This is an old recipe. I have no clue where it originated from, but we have been making it for years. It is a no-fail recipe--great for company or just a quiet meal alone. Complete the meal with a salad and warm crusty bread.

- Preheat oven 350°F.
- In large bowl mix stuffing mix with water.
- In large skillet melt butter over med heat.
- Add onion, garlic, sage and rosemary.
- Sauté about 2 minute.
- Add spinach.
- Sauté for another 5 minutes or until tender.
- Remove from heat.
- Add cream.
- Mix spinach mixture with stuffing in bowl.
- Spoon stuffing into chicken.
- Close with metal skewers.
- Sprinkle chicken with poultry seasoning and paprika.
- Bake in roasting pan 1 hr 45 minutes - 2 hours.
- Let stand 15 minutes before serving.

ROAST CHICKEN WITH WALNUT-HERB STUFFING

- Rinse the chicken and pat dry. Put on a large plate and refrigerate, uncovered, at least 4 hours or overnight to dry out the skin.
- Pat the chicken dry and season the cavity with salt and pepper. Put the chicken on a rack in a roasting pan, tucking the wings underneath. Preheat the oven to 450 degrees F.
- Cook the butter, garlic and walnuts in a small skillet over low heat until the butter is melted and the nuts are lightly toasted, 5 to 7 minutes. Brush the chicken with 2 tablespoons of the garlic butter; transfer the remaining butter mixture (including the garlic and nuts) to a large bowl. Add the parsley, thyme and bread and toss to coat. Fill the cavity of the chicken with about two-thirds of the stuffing. Tuck the remaining stuffing on the baking sheet underneath the chicken. Sprinkle the chicken with 2 teaspoons salt and 1/4 teaspoon pepper.
- Transfer the roasting pan to the oven and roast until the stuffing is toasted, about 20 minutes. Add 2 cups chicken broth to the pan and roast 40 more minutes. Use a spoon to scoop the stuffing out of the chicken and transfer to the bottom of the roasting pan with the rest of the stuffing. Reduce the heat to 425 degrees F and continue roasting until an instant-read thermometer registers 165 degrees F, 30 to 40 minutes.
- Transfer the chicken to a platter and let rest 15 minutes. Transfer the stuffing to a bowl. Put the roasting pan on the stovetop over medium-high heat. Add the remaining 2 cups broth to the pan and cook, scraping up any browned bits with a wooden spoon, until almost syrupy, 5 to 8 minutes. Return the stuffing to the pan to soak up the juices. Serve with the chicken.
ROASTED CHICKEN BREAST WITH SPINACH AND WALNUTS STUFFING
Steps:
- Ingredients - 4 large fresh chicken breasts, boneless and skinless (average 8oz per breast) - 4 cups fresh spinach - 2 Tbsp of garlic - 1/4 cup walnuts crushed - Salt - Fresh ground black pepper - Olive oil (not extra virgin) Directions 1. Pre-heat oven to 400 degrees. Butterfly Chicken Breasts (cut along side and lay out flat leaving attached at one end like a book) and lay out flat on cutting board. You can pound it slightly to flatten a bit if you want. 2. Rub both sides with olive oil and season well with salt and pepper. 3. Lightly wilt spinach in non-stick pan, or if using frozen just thaw. 4. Spread roasted garlic paste onto one half on inside of chicken breasts. 5. Sprinkle with crushed walnuts. 6. Place spinach on top of walnuts. 7. Fold top over and place on a rack fitted inside a sheet pan or roasting pan. 8. Place chicken in oven and bake for 20 minutes on 400. Then reduce heat to 325 and roast for an additional 30 minutes, or until inside stuffing reaches 145 degrees. 9. Let rest for 15 minutes before slicing.
ROASTED CHICKEN WITH FRESH GARLIC AND SPINACH STUFFED UNDER THE SKIN AND WILD MUSHROOM MASHED POTATOES

- Mix thoroughly and reserve for seasoning the chicken.
- Preheat oven to 340 degrees. Brown off the garlic lightly in olive oil and place to the side. Then saute your spinach quickly until starts to wilt. Remove from the flame and add to lightly browned garlic. Chill. Slide your fingers in between the skin and the breast meat of the chicken. Neatly slide your spinach and garlic mixture in between the skin and the breast meat. Truss your chicken and lightly sprinkle some of your herb mixture over the top of chicken and rub with olive oil. Bake in a pre-heated 340 degree oven for about 45 minutes.
- While the potatoes are still warm add your heated milk, butter, mushrooms, and demi-glace. Mix thoroughly until incorporated.
BAKED CHICKEN AND SPINACH STUFFING

- Heat oven to 350°.
- Spray a 9-inch glass pie plate or a 8-inch square pan with cooking spray.
- In a small bowl, mix contents of the syrup cups from waffles, the preserves, and Worcestershire sauce.
- Place chicken, skin side up, in pie plate; sprinkle with salt and pepper.
- Spoon syrup mixture over chicken.
- Bake uncovered for 25 minutes.
- Meanwhile, toast waffle sticks as directed on box.
- Cool slightly, about 2 minutes.
- Cut waffles into 3/4-inch cubes; set aside.
- Spray a 1-quart casserole with cooking spray (or use a 9x5-inch nonstick loaf pan; do not spray).
- In a 10-inch nonstick skillet, melt butter over medium heat.

