Baked Peaches are DELICIOUS and EASY! Fresh peaches with maple syrup, brown sugar and cinnamon, baked until warm and tender. Add ice cream or caramel or enjoy them just as they are!

3 fresh, very ripe peaches (halved and pitted)
2 tablespoons extra virgin olive oil
2 tablespoons pure maple syrup or honey
1 tablespoon brandy (bourbon, or rum (optional))
1 tablespoon coconut sugar or light brown sugar
1 teaspoon pure vanilla extract
1 teaspoon ground cinnamon
¼ teaspoon kosher salt
Vanilla ice cream, Greek yogurt, or heavy cream, for serving

Steps:

  • Preheat oven to 350 degrees F. Lightly coat a 9x9-inch or similarly sized baking dish that's large enough to hold the peach halves in a single layer with nonstick spray. Pick a dish that's sized to where your peaches fit comfortably side by side, but there isn't too much excess room around them. Arrange peaches cut-side up in the dish.
  • In a medium mixing bowl, stir together the oil, maple syrup, brandy, coconut sugar, vanilla, cinnamon, and salt. Spoon the mixture over the peaches, filling the center and letting it run over the sides.
  • Bake peaches, uncovered, until the peaches are cooked through and fork-tender, about 30 minutes. Serve warm, topped with vanilla ice cream, Greek yogurt, or a pour of heavy cream, as desired.

  • Preheat oven to 400 degrees F (200 degrees C).
  • Arrange brown sugar, 1 teaspoon per peach, in a 9x13-inch baking dish. Top each brown sugar mound with a piece of butter and a sprinkle of cinnamon. Place a peach half, cut-side down, on top of brown sugar-butter.
  • Bake in the preheated oven until peaches are soft, 15 to 20 minutes.
  • Plate 2 warm peaches per serving and top with 1 scoop vanilla ice cream.

2 tablespoons unsalted butter
2 tablespoons packed light-brown sugar
4 ripe white peaches, halved lengthwise and pitted
3 tablespoons honey
4 to 6 ounces chewy almond nougat, coarsely chopped

Steps:

  • Preheat oven to 400 degrees with rack in upper third. Melt butter in a large ovenproof skillet or saute pan over medium heat until foaming. Reduce heat to low; add sugar, stirring until it has dissolved. add peaches, cut side down, and cook until they start to caramelize, 3 to 4 minutes. Flip, and drizzle with honey.
  • Raise heat to medium-high. Bring pan juices to a boil. remove from heat.
  • Divide nougat pieces among peaches, arranging them in the center of each half. Spoon pan juices over tops.
  • Transfer to oven; roast until nougat melts and peaches turn golden brown and are tender when pierced with a fork, 10 to 12 minutes. Serve immediately.

  • Melt butter in heavy large skillet over medium heat. Add sugar and cinnamon and cook, stirring often, until sugar begins to dissolve (mixture may clump together). Add peaches and vanilla. Sauté until peaches are tender, stirring occasionally, about 4 minutes. Remove skillet from heat. Stir in rum. 4 ripe peaches, halved and pitted
8 teaspoons butter (1 stick), plus butter for the dishes
1/2 cup packed light brown sugar
4 tablespoons dark rum, optional
Heavy cream

Steps:

  • Position the oven racks so that one of the racks is in the center of the oven. Preheat the oven to convection roast at 500°F. Butter four individual ovenproof baking dishes.
  • Place two peach halves into each baking dish, cut side up. Place 1 teaspoon butter in the cavity of each peach half. Then spoon 1 tablespoon brown sugar in each.
  • Bake in the center of the oven for 10 minutes, until the edges of the peaches begin to brown and the sugar and butter are bubbly. Remove from the oven.
  • If desired, pour about 1 tablespoon dark rum over each serving and ignite carefully. Serve with heavy cream.
