Mexican Street Corn! Fire-roasted corn mixed with chipotle mayo and mozzarella then topped with pork rinds, cotija, and chives.

1 lb bag frozen roasted corn ((I buy the bag from Trader Joe's or Whole Foods))
1/3 cup mayonnaise
2 teaspoons cayenne pepper ((or more if you love spicy!))
1 cup shredded mozzarella
Crumbled cotija for garnish
Crushed pork rinds for garnish
Chopped chives for garnish

Steps:

  • Heat corn according to package instructions.
  • In a hot skillet, add cooked roasted corn, mayo, and cayenne pepper. Stir to combine until creamy consistency over medium heat. Add shredded mozzarella and stir until melted and combined. (*see notes for alternative method)
  • Transfer to a plate. Top with cotija, pork rinds, (sprinkle of cayenne pepper, optional) and chives. Serve immediately as a side dish, appetizer or with chips as a dip. Enjoy!

Oven Roasted Corn with Chipotle Butter image

You can serve the corn however you like, but if you are up for it try making a simple flavored butter. We love this chipotle butter with cilantro, lime and chipotle peppers in adobo sauce. Chipotles in Adobo Sauce can be found in the international section of your grocery store, usually in a small can.

Yield Makes 4 servings

Number Of Ingredients 6

4 ears corn still in husks, soaked in water for about 10 minutes
8 tablespoons butter (1 stick)
1 lime, juiced
2 tablespoons minced cilantro
1 to 2 chipotle peppers in adobo sauce, minced
Salt to taste

Steps:

  • Heat the oven to 350 degrees F. Place corn husks onto the oven rack and roast for about 30 minutes or until corn is soft.
  • In the meantime, make the chipotle butter. Combine softened butter, lime juice, cilantro, chipotle peppers and a generous pinch of salt. Place onto plastic wrap and roll the butter into a log. Place into the refrigerator or freezer until ready to use.
  • Remove corn from the oven, peel down the husks, add a slice of chipotle butter and enjoy.

Mexican street corn is one of our favorites and we love Adriana's version. The delicious spicy chipotle sauce is wonderful on top of sweet crisp corn. Grated Cotija cheese is a little salty and balances out the flavors. Once you try your corn this way, you're not going to want it any other way!

6 Tbsp mayonnaise
1 chipotle pepper in adobo sauce
2 small garlic cloves
handful fresh cilantro with stems
juice of 1 lime
1 pinch ground sea salt (adjust according to taste)
1 Tbsp cotija cheese for topping
1/4 c cotija cheese for serving
4-6 roasted corn on the cob

Steps:

  • 1. Roast your corn on the cob.
  • 2. In a blender or food processor, blend all ingredients until well incorporated.
  • 3. The thickness of the sauce is up to you; I personally prefer it on the chunky side. If you find the sauce is too thick, add 1 tbsp. of water.
  • 4. Spread a layer of the chipotle topping on each cob and sprinkle Cotija cheese. Serve while hot.

6 ears corn, shucked
1/2 cup mayonnaise
4 teaspoons finely chopped canned chipotle chiles in adobo
6 lime wedges

a large cast-iron skillet or griddle

Steps:

  • Add corn to a 6- to 8-quart pot of boiling water. Return water to boiling, then cover and remove from heat. Let stand 10 minutes. Transfer corn with tongs to paper towels to drain.
  • Stir together mayonnaise and chiles in a small bowl.
  • Heat skillet over moderately high heat until hot, then roast corn in 2 batches, turning occasionally with tongs, until blackened in spots, about 5 minutes per batch. Cut corn crosswise into 2-inch sections with a sharp knife and serve with mayonnaise and lime wedges.

I've always loved Chipotle (the burrito restaurant's) corn salsa, and I found a recipe that approximates the cool, zesty taste. You can find the original recipe mine is based off of here, http://www.recipesecrets.net/blog/recipes/copycat-chipotle-corn-salsa/ I used canned corn for ease of use and to avoid using a grill, allowing fully indoor preparation. If you choose to use them, roasting and skinning the poblano peppers is the most tedious part of this recipe, and it will take some practice to get it right. You really need to blacken the skin to get it to the point where it will separate from the flesh easily. Note: It proved to be a medium salsa that sneaks up on you. After three chip-loads, your tongue really starts to wake up and notice.

2 (15 ounce) cans sweet whole kernel corn, drained
1/2 red onion, diced
1/3 cup cilantro, chopped
2 jalapeno peppers, diced
2 mini sweet peppers or 2 poblano peppers
1 tablespoon lime juice
salt or pepper

Steps:

  • Line a baking/cookie sheet with foil and coat with cooking-spray. Roast the corn at 375 degrees for 30 minutes or until it just begins to brown.
  • Roast the sweet or Poblano peppers at 375 degrees for 45 minutes, then de-stem, de-seed, skin, and slice them.
  • Combine all ingredients in a bowl, mix, cover with plastic wrap.
  • Refrigerate the mixture for 1 hour.
  • Add lime juice, mix, replace plastic wrap.
