Use this recipe, dark rum, mashed bananas, and yellow cake mix to easily make a moist and flavorful cake.

1 (18.25 ounce) package yellow cake mix
¼ teaspoon baking soda
⅔ cup dark rum
⅔ cup water
2 eggs
1 cup mashed bananas
⅓ cup chopped pecans
⅓ cup butter, softened
3 cups confectioners' sugar
2 teaspoons vanilla extract
2 tablespoons dark rum

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch cake pans.
  • In a large bowl, combine cake mix, baking soda, rum, water, eggs, bananas and nuts. Bring together, then beat on medium speed 2 to 4 minutes.
  • Divide into prepared pans. Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes, or until toothpick inserted into center of cake comes out clean. Cool completely.
  • For the frosting: Combine 1/3 cup butter or margarine with the confectioners sugar. Blend thoroughly. Stir in vanilla and 2 tablespoons rum. Beat until smooth.

If you want a real Jamaica treat, there is nothing that beats rummed bananas. My friend Virginia Burke introduced them to me in the hills above Ocho Rios. She baked them on a traditional jerk pit. 4 ripe bananas, peeled
4 tablespoons brown sugar
4 teaspoons butter, in small pieces
1 cup orange juice
1 tablespoon dark rum
4 tablespoons coconut cream or ice cream, to serve

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • In a greased baking dish, place the bananas. Sprinkle with sugar and dot with butter. Mix orange juice and rum and pour around the bananas. Bake for 20 minutes.
  • Serve with a dollop of coconut cream or ice cream.

2 teaspoons unsalted butter
1 banana, halved lengthwise, then crosswise
2 teaspoons packed brown sugar
2 tablespoons rum (preferably dark)
2 teaspoons water
1/8 teaspoon freshly grated nutmeg
1/8 teaspoon cinnamon
2 tablespoons sliced or chopped nuts, toasted
Accompaniment: vanilla ice cream

Steps:

  • Melt butter in a 10-inch heavy skillet over moderately high heat until foam subsides, then sauté banana, cut sides down, shaking skillet, 1 minute. Remove skillet from heat (away from flame) and sprinkle brown sugar around banana, then pour rum around banana. Return skillet to heat and continue to sauté, shaking skillet occasionally, until sugar begins to melt, about 30 seconds.
  • Add water, nutmeg, cinnamon, and a pinch of salt and cook over moderate heat, shaking skillet occasionally, until sauce is slightly thickened, 1 to 2 minutes.
  • Serve banana hot, sprinkled with nuts.

170g caster sugar
85g butter
450g soft bananas, mashed
2 eggs
30g mixed peel
50g pecans, chopped
1/4 tsp bicarbonate of soda
2 tbsp rum
225g self-raising flour

Steps:

  • Preheat the oven to 180c.
  • Cream the butter and sugar in a ProCook mixing bowl until soft and well incorporated then add the bananas. Add the eggs, slowly, 1 at a time and mix well. Add the mixed peel, pecans, bicarbonate of soda and rum, mix well.
  • Fold in the flour then pour the mixture into a ProCook non-stick loaf tin. Bake for 45 minutes on a low shelf.

½ cup vegetable oil
½ cup water
¼ cup banana liqueur
¼ cup rum
1 (15.25 ounce) package yellow cake mix
1 (4 ounce) package instant vanilla pudding mix
1 cup white sugar
½ cup butter
¼ cup water
¼ cup banana liqueur
¼ cup rum

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a fluted tube pan (such as Bundt®).
  • Mix bananas, eggs, vegetable oil, 1/2 cup water, 1/4 cup banana liqueur, and 1/4 cup rum together in a bowl until smooth. Beat in cake mix and pudding mix, scraping sides down as needed, until batter is smooth, about 2 minutes. Pour batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, about 50 minutes.
  • Bring sugar, butter, and 1/4 cup water to a boil in a saucepan 15 minutes before the cake is done. Stir in 1/4 cup banana liqueur and 1/4 cup rum until glaze is well mixed. Pour glaze into a glass measuring cup.
  • Remove cake from oven and pour glaze around the sides of the cake while it is still in the pan; let soak for 30 minutes. Invert cake onto a platter.

3/4 cup butter, room temperature
1 cup sugar (or less to taste)
2 large eggs
3 bananas, well mashed
1/2 teaspoon baking soda
1 tablespoon baking powder
2 cups flour
1/8 teaspoon salt
3 -4 tablespoons rum
1/4 cup buttermilk
1/4-1/2 cup chopped walnuts

Steps:

  • Set oven to 350 degrees.
  • Butter and flour a 9-inch springform cake pan.
  • Cream the butter and sugar together using an electric mixer.
  • Add in the eggs, one at a time, beating well between additions.
  • Mix in the mashed bananas.
  • Sift together the baking soda, baking powder, flour and salt.
  • Add in half of the flour mixture to the batter; mix well.
  • Add in the rum and buttermilk; mix thoroughly.
  • Add in the remaining flour mixture; mix well to incorporate thoroughly.
  • Fold in the chopped nuts.
  • Transfer the batter to cake pan.
  • Bake for 1 hour, or until cake tests done.
  • Cool for 5 minutes before removing from the pan.
