1 tablespoon salt
2 tablespoons lemon-pepper
1 tablespoon dried basil
1 tablespoon poultry seasoning
2 tablespoons olive oil
6 Cornish game hens, about 1 1/2 pounds each, rinsed and dried thoroughly
1 green bell pepper, large dice
2 stalks celery, large dice
1 onion, large dice

Steps:

  • Preheat oven to 375 degrees F.
  • In a small mixing bowl, stir together salt, lemon pepper, dried basil and poultry seasoning. Rub olive oil all over the hens and season each with the salt mixture. Place the hens on a baking sheet pan with plenty of space between them. You may need to use 2 pans. Loosely stuff the cavities of each hen with some green bell pepper, celery and onion. Roast the hens in the preheated oven for about 1 hour or until an instant-read thermometer inserted into the thickest part of the thigh registers 165 degrees F and the juices run clear. Remove the hens from the oven, loosely tent with foil and let rest 10 minutes before carving or serving.

The original recipe came from "The 21 Cookbook: Recipes and Lore from New York's Fabled Restaurant" by Michael Lomonaco and Donna Forsman. I found the cooking time given was insufficient and the recipe made enough glaze for eight hens, never mind four! Obviously, I will be using the changes I made to the recipe. The end result was a big hit with my family and guests, though!

4 (1 1/2 lb) Cornish hens
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
4 bay leaves
4 garlic cloves, peeled and smashed
2 tablespoons dried thyme
1/2 teaspoon chili flakes
2 tablespoons olive oil
1/4 cup honey
1/4 cup stone ground dijon mustard
1 1/2 tablespoons balsamic vinegar
1/2 teaspoon ground cumin
1 tablespoon fresh cilantro, chopped (optional)

Steps:

  • Season the hens inside and out with salt and pepper.
  • Place equal portions of bay leaves, garlic, thyme and chili flakes inside the cavity of each hen.
  • Brush the hens with oil.
  • Place, breast side down, on a rack in a roasting pan.
  • Cover and roast in a preheated 375 degree F oven for 40 minutes. Check at this point to see if the leg pulls away easily from the body and the meat is no longer pink. If still pink, roast for another 10 to 15 minutes.
  • Meanwhile, combine the honey, mustard, vinegar, cumin and cilantro in a bowl.
  • Brush over the hens.
  • Roast uncovered for another 10 minutes to brown the glaze.

This is a recipe from an old home economics cook book, but it's one I love to make. It is great served with wild rice. Make sure hen is tender before adding honey mixture or the meat will burn. The recipe is for one Cornish Hen, but I couldn't get the software to accept it the way I tried to enter it.

1 1/2 lbs Cornish hens
salt, to taste
pepper, to taste
1 cup butter, melted
1 1/2 teaspoons honey

Steps:

  • Split hen in half. Wash and pat dry. Sprinkle both sides with salt and pepper. Brush both sides with 3 Tbs butter.
  • Place breast side down on a rack in a shallow pan. Bake at 325 degrees for 25 minutes.
  • Turn. Brush with butter and bake for 25 minutes.
  • Mix honey with 1 1/2 Tbs melted butter. Brush half the mixture on the hen. Bake for 15 minutes. Turn and brush with remaining honey mixture. Bake for 15 minutes longer.

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place game hen halves with skin sides up into a 9x13-inch roasting pan.
  • Roast hens in the preheated oven for 35 minutes.
  • Stir orange juice, honey, soy sauce, and vinegar together in a small bowl; brush mixture over hens.
  • Roast hens for 5 more minutes and baste again with orange juice mixture. Roast until skin is browned and meat is no longer pink inside, about 10 more minutes.

a 1 1/2-pound Cornish hen
1 1/2 tablespoons olive oil
1 tablespoon Dijon-style mustard
2 tablespoons mustard seeds
1/2 teaspoon crumbled dried rosemary
1 garlic clove, minced
1/4 cup dry white wine
1/4 cup chicken broth

Steps:

  • Remove the backbone from the hen with poultry shears or a sharp knife, put the hen, skin side up, on a work surface, and press down the breastbone to flatten the hen. In an ovenproof skillet roast the hen, skin side up, in a preheated 450°F. oven for 10 minutes. While the hen is roasting, in a small bowl whisk together the oil, the mustard, the mustard seeds, the rosemary, the garlic, and salt and pepper to taste. Remove the hen from the oven, spread the mustard mixture over the skin, and roast the hen for 15 minutes. Transfer the hen to a preheated broiler and broil it about 4 inches from the heat for 4 to 5 minutes, or until the skin is crisp. (Do not let the mustard seeds burn.) Transfer the hen to a platter and keep it warm. To the skillet add the wine and boil the mixture over high heat until it is reduced by half. Add the broth, boil the mixture for 1 minute, scraping up and brown bits, and add any juices that have accumulated on the platter. Strain the sauce through a fine sieve onto 2 plates, cut the hen in half with a sharp knife, and arrange each half on top of the sauce.
