1/4 cup crumbled Gorgonzola cheese
4 boneless skinless chicken breast halves (6 ounces each)
1/4 teaspoon salt

1 egg white

Steps:

  • In a small skillet, saute the onion, mushrooms, celery and garlic in oil until tender. Stir in spinach and cheese; remove from the heat., Cut a lengthwise slit through the thickest part of each chicken breast; fill with spinach mixture. Sprinkle with salt and pepper. This is an old recipe. I have no clue where it originated from, but we have been making it for years. It is a no-fail recipe--great for company or just a quiet meal alone. Complete the meal with a salad and warm crusty bread.

4 lbs roasting chickens
12 ounces herb stuffing mix (Stove Top)
1 cup water
3 tablespoons butter
1 large onion (chopped)
3/4 cup frozen chopped spinach (thawed drained)
2 ounces prosciutto (chopped)
3 garlic cloves (minced)
2 teaspoons sage
1/2 teaspoon rosemary
4 tablespoons whipping cream
1 teaspoon poultry seasoning
1/4 teaspoon paprika

Steps:

  • Preheat oven 350°F.
  • In large bowl mix stuffing mix with water.
  • In large skillet melt butter over med heat.
  • Add onion, garlic, sage and rosemary.
  • Sauté about 2 minute.
  • Add spinach.
  • Sauté for another 5 minutes or until tender.
  • Remove from heat.
  • Add cream.
  • Mix spinach mixture with stuffing in bowl.
  • Spoon stuffing into chicken.
  • Close with metal skewers.
  • Sprinkle chicken with poultry seasoning and paprika.
  • Bake in roasting pan 1 hr 45 minutes - 2 hours.
  • Let stand 15 minutes before serving.

1 6 -pound roasting chicken
Kosher salt and freshly ground pepper
1 stick unsalted butter
4 cloves garlic, smashed and roughly chopped
1/4 cup roughly chopped walnuts
1/4 cup fresh parsley, roughly chopped
2 teaspoons fresh thyme
1 baguette, cut into 1 1/4-inch cubes (about 5 cups)
4 cups low-sodium chicken broth

Steps:

  • Rinse the chicken and pat dry. Put on a large plate and refrigerate, uncovered, at least 4 hours or overnight to dry out the skin.
  • Pat the chicken dry and season the cavity with salt and pepper. Put the chicken on a rack in a roasting pan, tucking the wings underneath. Preheat the oven to 450 degrees F.
  • Cook the butter, garlic and walnuts in a small skillet over low heat until the butter is melted and the nuts are lightly toasted, 5 to 7 minutes. Brush the chicken with 2 tablespoons of the garlic butter; transfer the remaining butter mixture (including the garlic and nuts) to a large bowl. Add the parsley, thyme and bread and toss to coat. Fill the cavity of the chicken with about two-thirds of the stuffing. Tuck the remaining stuffing on the baking sheet underneath the chicken. Sprinkle the chicken with 2 teaspoons salt and 1/4 teaspoon pepper.
  • Transfer the roasting pan to the oven and roast until the stuffing is toasted, about 20 minutes. Add 2 cups chicken broth to the pan and roast 40 more minutes. Use a spoon to scoop the stuffing out of the chicken and transfer to the bottom of the roasting pan with the rest of the stuffing. Reduce the heat to 425 degrees F and continue roasting until an instant-read thermometer registers 165 degrees F, 30 to 40 minutes.
  • Transfer the chicken to a platter and let rest 15 minutes. Transfer the stuffing to a bowl. Put the roasting pan on the stovetop over medium-high heat. Add the remaining 2 cups broth to the pan and cook, scraping up any browned bits with a wooden spoon, until almost syrupy, 5 to 8 minutes. Return the stuffing to the pan to soak up the juices. Serve with the chicken.

1 pound cleaned spinach
1 whole chicken
1 teaspoon kosher salt

1 cup lightly cooked assorted wild mushrooms in a little whole butter and shallots, include shiitake, morels

  • Mix thoroughly and reserve for seasoning the chicken.
  • Preheat oven to 340 degrees. Brown off the garlic lightly in olive oil and place to the side. Then saute your spinach quickly until starts to wilt. Remove from the flame and add to lightly browned garlic. Chill. Slide your fingers in between the skin and the breast meat of the chicken. Neatly slide your spinach and garlic mixture in between the skin and the breast meat. Truss your chicken and lightly sprinkle some of your herb mixture over the top of chicken and rub with olive oil.   • While the potatoes are still warm add your heated milk, butter, mushrooms, and demi-glace. Mix thoroughly until incorporated.

pancake syrup, 3 cups from the package
2 tablespoons peach preserves
1/2 teaspoon Worcestershire sauce
2 bone-in skin-on chicken breasts (1 lb)

1/4 teaspoon pepper
1 tablespoon butter or 1 tablespoon margarine
1/2 cup chopped onion (1 medium)

  • Heat oven to 350°.
  • Spray a 9-inch glass pie plate or a 8-inch square pan with cooking spray.

  • Bake uncovered for 25 minutes.
  • Meanwhile, toast waffle sticks as directed on box.

½ cup sour cream
½ cup shredded pepperjack cheese

  • Preheat the oven to 375 degrees F (190 degrees C).

2 cloves garlic, chopped
½ onion, chopped

4 ounces Italian-style salad dressing
8 toothpicks, or as needed
½ sleeve round buttery crackers, crushed fine

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a baking pan with cooking spray.
  • Heat a skillet over medium heat. Add oil, garlic, and onion. Cook and stir until tender, 1 to 3 minutes. Add ham and spinach leaves and stir until wilted, about 1 minute. Add wine; simmer until evaporated, scraping up browned bits. Remove from heat. Mix in bread, walnuts, egg, Parmesan, 1/2 teaspoon salt, and 1/2 teaspoon pepper.

1 pound fresh spinach or a 10-ounce package of frozen
2 tablespoons butter
2 tablespoons finely minced shallots
1 clove garlic, minced
1/2 teaspoon dried sage
2 tablespoons walnuts
2 tablespoons freshly grated Italian Parmesan cheese
Salt and freshly ground pepper
8 small boned and skinned chicken breasts, about 2 1/2 ounces each, pounded thin
4 tablespoons flour
2 tablespoons olive oil
1 cup dry red wine
2 tablespoons balsamic vinegar

Steps:

  • Trim the spinach of any coarse stems, wash it very well and chop it. If using frozen spinach, defrost it. Heat butter in a large skillet. Add one tablespoons of the shallots and the garlic and saute over medium low heat until tender. Add the fresh or frozen spinach and cook until the spinach is completely wilted and any excess liquid evaporated from the pan.
  • Transfer spinach to a food processor; add sage, walnuts and cheese and process to a fine puree. Season to taste with salt and pepper.
  • Spread about a tablespoon of this mixture on each flattened chicken breast, roll the chicken around the filling and secure with toothpicks or tie with butcher's cord. Dust each roll lightly with flour.
  • Heat the olive oil in a large skillet. Add the chicken and saute quickly over medium high heat until golden brown on all sides. Remove chicken from the pan, add the remaining tablespoon of shallots and saute briefly. Stir in the red wine.
  • Return the chicken to the pan, baste with the sauce, cover and cook over low heat for 35 minutes, basting once or twice more.
  • Remove chicken from the pan and transfer to a serving dish. Cover and keep warm.
  • Add the vinegar to the pan, stir, then taste for seasoning. Heat briefly and then spoon sauce over chicken and serve.
