1 teaspoon Oregano
1 head cauliflower
1 cup (110g) breadcrumbs
1/2 cup (75g) sesame seeds
2-3 eggs
Cooking spray
2 teaspoons Thyme
Zest from one Lemon
2 tablespoons Lemon juice
2 tablespoons Parmesan
Parsley
1/3 cup (77g) Dijon mustard
1/3 cup (77g) mayonnaise
2-3 tablespoons honey

Steps:

  • Olive oil Roasted cauliflower:1. Preheat oven to 430F (220C). 2. Cut 1 head of cauliflower into small-medium florets. 3. Place in a large bowl. Add olive oil, salt, pepper, garlic powder, paprika, oregano. Stir to coat. 4. Place on a baking try lined with parchment paper. Spay with cooking oil. 5. Bake for 20 minutes, until golden brown.Baked Breaded Cauliflower:1. Preheat oven to 400F (200C). 2. Cut 1 head of cauliflower into small-medium florets. 3. To a large pot with salted water add the florets. Boil for 5 minutes. Drain. 4. Prepare two bowls, in one bowl mix together breadcrumbs, sesame seeds, salt, pepper, oregano and paprika. In second bowl beat eggs with pinch salt. 5. Dip cauliflower florets in beaten egg, then coat with breadcrumb mixture. 6. Place on a baking try lined with parchment paper. Spay with cooking oil. 7. Bake for 34-40 minutes, until golden brown. Lemon Garlic Roasted Cauliflower:1. Preheat oven to 400F (200C). 2. Cut 1 head of cauliflower into small-medium florets. 3. Place in a large bowl. Add olive oil, lemon juice, lemon zest, salt, peppr, garlic powdr, tyhme, grated parmesan. Stir to coat. 4. Place on a baking try lined with parchment paper. Spay with cooking oil. 5. Bake for 20-25 minutes, until golden brown. Mustard Roasted Cauliflower:1. Preheat oven to 375F (190C). 2. Cut 1 head of cauliflower into small-medium florets.3. To a large pot with salted water add the florets. Boil for 5 minutes. Drain. 4. In a medium bowl mix mustard, mayonnaise, honey, olive oil, salt and pepper. 5. Dip each floret in the mustard mixture. Place on baking tray lined with parchment paper. 6. Bake for 20-25 minutes, until golden.

3 large cloves garlic, thinly sliced
¼ cup olive oil
2 tablespoons lemon juice
½ teaspoon salt
¼ teaspoon ground black pepper
2 tablespoons grated Parmesan cheese

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C).
  • Mix cauliflower florets and garlic in a large bowl. Drizzle olive oil and lemon juice over the cauliflower mixture; season with salt and pepper. Toss cauliflower mixture to coat and spread into an even layer onto a jelly roll pan.
  • Roast in preheated oven for about 15 minutes, turn the cauliflower, and continue roasting until soft, about 10 minute more. Sprinkle Parmesan cheese over the cauliflower to serve.

3 tablespoons olive oil, divided
1 head cauliflower, broken into florets
1 ½ teaspoons brown sugar
1 teaspoon salt
½ teaspoon mild curry powder

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a baking sheet with 1 tablespoon olive oil.
  • Combine cauliflower and 2 tablespoons olive oil in a bowl. Mix brown sugar, salt, and curry powder in a small bowl. Taste and adjust until mixture is sweet and salty. Sprinkle over cauliflower and mix well. Spread cauliflower in a single layer on the baking sheet.
  • Roast in the preheated oven for 20 minutes. Turn cauliflower and roast for an additional 15 to 20 minutes.

Cauliflower is an excellent blank canvas. You can steam or blanch it to keep its essential flavors intact, but by roasting or sautéing it, you can bring out its sweetness. Cauliflower will absorb the oil and seasoning, soaking up flavors much the way eggplant does. But it remains firmer. Roasted cauliflower can be served warm or at room temperature. It can be part of an antipasto of roasted vegetables. Or an accompaniment to a roast chicken or lamb. And though they aren't obvious choices, scallops and lobster, both naturally sweet themselves, are delicious with roasted cauliflower.

1 pound cauliflower, about 1 medium-large head, trimmed and cut into 1/4-inch-thick slices
Extra virgin olive oil, to coat
Sea salt
Coarsely ground black pepper

Steps:

  • Preheat oven to 375 degrees. Place cauliflower in a large mixing bowl. Pour on enough olive oil to coat (a few tablespoons). Season generously with salt and pepper and toss gently until evenly coated.
  • Lay cauliflower pieces out on a baking sheet. Drizzle any remaining oil from the bowl on top. Bake, turning once, until caramelized on edges and tender, 25 to 30 minutes. Serve warm or at room temperature, as a side dish. You can also sprinkle it with a very good aged vinegar. Or, cut florets into smaller pieces and add to salads.

Whole Roasted Cauliflower With Almond-Herb Sauce image

This striking dish has become a modern classic, as chefs around the world are working out new ways to push vegetables into the center of the plate. It makes a lovely vegetarian main course after a pasta intro, or a gorgeous side dish for lamb or fish. Omit the anchovies in the sauce, and it becomes entirely vegetarian; replace the butter with more olive oil, and it turns vegan. Try using pale orange, green or purple cauliflower, or a head of spiky, psychedelic Romanesco. Carve it at the table, just like a roast, for maximum impact.

Number Of Ingredients 12

1 large cauliflower
Olive oil
Salt
1/3 cup blanched almonds
6 to 10 anchovy fillets (optional)
2 garlic cloves, peeled
2 tablespoons unsalted butter, at room temperature (or use olive oil)
1/2 cup extra-virgin olive oil, plus extra for basting
2 teaspoons wine vinegar (white or red), more to taste
1/2 cup coarsely chopped parsley, mint, tarragon, cilantro or a combination
1/2 to 1 teaspoon red pepper flakes (optional)
Salt and ground black pepper

Steps:

  • Heat the oven while you prepare the cauliflower: Place a heavy oven-proof skillet (a cast-iron skillet looks very nice) or a baking sheet in the oven and turn the heat to 375 degrees. Place a small pan of hot water on the floor of the oven, to create steam.
  • Break off and discard the outer leaves from the cauliflower. Cut off the bottom of the stem, and then use the tip of a small, sharp knife to cut off the leaves close to the stem. Carefully cut out the hard core of the cauliflower, near the bottom. Leave the main stem intact and make sure not to cut through any of the florets.
  • Rinse the cauliflower (leave the water clinging to the outside) and place on a work surface, core side up. Drizzle with olive oil and use your hands to rub over the cauliflower until evenly coated. Sprinkle with salt.
  • Place the cauliflower on the hot pan in the oven, core side down, and cook until very tender all the way through when pierced with a knife, at least 1 hour or up to 2 hours. During the cooking, baste 2 or 3 times with more olive oil. It should brown nicely. If you have a convection feature, use it toward the end of baking to brown the crust.
  • Make the sauce: In a small frying pan, toast nuts over low heat, shaking often, just until golden and fragrant. Set aside to cool.
  • Soak anchovies, if using, for 5 minutes in cool water. Rinse and set aside on paper towels.
  • In a food processor, combine almonds, anchovies, garlic and butter and pulse until smooth. Mix in oil, then vinegar. Mix in herbs and red pepper flakes, if using. Season to taste with salt and pepper. Set aside.
  • When cauliflower is tender, remove from the oven. (If desired, run it briefly under the broiler first to brown the surface; there is no need to do this if you used convection.)
  • Serve cauliflower in the skillet or from a serving plate. Cut into wedges and spoon sauce around each wedge.
