Ham and Sweet Potato Soup image

This is the best soup. I made to use up what I had on hand and it turned out delicious. My family loved it and it was a quick dinner.

5 cups chicken stock
3 ½ cups peeled and diced sweet potatoes
¾ cup diced cooked ham
⅓ cup diced celery
⅓ cup finely chopped onion
½ cup chopped green bell pepper
¼ cup chopped carrot
¼ cup corn
1 tablespoon chopped garlic
1 teaspoon dried basil
1 teaspoon dried parsley flakes
1 teaspoon ground black pepper, or to taste
½ teaspoon salt
5 tablespoons butter
6 tablespoons all-purpose flour
2 cups milk
¾ cup shredded Cheddar cheese

Steps:

  • Combine chicken stock, sweet potatoes, ham, celery, and onion in a stockpot; bring to a boil. Reduce heat to medium and cook until sweet potatoes are tender, 10 to 15 minutes. Stir green bell pepper, carrot, corn, garlic, basil, parsley flakes, black pepper, and salt into soup and simmer until vegetables are softened, 5 to 10 minutes.
  • Melt butter in a saucepan over medium-low heat; whisk flour into butter using a fork. Cook and stir mixture until thickened, about 1 minute. Slowly stir milk into butter-flour mixture until completely smooth; continue cooking and stirring over medium-low heat until thickened, 4 to 5 more minutes. Stir Cheddar cheese into milk mixture until melted and smooth.
  • Stir milk-Cheddar cheese mixture into soup; cook until thickened and heated through, about 5 minutes.

Ham Hock, Sweet Potato & Celery Soup image

This tasty soup is easy to prepare in advance & freezes well. It's cheap to make, has low GI, is gluten & lactose free. Serve with oven warmed wholemeal bread rolls in big bowls. A winter warmer. Ham hocks rarely come much smaller that 1kg, so making a smaller quantity is hard to do. It also takes the same time to cook a large or small quantity, so I use it as a great time saver - with 4 adults in our house it provides one full meal for tonight & one full meal for for the freezer. If we're having a large dinner party, it easily provides 16 entre size servings. Control the fat content by cutting as much fat of the ham or bacon as you can manage. If you're really serious, allow the soup to cool & skim oil off the surface. Tastes even better when reheated.

2 tablespoons butter
2 large yellow onions, peel & roughly chop
4 large garlic cloves, peel & rougly chop
1 kg ham hocks or 1 kg bacon bones with plenty meat, remove & discard skin & fat
10 bay leaves
2 teaspoons dried sage
1 teaspoon dried oregano
1 teaspoon dried herbs (tarragon, basil, parsely etc)
3 liters hot water
1 bunch celery & tops, chop & discard the hard core end, roughly chop celery & tops
1 kg sweet potato, peel & roughly chop
4 teaspoons salt (to taste)
4 teaspoons fresh ground black pepper

Steps:

  • 1. In a very large saucepan (about 4 lts) over low heat, melt butter & saute onions & garlic.
  • 2. Toss in all dried herbs, gently fry.
  • 3. Remove meat from ham bone & roughly chop, toss meat & bone into pan.
  • 4. When meat & onions just start turning brown, pour in hot water & stir well to remove all browning residue from bottom of pan.
  • 5. Add celery & sweet potato.
  • 6. Set temperature to gently boil & stir occasionally for about 2 - 3 hours.
  • 7. Add ground black pepper.
  • 8. Salt to taste (be careful, ham & bacon bones will vary in saltiness).
  • 9. Add a little water if required to keep soup fluid but allow to thicken.

I like to serve this golden soup from my great-grandmother at holiday dinners. Not only is it a great first course, it's also a satisfying meal for my vegetarian friends.

3 pounds sweet potatoes, peeled and cut into 1-inch cubes
2 large sweet onions, coarsely chopped
1 can (49-1/2 ounces) chicken broth, divided
2 tablespoons reduced-sodium soy sauce
2 tablespoons maple syrup
1 garlic clove, minced
1/4 teaspoon pepper
Salted pumpkin seeds or pepitas, optional

Steps:

  • Place sweet potatoes and onions in separate greased 15x10x1-in. baking pans. Bake, uncovered, at 425° for 15 minutes, stirring once., Meanwhile, combine 1/2 cup broth, soy sauce, maple syrup and garlic; drizzle over onions and toss to coat. Bake potatoes and onions 15-20 minutes longer or until tender., In a blender, cover and process potatoes and remaining broth in batches until smooth. Transfer mixture to a Dutch oven; add onion mixture and pepper. Heat through. Garnish with pumpkin seeds if desired.
