JALAPENO ROASTED CHICKEN WITH BABY BROCCOLINI



Jalapeno Roasted Chicken with Baby Broccolini image

1/2 cup packed fresh oregano leaves or 1/3 cup dried oregano
1 shallot, peeled and roughly chopped
4 garlic cloves, peeled
4 tablespoons unsalted butter
2 tablespoons olive oil
1 jalapeno, stemmed and seeded
1 teaspoon salt
1/2 teaspoon freshly cracked black pepper
1 (5 1/2-pound) roasting chicken
2 sprigs fresh rosemary
2 shallots, coarsely chopped
1 1/2 cups chicken broth, plus more if needed
3/4 cup dry white wine
2 pounds baby broccoli *see Cook's Note
1 tablespoon olive oil
Salt and freshly cracked black pepper

Steps:

  • Position a rack in the center of the oven. Preheat the oven to 400 degrees F.
  • Jalapeno paste:
  • In the bowl of a food processor, combine the oregano, shallot, garlic, butter, 2 tablespoons olive oil, the jalapeno, salt and pepper and process to form a coarse paste.
  • Chicken: Pat the chicken dry and then put it, breast side up, on a rack in a large roasting pan. Using your fingers, loosen the skin from the chicken breast, legs, and thighs without detaching it. Spread half of the jalapeno paste under the skin. Put the rosemary and the shallots in the cavity of the chicken. Tie the chicken legs together with kitchen twine. Spread the remaining jalapeno paste all over the exterior of the chicken. Pour the chicken broth and wine into the roasting pan.
  • Roast the chicken for 1 hour, basting with the pan juices every 20 minutes, adding more broth to the pan if it begins to dry out.
  • Remove the roasting pan from the oven. Arrange the baby broccoli snugly around the chicken on the rack. Drizzle the olive oil over the florets and season them with salt and pepper, to taste. Roast the chicken with the baby broccoli, basting occasionally with the pan juices, until an instant-read thermometer inserted into the innermost part of the chicken thigh, without touching the bone, registers 160 degrees F, about 30 minutes. Remove the roast chicken from the oven, tent it in foil and let it rest for 15 minutes.
  • Arrange the chicken on a platter, and surround it with the broccoli. Serve.

1 batch 4 bone-in chicken breasts (total of about 3-1/2 pounds); 1-1/2 teaspoons kosher salt ;1 tablespoon vegetable oil SAUCE: 1 cup fresh cilantro leaves and stems ;3 jalapeño chiles ;1/2 cup mayonnaise; 1 tablespoon lime juice ;2 garlic cloves, minced 1/2 teaspoon kosher salt ;2 tablespoons extra-virgin olive oil

Steps:

  • Set a rack to the lower-middle of your oven and pre-heat to 325-degrees. And prepare a rimmed baking sheet by lining it with aluminum foil.
  • Working with one breast at a time; trim away any excess fatty skin from the thick end of the breast. Carefully work your fingers under the skin to separate the skin from the meat. Leave the skin attached and the top, bottom, and at the ribs. Sprinkle each breast with just under 1/2 teaspoon of kosher salt, then lay the skin back in place. Poke 6 to 8 holes in the fat deposits of the skin using a paring knife. Set on the prepared baking sheet with the skin-side upwards. Repeat with remaining chicken pieces.
  • Bake in 325-degree oven from 35-to-45 minutes until the chicken reaches 160-degrees. While the chicken bakes; prepare the sauce,
  • Remove from oven when the chicken is ready, and pre-heat a 12″ regular skillet over a low burner for 5 minutes. Add 1 tablespoon vegetable oil and swirl so that the pan is evenly coated. Put chicken into skillet with the skin-side down, and turn up burner to medium-high. Cook for 3-to-5 minutes without moving the chicken; the skin will become crispy and well-browne

  • Remove to serving platter and allow to rest, uncovered, for 5 minutes.
  • SAUCE: Trim and coarse chop the cilantro. Stem and seed the jalapeños, if would want a spicier sauce include some of the seeds.
  • Add all ingredients (except for olive oil) to your blender and process for 1 minute. Scrape the sides of the blender and continue to process for 1 more minute; until the sauce is smooth.
  • With the blender running, slowly drizzle in the olive oil until it becomes incorporated. Empty into a serving bowl.

