ROASTED BREAKFAST PEARS



Roasted Breakfast Pears image

For a sweet breakfast or a fruit dessert, top roasted pears with Greek yogurt, granola, and toasted almonds.

4 large ripe, yet firm, Bosc or red Anjou pears
1 tablespoon lemon juice
1 tablespoon butter, softened
2 tablespoon packed brown sugar
0.25 teaspoon salt
2 teaspoon finely shredded orange peel (set aside) or Triple Sec
0.25 cup orange juice
1 teaspoon vanilla
1 cup plain Greek yogurt
2 tablespoon pure maple syrup
Finely shredded orange peel (optional)
0.25 cup granola
2 tablespoon sliced almonds, toasted

Steps:

  • Preheat oven to 350°F. Halve pears; core. Using a melon baller, scoop out a 1-inch depression in the center of each pear. Brush cut sides with lemon juice.
  • Spread butter in the bottom of a 2-quart rectangular baking dish. Sprinkle with brown sugar and salt; add orange juice. Arrange pear halves, cut sides up, in a single layer in the baking dish.
  • Bake for 20 to 30 minutes or just until pears are tender, spooning cooking liquid over pears several times during baking time (baking time depends upon ripeness of pears).
  • Remove from oven; stir vanilla into cooking liquid. Let cool completely. Cover and chill for at least 2 hours or up to 24 hours, turning pears in liquid at least once during chilling time.
  • To serve, in a small bowl stir together yogurt and maple syrup. Spoon the mixture into each pear half. If desired, sprinkle with additional orange peel. Serve with granola and toasted almonds.

Steps:

  • Preheat oven to 350°. Place pear halves, cut side up, in a shallow 1-qt. baking dish. Place butter in the center of each; drizzle with lemon juice. , Combine sugar and cinnamon; sprinkle over pears. Top with marmalade. Bake, covered, until heated through, 15-20 minutes.

1 large pear
vegetable oil cooking spray
2 tablespoons cream cheese (I use no fat)
1/8 teaspoon salt
1/8 teaspoon nutmeg
1 tablespoon whole half walnuts (or pecans)
2 teaspoons honey

Steps:

  • Preheat oven to 350°F.
  • Peel, if you wish (I leave them unpeeled) Slice pear in half lengthwise, scoop out seeds to make a nice circle. Spray with veggies spray and set aside in a gratin dish sprayed with veggie spray, cut side up.
  • In a small bowl mix together, cream cheese, salt, nutmeg and 1 teaspoon honey. Fill each pear half cavity with half of the cheese mixture.
  • Place a half walnut on top of the cheese mixture; lightly press it down. Drizzle pear halves with remaining teaspoon of honey.
  • On centre grate in oven, roast at 350°F for about 1 hour or until soft. Test with a toothpick at about 45 minutes.

1 orange and 1 lemon, juice and thinly peeled rind
1 vanilla bean, split and seeds scraped
2 tsp orange-blossom water, or to taste
Serve with: Thick Plain Yoghurt and Chopped Pistachios

Steps:

  • Preheat the oven to 200°C. Simmer the honey, juices, rinds, vanilla bean and seeds in a small saucepan over a medium heat until reduced to a light syrup (8-10 minutes).
  • Place the pears, cut-side up in a roasting pan large enough to fit the pears snugly. Pour over the honey mixture and roast, basting occasionally, until tender and beginning to caramelise (20-25 minutes).
