be sure to not overcook.
  • Grill hamburger buns if desired. Mash avocado in a bowl. Place burger patties in buns, top with avocado and enjoy the best juiciest burger.

2 lbs ground beef (I use venison)
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon garlic powder
1/4 cup onion, minced fine
9 -10 slices bacon
8 ounces cheddar cheese, shredded
6 hamburger buns

Steps:

  • Fry bacon until crisp; crumble.
  • Combine beef, salt, pepper, garlic powder and onion and shape into 12 large, thin patties.
  • Top six patties with 1 tablespoon bacon and 1 tablespoon cheese (this is approximate-use what looks right).
  • Place remaining 6 patties on top of cheese/bacon topped patties and press edges to seal.
  • Grill or broil for 3-4 minutes per side until done. We like ours well done.
  • The last 2 minutes of cooking top patties with remaining bacon and cheese.
  • Serve on buns.

2 small Vidalia onions, peeled
2 tablespoons (30 ml) butter
½ pound (227g) of uncooked bacon
150 grams (5oz) grated cheddar cheese
Burger:
2 ½ pounds (1.135kg) medium ground beef
¼ cup (60ml) minced-fresh parsley
1 teaspoon (5ml) ground paprika
Salt and pepper
Olive oil for drizzling
4 burger buns
Favorite burger toppings if desired
Salt and pepper

Steps:

  • In a large pan set over medium heat add the bacon. Cook the bacon until golden, caramelized and crispy. Remove from pan and place on a paper towel-lined tray. Drain off all but 1 tablespoon (15ml) of the bacon fat.
  • Slice the onions 1/8th inch (.31cm) thickness.
  • Place in the pan with the bacon drippings. Place the pan over medium low heat add the butter allow to melt. Add all the onions. It may seem like a lot but the onions will reduce down dramatically after cooking. Sprinkle with a pinch of salt.
  • Slowly cook the onions stirring occasionally for about 20 minutes until golden and caramelized. Remove from heat and allow to cool completely.
  • Grate the cheese using the wide holes of cheese grater. Crumble the bacon into the cheese.
  • Dice the sweet caramelized onions fine.
  • Mix the onions into the cheese and bacon mixture.
  • Place burger meat in a bowl add the chopped parsley and paprika.
  • Form the burgers into 6 inch (15.2cm) patties.
  • Form the cheese into 4 balls. Place the ball in the center of the burger fold the meat up and over the burgers to enclose. Gently press down the meat keeping all the cheese in the center. Note if cheese is exposed it will burn in the pan when cooking.
  • Drizzle the burgers with olive oil and season with salt and pepper.
  • Place a large cast iron skillet over medium heat.
  • Add olive oil to heat.
  • Add the burgers and cook without moving until a nice deep caramelized crust is formed, about 4 minutes. Flip and repeat. Cook burgers to desired doneness.
  • Warm buns or toast in oven.
  • Place burgers on buns and garnish with desired toppings.

1 teaspoon hot sauce (recommended: Frank's Red Hot)
Salt and freshly ground black pepper
4 strips bacon, diced
1/2 onion, chopped
1 cup grated sharp Cheddar
4 burger buns
Lettuce, tomato, pickles for garnish

Steps:

  • Preheat grill to medium.
  • In a bowl combine beef, garlic, hot sauce, salt and pepper, to taste, being careful not to over mix. Warm a skillet over medium heat and fry bacon until crispy. Remove to a paper towel-lined plate to drain. Keep heat on skillet and fry a pinch of the beef in the bacon fat to test seasoning. Adjust seasoning, if needed, then form 8 even thin patties, about 1/2-inch thick and set aside. Saute onions in bacon fat in skillet until tender, 5 minutes. Place onions and bacon in a bowl with cheese. Form a spoonful of bacon-cheese mixture into a ball, then place in the center of 4 patties. Top each with another patty and seal the edges. Grill burgers over medium-high heat, flipping once until desired doneness is reached, approximately 4 minutes each side for medium. Serve in buns with garnishes. Alternative: In a medium skillet over medium-high heat, sear the burgers 4 minutes on each side.

1/2 cup shredded Monterey Jack cheese
4 slices bacon, chopped
1 pound ground beef chuck
Kosher salt and freshly ground black pepper
Vegetable oil, for brushing the grill pan
4 large sweet Hawaiian buns, such as King's Hawaiian, split

Steps:

  • Combine the cheese and bacon in a bowl.
  • Put the ground chuck in another bowl and sprinkle with salt and pepper; mix with a rubber spatula. Flatten a quarter of the meat mixture in the palm of your hand. Squeeze together about a tablespoon of the cheese and bacon mixture to make a little nugget; place in the center of the patty. Bring up the sides of the patty over the filling, making sure the cheese is completely covered; flatten slightly to shape. Repeat with the remaining meat and filling. Set the patties side-by-side on a platter and refrigerate while preparing the grill.
  • Place a large grill pan covering two burners over medium-high heat, or preheat an outdoor barbecue until very hot. Brush the grates with oil. Grill the burgers for 8 minutes per side for medium. Transfer to a clean plate.
  • Rub the grill grates with more oil. Grill the buns cut-side down for 1 minute to toast.
  • Serve the burgers with your favorite condiments and garnishes.

  • In a pan over medium-high heat, add the bacon, and cook until crispy. Transfer to a cutting board and roughly chop.

3 tablespoons barbeque sauce

  • In a large mixing bowl, mix together the ground beef, salt, black pepper, barbeque sauce and garlic powder using your hands. 1 lb ground round
2 teaspoons black pepper, freshly ground
2 tablespoons garlic salt

2 medium vidalia onions, sliced
1 tablespoon butter
8 ounces sweet barbecue sauce (your choice)
6 -8 hamburger buns

Steps:

  • Combine ground round, ground chuck, salt and pepper in a large bowl.
  • In another bowl, combine the coarsely shredded sharp cheddar and cooked bacon pieces.
  • Let bacon and cheese mixture sit at room temperature for about 20 minutes to get soft.
  • Then, shape mixture into balls (for however many burgers you would like to make). Form 2 patties of meat and place one cheese/bacon ball in between them.
  • Pinch the sides together to seal in cheese ball. Gently press formed patty, to spread out cheese ball. Continue until all patties are formed.
  • Cook burgers on grill over medium flame for about 7 minutes on each side.
  • While burgers are grilling, slice sweet Vidalia onions and sauté them in a skillet with 1 tablespoon of butter. Once onions become translucent (about 4 minutes), add some sweet barbecue sauce.
  • Flip burgers, and baste the cooked side of the patties with the same sweet barbecue sauce used in the onions.
  • After about 7 minutes longer, the burger should be done (these are big thick burgers and may take longer to grill to your liking).
  • Baste again with sweet barbecue sauce before removing from grill.
  • Butter hamburger buns and place on top rack of grill for several minutes, until toasted.
  • To build burger, take toasted bun, add patty, and top with smothered barbecue onions. You can add tomato or lettuce, if you'd like, but the flavors are great without them.