1/4 teaspoon salt
1 tablespoon canola oil
2 medium onions, chopped
1/2 cup reduced-sodium chicken broth
2 jalapeno peppers, seeded and minced
2 teaspoons ground cumin
3 ounces reduced-fat cream cheese, cubed
1/4 cup reduced-fat sour cream
3 plum tomatoes, seeded and chopped
2 cups hot cooked rice

Steps:

  • Sprinkle chicken with salt. In a large nonstick skillet over medium-high heat, brown chicken in oil on both sides. , Add the onions, broth, jalapenos and cumin. Bring to a boil. 2/3 cup green jalapeño jelly (about 7 ounces)
1/2 cup chopped fresh cilantro
2 tablespoons white wine vinegar
1 tablespoon minced seeded jalapeño chili
2 boneless chicken breast halves with skin

Steps:

  • Prepare barbecue (medium heat). Stir jelly, cilantro, vinegar and chili in heavy medium saucepan over low heat until glaze comes to simmer. Reserve 1/4 cup glaze in saucepan; pour remaining glaze into small bowl.
  • Brush chicken all over with glaze from bowl. Set pan of reserved glaze at edge of barbecue to rewarm. Place chicken, skin side down, on barbecue. Grill 4 minutes; brush with glaze from bowl. Using tongs, turn chicken over. Grill 5 minutes. Brush with glaze from bowl. Turn chicken again and grill until cooked through, about 2 minutes longer.
  • Transfer chicken to plates. Spoon glaze in saucepan over and serve.

2 teaspoons fresh lime juice
4 chicken breasts, with bone or 2 whole chicken legs
3 plum tomatoes, 1/2 inch slices
2 jalapenos ((or more)
1 small onion, cut into 1/4 inch slices
2 garlic cloves, minced
1/2 cup low sodium chicken broth (may use 3/4c)

Steps:

  • Preaheat oven 450.
  • Arrange chicken skin side up in roasting pan and season with salt and pepper.
  • In a bowl add oil,tomatoes, chilies, onion , garlic, salt to taste and toss well. Spread around chicken and roast in oven, 30 to 45 minutes, depending on which chicken parts you used.
  • Transfer chicken to platter and keep warm, tented with foil. To the vegetables in pan add broth and boil, over moderate heat, scraping up the browned bits until it has thickened. Add lime juice. Serve chicken with sauce and vegetables.

3/4 lb tomatillo, husked and rinsed (8 or so)
1 medium jalapeno chile
5 tablespoons olive oil, divided
1 cup chopped onion
1 tablespoon chopped garlic
1 1/2 cups chicken broth
2 teaspoons brown sugar
1/2 cup cilantro leaf, and tender stems rough-chopped divided
4 (8 -10 ounce) chicken breast halves (8- to 10-ounce bone-in, skin-on)
1/2 cup sour cream (to garnish)

Steps:

  • Lightly oil a rimmed baking sheet or baking pan and roast tomatillos and jalapeno or chilies under a hot broiler, 4 inches or so from the heat source, 3 to 4 minutes, or until they are blistered and splotchy brown with, maybe, a few black spots. Turn them and roast on the other side. Cool, then transfer tomatillos and chilies to a food processor fitted with the metal blade or blender along with any of the juices on the pan. Process or puree until smooth.
  • Meanwhile, over medium heat in a heavy-bottomed saucepan, heat 2 tablespoons olive oil. Add onions and garlic and cook, stirring, about 6 minutes until golden brown. Raise heat to medium high, add tomatillo puree and cook 3 minutes until sauce darkens and is very thick. Add broth, brown sugar and 1/4 cup cilantro. Stir, reduce heat and simmer, uncovered, 10 minutes or until sauce thickens. Season with salt and pepper. Set sauce aside.
  • Season chicken liberally with salt and pepper. Heat 3 tablespoons olive oil over medium-high heat in an oven-proof skillet large enough to hold chicken in one layer. Add chicken, skin side down, and cook 5 minutes until skin is richly browned. Turn and cook on bone side 2 minutes or so. Remove chicken from pan and pour out all but 1 tablespoon fat. Add tomatillo sauce and bring to a simmer. Nestle chicken pieces, skin side up, in the sauce, place in preheated 375-degree oven and bake 15 minutes, or until chicken is cooked. (Check with point of a small knife near the bone to make sure chicken is cooked through.)
  • Place one piece of chicken in each of four shallow bowls, spoon sauce around, top with crema or queso fresco and sprinkle remaining cilantro over.
