ROASTED CINNAMON SUGAR ALMONDS



Roasted Cinnamon Sugar Almonds image

4 cups whole almonds
1 large egg white
1 Tbsp pure vanilla extract
1/2 cup granulated sugar
1/2 cup packed light brown sugar
2 tsp ground cinnamon
1/4 tsp salt

Steps:

  • Preheat the oven to 250°F. Butter the bottom and sides of a 15x10x1.5-inch jelly roll pan.
  • In a medium-size mixing bowl using an electric mixer, beat together the egg white and vanilla extract until the egg white has expanded and looks creamy and light beige in color.
  • Add the almonds to the mixing bowl. Coat the almonds with the beaten egg white stirring until evenly coated.
  • Place the granulated sugar, brown sugar, cinnamon and salt in a large plastic storage bag. Seal the bag and shake to combine.
  • Drop the egg white coated almonds into the sugar mixture.
  • Seal the bag and shake until the almonds are coated on all sides.
  • Spread in a single layer on the prepared jelly roll pan then bake for 1 hour stirring every 15 minutes.
  • Spread on wax paper and cool completely.
  • Store tightly covered at room temperature.

1 cup brown sugar
1 cup white sugar
½ teaspoon salt
5 cups whole almonds
1 tablespoon ground cinnamon

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Line a baking sheet with parchment paper.
  • Beat egg whites and vanilla extract in a large bowl; add almonds and toss to coat. Stir brown sugar, white sugar, cinnamon, and salt into almonds until blended. Spread almond mixture into prepared baking dish.
  • Bake in preheated oven, stirring every 15 minutes, until coating is dry, about 75 minutes.

1 teaspoon cold water
4 cups whole almonds
½ cup white sugar
¼ teaspoon salt
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Lightly grease a 10x15 inch jellyroll pan.
  • Lightly beat the egg white; add water, and beat until frothy but not stiff. Add the nuts, and stir until well coated. Mix the sugar, salt, and cinnamon, and sprinkle over the nuts. Toss to coat, and spread evenly on the prepared pan.
  • Bake for 1 hour in the preheated oven, stirring occasionally, until golden. Allow to cool, then store nuts in airtight containers.

4 Cups whole almonds
1 egg white + 1 tsp water, whisked together
1 Cup white sugar
3/4 tsp salt
1 TBS cinnamon

Steps:

  • Preheat the oven to 300 degrees and spray a baking sheet pan with nonstick spray.
  • Add 4 cups of almonds to a large bowl.
  • In a small bowl, whisk together an egg white and 1 tsp water until frothy.
  • Pour the egg white and water over the almonds and stir to coat the nuts.
  • In a medium size bowl, mix together the sugar, salt and cinnamon.
  • Pour the sugar mixture over the nuts and stir to coat.
  • Spread the nuts on the baking sheet pan.
  • Place the pan in the oven and roast for 15 minutes.
  • At the 15 minute mark, use a spatula to turn the nuts over.
  • Roast for 15 more minutes, then turn the nuts again.
  • Roast for 10 minutes then remove from the oven and pour the almonds into a glass bowl to cool.

4 cups unblanched almonds
1/3 cup sugar
1/3 cup packed brown sugar

  • In a large bowl, beat egg whites until frothy; beat in vanilla. Add almonds; stir gently to coat. Combine the sugars, salt and cinnamon; add to nut mixture and stir gently to coat. , Spread evenly in 2 greased 15x10x1-in. baking pans. Bake at 300° for 25-30 minutes or until almonds are crisp, stirring once. Cool. Store in an airtight container.

1 egg white
2/3 cup Splenda sugar substitute
4 teaspoons cinnamon

Steps:

  • Preheat oven to 400 degrees.
  • Line a baking tray or cookie sheet with foil and spray with non-stick cooking spray. You can also use non-stick aluminum foil.
  • Lightly beat the egg white in a bowl. Add almonds and toss until well coated.
  • In a separate bowl, mix Splenda and cinnamon. Add Splenda/cinnamon mixture to almonds and coat well.
  • Spread nuts on the baking tray and put in the oven for 10 minutes.
  • Remove from oven and carefully separate nuts by hand as they may be clumped together. Delicious right out of the oven or put on wax paper to cool! Store in an airtight container.