- Stir in waffle pieces and broth, breaking up and moistening waffle pieces.
- Sprinkle with poultry seasoning and sage.
- Remove from heat; stir in spinach.
- Cool about 5 minutes.
- Stir in egg white and pecans.
- Spoon stuffing into casserole; place in oven with chicken.
- Bake uncovered for 15 to 25 minutes or until juice of chicken is clear when thickest part is cut to bone (170°F) and stuffing is thoroughly heated.
- Serve chicken with stuffing, spooning remaining sauce in pan over chicken.

- Preheat the oven to 375 degrees F (190 degrees C).
- Place spinach in a large glass bowl, and heat in the microwave for 3 minutes, stirring every minute or so, or until wilted. Stir in sour cream, pepperjack cheese, and garlic.
- Lay the chicken breasts out on a clean surface, and spoon some of the spinach mixture onto each one. Roll up chicken to enclose the spinach, then wrap each chicken breast with two slices of bacon. Secure with toothpicks, and arrange in a shallow baking dish.
- Bake uncovered for 35 minutes in the preheated oven, then increase heat to 500 degrees F (260 degrees C), or use the oven's broiler to cook for an additional 5 to 10 minutes to brown the bacon.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a baking pan with cooking spray.
- Heat a skillet over medium heat. Add oil, garlic, and onion. Cook and stir until tender, 1 to 3 minutes. Add ham and spinach leaves and stir until wilted, about 1 minute. Chop slightly in the skillet. Remove from heat and stir in cream cheese until melted and mixture has cooled a bit. Add Swiss cheese and set filling aside.
- Cut each chicken breast to 1/2 inch thickness and place in a bowl. Pour Italian dressing over chicken. Place 1 chicken breast on a cutting board and pound thinner. Add about 1/4 of the filling and fold chicken over to form a packet. Seal using toothpicks and place in the prepared baking pan. Repeat with remaining chicken breasts and filling.
- Combine crushed crackers and Cheddar cheese together in a bowl. Cover filled chicken breasts with cracker mixture, mashing them into the breasts.
- Bake in the preheated oven for 45 minutes. Remove from oven and let sit for 10 minutes before transferring from the pan to a serving platter to allow filling to set up. Remove toothpicks before serving.

- Preheat oven to 400°F. Melt 1/4 cup butter in large skillet over medium heat. Add giblets (if using), onion, carrot, sage, and garlic. Sauté until carrot is tender, about 10 minutes. Add wine; simmer until evaporated, scraping up browned bits. Remove from heat. Mix in bread, walnuts, egg, Parmesan, 1/2 teaspoon salt, and 1/2 teaspoon pepper.
- Spoon stuffing into cavities of chickens; skewer cavities closed. Rub each chicken with 2 tablespoons butter; sprinkle with salt and pepper. Arrange in roasting pan. Lay 6 pancetta slices atop each to cover. Surround with fennel.
- Roast chickens and fennel 45 minutes. Turn fennel over. Roast until chickens are golden and thermometer inserted into thickest part of thigh registers 165°F, basting with pan juices, about 30 minutes. Transfer chickens and fennel to platter. Let rest 10 minutes.
- Tilt roasting pan; spoon fat from pan juices. Serve chickens with pan juices.

CHICKEN BREASTS STUFFED WITH SPINACH

- Trim the spinach of any coarse stems, wash it very well and chop it. If using frozen spinach, defrost it. Heat butter in a large skillet. Add one tablespoons of the shallots and the garlic and saute over medium low heat until tender. Add the fresh or frozen spinach and cook until the spinach is completely wilted and any excess liquid evaporated from the pan.
- Transfer spinach to a food processor; add sage, walnuts and cheese and process to a fine puree. Season to taste with salt and pepper.
- Spread about a tablespoon of this mixture on each flattened chicken breast, roll the chicken around the filling and secure with toothpicks or tie with butcher's cord. Dust each roll lightly with flour.
- Heat the olive oil in a large skillet. Add the chicken and saute quickly over medium high heat until golden brown on all sides. Remove chicken from the pan, add the remaining tablespoon of shallots and saute briefly. Stir in the red wine.
- Return the chicken to the pan, baste with the sauce, cover and cook over low heat for 35 minutes, basting once or twice more.
- Remove chicken from the pan and transfer to a serving dish. Cover and keep warm.
- Add the vinegar to the pan, stir, then taste for seasoning. Heat briefly and then spoon sauce over chicken and serve.
