Parmesan and Panko Roasted Baby Potatoes image

1 bag of small baby gold potatoes
2 tsp olive oil
Sea salt and freshly cracked pepper (to taste)
2 tbsp panko crumbs
1 tbsp parmesan (finely grated)
1 tbsp parsley (finely chopped)
1 clove of garlic (minced)
Dash of paprika

Steps:

  • Preheat the oven to 400 degrees. Line a baking sheet with tin foil then coat with cooking spray.
  • Slice the potatoes in half then boil them for 7-10 minutes or until fork-tender but not cooked all the way through. Remove from the water and place on paper towels to remove excess water. Place the potatoes on the prepared baking sheet and drizzle with the olive oil then season with sea salt and freshly cracked pepper, to taste.
  • Combine the panko crumbs, parmesan cheese, parsley, garlic, and paprika together in a bowl until well combined. Sprinkle the panko mixture on top of the potatoes evenly. Place into the oven and roast for 15-20 minutes or until golden brown and cooked through. Serve immediately. Enjoy.

6-8 Red Potatoes, diced or quartered
1 C Panko Crumbs
2 TBSP Olive Oil
Salt & Pepper to Taste

Steps:

  • Pre-heat oven to 400 degrees. Scrub and rinse the red potatoes. Pat dry and dice or quarter. Place diced potatoes in a large bowl and sprinkle with Olive Oil. Toss the potatoes with the Panko Crumbs ensuring everyone has a nice coat. Grab a baking sheet and place the potatoes in a single layer. Place potatoes in oven and cook for 20-25 minutes until they are golden brown and fork tender.

1/2 cup breadcrumbs (preferably dry)
1/2 cup grated parmesan cheese
1/8-1/4 teaspoon garlic powder
salt and pepper
2 1/2 lbs potatoes, cut in wedges

Steps:

  • Set oven to 400 degrees.
  • In a shallow dish, place the melted butter.
  • In another dish, combine all bread crumbs, Parmesan cheese, garlic powder, salt (can use seasoning salt if desired) and black pepper.
  • Coat the potato wedges in melted butter, then in the bread crumb mixture, making sure to coat completely.
  • Place on a baking sheet in a single layer, lined with foil and sprayed lightly with a non-stick spray.
  • Drizzle any remaining butter over the top of the potatoes.
  • Bake for 30 minutes, or until potatoes are tender.

¼ cup olive oil, or more if needed
2 pounds red potatoes, cut into evenly sized pieces
5 fresh thyme sprigs, or to taste
kosher salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
½ large red bell pepper, seeded and cut into 1-inch pieces

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Pour olive oil into a heavy baking dish (such as an enameled cast iron dish). Place potatoes into the baking dish and toss to coat with olive oil. Sprinkle with fresh thyme sprigs, kosher salt, black pepper, cayenne pepper, and red bell pepper pieces.
  • Bake in the preheated oven for 30 minutes. Toss vegetables to turn over. Some potatoes may stick; don't try to turn them. Return to oven and bake for 20 more minutes.
  • Toss potatoes again, turning potatoes so unbrowned sides contact the bottom of the dish. Continue baking until potatoes are browned and tender, about 15 more minutes.
  • Turn oven off and leave potatoes in the oven for 15 more minutes. Toss once more and adjust levels of salt, black pepper, and cayenne pepper before transferring potatoes to a serving bowl.
