SEARED SCALLOPS WITH ROASTED-GARLIC SABAYON



Seared Scallops with Roasted-Garlic Sabayon image

Number Of Ingredients 11

2 heads of garlic
4 teaspoons olive oil
1 1/4 pounds sea scallops or bay scallops
1/2 cup bottled clam juice
3 tablespoons dry vermouth
1 tablespoon fresh lemon juice
4 large egg yolks
1 teaspoon chopped fresh parsley
1 teaspoon chopped fresh tarragon
1 teaspoon chopped fresh chives
3 cups lightly packed arugula

Steps:

  • Preheat oven to 400°F. Cut top 1/4 inch off heads of garlic to expose cloves. Place garlic heads on large sheet of foil. Drizzle 1 teaspoon oil over garlic and wrap loosely but completely in foil; place packet directly on oven rack and roast until very soft, about 45 minutes. Cool. Squeeze garlic from skins into bowl. Using fork, mash roasted garlic until smooth.
  • Heat 3 teaspoons oil in heavy large skillet over medium-high heat. Sprinkle scallops with salt and pepper. For sea scallops: Sear half at a time until brown and just opaque in center, about 1 minute per side. For bay scallops: Sauté half at a time until opaque, stirring frequently, about 1 1/2 minutes per batch. Transfer to plate. Tent with foil to keep warm.
  • Meanwhile, bring clam juice and vermouth to boil in small saucepan; remove from heat. Stir in lemon juice. Whisk egg yolks and 2 tablespoons roasted garlic puree in large metal bowl to blend. Gradually whisk in clam juice mixture. Place bowl over saucepan of simmering water (do not allow bowl to touch water) and whisk until sabayon is thick and creamy and thermometer registers 160°F, about 3 minutes. Remove bowl from over water. Whisk in parsley, tarragon, and chives. Season sabayon with salt and pepper.
  • Divide arugula among 4 warm plates; place scallops atop arugula. Spoon sabayon over scallops and serve.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Arrange heads of garlic on a baking sheet. Sprinkle garlic with olive oil. Bake for 40 minutes to 1 hour, when the garlic is soft and squeezable, it is ready. Remove, let cool, and serve.

2 cups seasonal fruit, chopped
ice cream (optional)

Steps:

  • Heat water in a pan.
  • Allow it to boil.
  • The pan is to be used as a double boiler.
  • Reduce heat, allow to simmer.
  • Beat egg yolks in a bowl.
  • Add sugar to the egg yolks.
  • Mix well.
  • Keep this bowl containing yolks and sugar (sabayyon) over the pan in which the water is simmering.
  • Keep mixing the tolks- sugar mixture for 3-5 minutes while holding it over the pan.
  • Put the chopped fruits in a bowl.
  • Pour the sabayyon over the fruits.
  • Gratinate for 2-3 minutes until a crisp brown colour appears over the fruits.
  • Serve immediately if you want a hot dessert or add some ice cream (your favourite flavour) over the fruits-sabayyon mixture and serve as a cold dessert.
  • Pour the sabayyon over this.

5 large egg yolks
Pinch of salt
1/4 cup plus 2 tablespoons sugar
1 cup Muscat de Beaumes-de-Venise, a sweet French dessert wine
3/4 cup heavy cream
2 teaspoons freshly squeezed lemon juice
1 jar (7.4 ounces) roasted whole chestnuts
Chocolate Straws
Cocoa powder, for sprinkling

Steps:

  • Prepare a large ice bath, and set aside. Fill a medium saucepan with 2 inches water. Set over medium heat, and bring to simmer.
  • In a large stainless-steel bowl, whisk together egg yolks, salt, and sugar until very pale. Add the Muscat; whisk to combine.
  • Place bowl over a pan of simmering water, and whisk until mixture has thickened and has tripled in volume, 8 to 10 minutes. Remove mixture from heat, and immediately transfer to ice bath. Whisk until chilled.
  • In a large chilled bowl, whip cream until soft peaks form. Add the lemon juice, and fold the whipped cream into the chilled sabayon. Divide among 12 serving dishes; top each with 2 roasted chestnuts and 1 chocolate straw; sprinkle with cocoa. Serve.

I have no idea where this recipe came from. I have had it for years, though. It is great on grilled chicken breasts or roast fowl. The yield depends on the volume of the whipped cream, approximately 2 cups. Preparation time includes roasting the garlic and whipping the cream.

2 garlic heads, whole unpeeled
1/4 cup olive oil
8 eggs, separated, yolks slightly beaten
1/2 lemon, juice of
2 cups dry white wine
1/2 cup heavy cream, whipped to soft peak
salt, to taste
white pepper, to taste

Steps:

  • Heat oven to 375°F.
  • Cut off bottom of garlic heads.
  • Place on aluminum foil.
  • Cut off top third of garlics.
  • Drizzle 1/2 of oil on cut surfaces, replace tops.
  • Drizzle the remaining oil on garlic.
  • Wrap loosely and place in hot oven.
  • Roast for 15 - 30 minutes.
  • You can tell when it's ready by the aroma.
  • Remove garlic from oven and let cool.
  • While garlic is cooling, whip the cream.
  • Peel the garlic and push it through a sieve or food mill.
  • In the top of a bain marie, combine garlic paste with lemon juice and stir in the yolks.
  • Over simmering water, whisk the garlic, juice and yolk mixture. Be careful to cook very slowly or you will have lovely garlic scrambled eggs.
  • At the ribbon stage, add the wine.
  • Continue whisking until the mixture thickens.
  • Remove from heat, continuing to whisk, until cooled slightly.
  • Fold the whipped cream into the mixture.
  • Season to taste with salt and pepper.
