ROASTED CABBAGE WITH CHEESE SAUCE
There's not a Thanksgiving that goes by without Roasted Cabbage with Cheese Sauce on the table. It's one of those dishes, where tradition and taste meet deliciously.

Steps:
- heat the oven to 375˚
- lay cabbage slice on baking sheets, drizzle with 2 TBSP olive oil, sprinkle on the teaspoon of salt, roast 30-40 minutes or until it's cooked and browned
- remove, cool slightly, and chop with kitchen scissors to bite-sized pieces, removing the core if you desire, set aside while making cheese sauce
- in a small sauce over medium heat melt the butter
- when it's melted add the flour and cook stirring constantly for 2 minutes
- slowly add the milk, whisking constantly
- cook for 2-3 minutes more, stirring constantly
- when the white sauce/bechamel sauce is thickened add the cheese
- stirring until all the cheese is melted
- remove from heat
- taste and add salt and pepper as desired
- lightly butter a 2 qt baking dish
- add the cabbage and 3/4 of the cheese sauce, toss together
- pour remaining sauce over the cabbage
- cover and bake at least 10-15 minutes but you can continue baking for at least another 20, it's very forgiving

- Brush each cabbage piece on both sides with olive oil and season with salt and black pepper. Arrange in a single layer on a baking sheet.

- Preheat oven to 450 degrees F (230 degrees C).
- Brush both sides of each cabbage wedge with olive oil. Sprinkle garlic powder, red pepper flakes, salt, and pepper over each wedge. Arrange wedges on a baking sheet.
- Roast in the preheated oven for 15 minutes; flip cabbage and continue roasting until browned and charred in some areas, about 15 minutes more. Squeeze lemon over each wedge.

- Preheat the oven to 425 degrees Fahrenheit. Line a large, rimmed baking sheet with parchment paper for easy clean-up.
- Slice the head of cabbage in half. Carefully cut out the white core, then place the cabbage with the flat side(s) face-down on the cutting board. Slice the cabbage into 1-inch wide columns and rows. I like to leave the chunks of cabbage intact when possible.
- Transfer the cabbage to the prepared baking sheet. Drizzle the olive oil on top and sprinkle the salt all over. Gently stir to combine, until all of the cabbage is lightly coated. Spread the cabbage into an even layer across the pan (again, chunks of cabbage are fine).
