  • Preheat oven to 450 degrees. Divide pumpkin, shallots, oil, and sage between two large rimmed baking sheets; season with salt and pepper, and toss.
  • Roast until pumpkin is tender, 30 to 35 minutes, tossing once and rotating sheets halfway through.

1 teaspoon cumin seed
1 teaspoon fennel seed
1 -2 teaspoon ground cinnamon
2 dried red chilies, chopped
1/4 teaspoon sea salt
2 garlic cloves

1 medium pumpkin, halved seeded and cut into 6 - 8 wedges

  • Preheat oven to 200C 400°F.

2 lemons, wedges, juice of
1/4 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon ground mace

Steps:

  • Heat oven to 350 F.
  • Peel and clean pumpkin.
  • Soften butter and mix with all spices, lemon and honey.
  • Cut pumpkin into serving size wedges (as you would a canteloupe).
  • Brush with the butter mixture.
  • Place in casserole dish, curved edges up.

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Cut stem off pumpkin. Rinse and dry thoroughly. Carefully cut pumpkin in half vertically and scrape out seeds. Cut each half into 6 wedges, about 1 1/2 to 2 inches wide.
  • Place wedges on their sides on the baking sheet and brush with 2 tablespoons olive oil. Sprinkle with salt and pepper.
