Roasted Green Beans With Red Onion and Walnuts image

Roasting turns the starch into sugar in these delicious green beans coated with a vinegar and honey mixture. Mmm...mmmmm! Adapted from Cook's Illustrated magazine.

1 lb green beans
1 medium red onion, cut in 1/2-inch thick wedges
2 tablespoons olive oil
salt and pepper
1 tablespoon balsamic vinegar
1 teaspoon honey
1 teaspoon fresh thyme leave, minced
2 medium garlic cloves, thinly sliced
1/3 cup walnuts, toasted and chopped

Steps:

  • If you would like softer roasted green beans, you may steam them about 5 minutes before roasting.
  • Combine balsamic vinegar, honey, thyme and garlic in a small bowl and set aside.
  • Adjust your oven rack to the middle postiion; heat oven to 450*F. Line a baking sheet with foil; spread beans on the baking sheet along with the onion wedges. Drizzle with oil. Using your hands, toss to coat evenly. Sprinkle with 1/2 teaspoons salt, toss to coat, and distribute in an even layer. Roast 10 minutes. Remove baking sheet from oven. Using tongs, coat beans and onion evenly with vinegar/honey mixture; redistribute in an even layer. Continue roasting until onions and beans are dark golden brown in spots and beans have started to shrivel, 10 to 12 minutes longer. Adjust seasoning with salt and pepper and toss well to combine. Transfer to a serving dish, sprinkle with 1/3 cup toasted and chopped walnuts. Serve and enjoy!

These roasted green beans are so easy, yet definitely company-worthy...that is, if you're willing to share!

1 pound fresh green beans, trimmed
¼ cup extra-virgin olive oil
sea salt and freshly ground black pepper to taste
½ large lemon, juiced

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Toss beans with olive oil in a medium mixing bowl until well coated. Spread beans out on a rimmed baking sheet, or in a roasting pan. Sprinkle lightly with salt and pepper.
  • Roast in the preheated oven until beans look shriveled and browned, about 20 minutes.
  • Remove beans from the oven, gather into a pile, and squeeze lemon juice over the top. Toss and serve.

1 3/4 lbs green beans, trimmed
1/2 cup sliced shallot
2 tablespoons walnut or olive oil
1/2 teaspoon finely grated lemon zest
1/2 cup Diamond of California® shelled walnuts
1/3 cup dried cranberries
1/4 cup water
2 tablespoons fresh lemon juice
1/4 cup Italian parsley leaves (optional)
Lemon wedges (optional)

Steps:

  • Preheat oven to 400ºF. Combine green beans with shallots, oil and lemon zest on heavy large rimmed baking sheet; toss well to combine. Spread beans out into single layer and season with salt and pepper. Roast the beans in the oven until just beginning to brown, about 10 minutes.
  • Stir the beans well and sprinkle with walnuts and cranberries. Continue to roast until beans are almost just tender, about 6 minutes longer. Add the water and lemon juice and continue roasting until the liquid evaporates and the green beans are lightly glazed, about 4 minutes longer. Garnish with parsley and lemon wedges if desired and serve.

1 pound fresh green beans, trimmed
1 pinch salt
4 tablespoons extra-virgin olive oil
1 medium onion, finely diced
1 shallot, chopped
½ teaspoon garlic salt
½ teaspoon soy sauce
salt and ground black pepper to taste

Steps:

  • Fill a stockpot with water and bring to a boil over high heat. Add green beans and 1 pinch salt; boil until tender, 5 to 10 minutes. Drain beans in a colander and rinse with cold water. Blot dry using paper towels.
  • Heat olive oil in a skillet over medium heat. Cook and stir onion and shallot in the hot oil until tender and translucent, 5 to 7 minutes. Add green beans, garlic salt, soy sauce, salt, and pepper. Cook and stir for 5 to 7 minutes more. Serve immediately.

10 garlic cloves, unpeeled and cut in half lengthwise (the peel will slip off later)
2 onions, peeled and quartered
olive oil

2 tablespoons balsamic vinegar

Steps:

  • Preheat oven to 400°F.
  • Brush a large baking pan with olive oil.
  • Place beans, garlic, and onion on pan.
  • Sprinkle with olive oil and salt, and bake for 15 to 20 minutes, stirring often.
  • Remove from oven.

2 pounds fresh green beans, trimmed
2 shallots, thinly sliced
6 garlic cloves, crushed
2 tablespoons olive oil
3/4 teaspoon salt
1/4 teaspoon pepper
2 teaspoons grated lemon zest
1/2 cup chopped walnuts, toasted

Steps:

  • Preheat oven to 425°. In a large bowl, combine green beans, shallots and garlic; drizzle with oil and sprinkle with salt and pepper. Transfer to two 15x10x1-in. baking pans coated with cooking spray., Roast 15-20 minutes or until tender and lightly browned, stirring occasionally. Remove from oven; stir in 1 teaspoon lemon zest. Sprinkle with walnuts and remaining lemon zest.
