Grilled Halloumi and Roasted Vegetables Salad Recipe image

A delicious Halloumi salad recipe, packed with Mediterranean flavours! Soft and colourful roasted vegetables mixed with grilled Halloumi and crunchy leafy greens coated in an exquisite oil and lemon sauce.

2 red peppers
1 green pepper
1 aubergine
2 zucchinis
1 red onion
2 cloves of garlic (skins on)
olive oil
thyme, rosemary
salt and freshly ground pepper
1/3 of a cup extra virgin olive oil
1/3 of a cup water
1 tsp mustard
2 tbsps lemon juice
some fresh herbs (basil, mint, parsley)

Steps:

  • Preheat the oven to 200C and prepare the vegetables for the halloumi salad. Halve and deseed the peppers and cut each half into 4 pieces. Cut the red onion into 8 wedges. Halve the zucchinis lengthways and then slice into 2cm chunks. Top and tail the aubergine, cut it in half and slice. Place all the vegetables (and the garlic) in a large baking tray and sprinkle with some fresh thyme and rosemary leaves. Season and drizzle with some olive oil and toss them to coat. Roast the vegetables for about 35 minutes, until golden, soft and cooked through. While the veggies are cooking, get them a good stir every now and again.
  • To prepare the dressing for the halloumi salad (oil and lemon sauce/ ladolemono), add into a blender all the ingredients and blend, until combined.
  • Place the Halloumi cheese in a hot frying or griddle pan and cook until it turns golden brown, turning half way through cooking (about a minute on each side).
  • Assemble the Halloumi salad. Put the leafy greens and the roasted vegetables in a large salad bowl. Pour in the sauce (be careful not to add too much sauce, because the greens will become wilt and no longer crunchy). Toss to coat everything in the dressing; have a taste and add some more seasoning, if needed. Tear the Halloumi into pieces over the salad and serve while still warm. Enjoy!

1 large sweet potato
1 large red firm potato
1 red onion
1 yellow pepper
1 red pepper
1/2 head garlic, cloves peeled
4 tablespoons olive oil
Freshly ground black pepper
4 1/2 ounces halloumi cheese, sliced as thinly as you can

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the sweet potato into rough 1 1/2-inch cubes and the red potato slightly smaller (1-inch cubes) as the sweet potato will cook more quickly. Halve the red onion, then cut each half into 4 to 6 segments, discarding any tough outer skin. Seed the peppers and cut into 1-inch squares, and separate the cloves of garlic. Put everything into a 2-quart flameproof casserole dish, or whatever you want to use (it should be big, otherwise use 2 dishes) and, using your hands, give the vegetables a good coating of olive oil. Season with black pepper, but no salt as the cheese will make it salty (and anyway, the salt will make water leach out).
  • Bake for 45 minutes, by which time the vegetables should be cooked through and here and there tinged with brown. You'll need to turn the oven up to maximum heat or light the broiler for the endgame: so place the thinly sliced cheese on top of the bake, and put it back in the very hot oven or under the broiler until the cheese has melted and turned slightly brown on top, about 5 to 10 minutes. Serve straight out of the casserole dish.

250 g asparagus, trimmed
400 g green beans, trimmed
250 g cherry tomatoes

Steps:

  • To make dressing place all ingredients in blender.
  • Heat oil sprayed pan and cook asparagus, beans for 4 minutes.
  • Add tomatoes and thyme and cook for 3 minutes.
  • Transfer to plate to keep warm.
  • Spray pan again and cook haloumi in batches until browned on both sides.
  • Toss all together and drizzle with dressing, season with salt and pepper.

4 Roma tomatoes, cored
1 serrano chile, stemmed
1 small shallot, peeled
2 1/2 tablespoons chicken broth (homemade or canned low-sodium)
1 small handful fresh cilantro sprigs
Kosher salt and freshly ground black pepper

Steps:

  • Preheat a medium heavy griddle or cast-iron pan over medium-high heat. Add the whole tomatoes, serrano chile and shallot and roast on the dry skillet, turning frequently, until golden brown on all sides, about 8 minutes.
  • Transfer the vegetables and chile to a food processor and add the chicken broth and cilantro. Pulse until smooth but with some small pieces remaining, or to the desired consistency. Season with salt and pepper.
  • Serve immediately or cool to room temperature and store in an airtight container in the refrigerator for up to 5 days.

Steps:

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Lightly spray a cookie sheet with vegetable cooking spray.

This is a modification of a recipe from a nifty cookbook my boss gave me for my birthday. (I guess everyone I know has figured out, when in doubt a good cookbook makes the perfect gift.) The original recipe was conceived by Jeffrey Murphy of GB Ratto & Co. My modifications make this dish a little lighter while preserving the terrific flavors of the original. Because this salad is vegan, it travels very well and would make a nice addition at a picnic or potluck.

1 lb baby red potato
2 heads garlic
1/4 cup extra virgin olive oil
1/4 cup chicken broth or 1/4 cup water
1/4 cup chopped fresh oregano or 1 tablespoon dried oregano
1/4 cup thyme leaves, stripped from the branches
1 lb asparagus, trimmed into 2 inch pieces
1 red onion, thinly sliced
4 scallions, chopped (green & white parts)

Steps:

  • Preheat oven to 350°F.
  • Trim the top off the garlic heads leaving the rest of the bulb intact.
  • After a good cleaning, quarter the potatoes and place in a large bowl. Add the oregano, thyme, oil and stock. Now add the two garlic bulbs and toss together. Pour into a baking pan and roast for 30 minutes or until the garlic and potatoes are tender. Check about 20 minutes in and if the pan is very dry add another tablespoon or two of broth.
  • Remove potatoes from the oven and pour off any remaining liquid into a bowl. Let the potatoes and garlic cool.
  • Clean and trim the asparagus into 2-inch pieces. Steam or boil until they are cooked crisp tender (3 to 5 minutes). Plunge into cold water to stop the cooking and drain.
  • Take the roasted garlic and gently squeeze the soft cloves into the bowl of oil drained from the roasting pan. Stir to create a nice dressing. If it seems too thick, add a little more broth. The exact thickness is up to you but I like mine thicker than a vinaigrette but thinner than a mayonnaise type dressing. For me that's about 2-4 tablespoons. Season with salt and pepper.
  • Toss together the roasted potatoes, asparagus, red onion, scallions and garlic dressing.
  • Serve at room temperature.
