1 box of chocolate cake mix (any brand)
1 egg
1/2 C. oil
1 C. mini marshallows
*Tip: when scooping the dough and forming the balls (tuck the mini marshmallows inside the cookies.)
1 C. walnuts

Steps:

  • Preheat the oven to 350 degrees.
  • Combine the cake mix, egg , and oil, mixing well.
  • Stir in the walnuts and mini marshmallows.
  • Roll the cookie dough into 2" balls and place 2-3" a part on the baking sheet.
  • Bake 8-10 minutes.

½ cup butter
1 cup semisweet chocolate chips
1 cup white sugar
2 eggs
½ teaspoon vanilla extract
1 ½ cups all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
1 cup chopped walnuts
48 miniature marshmallows

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). In a small sauce melt together the butter and 1/2 cup of the chocolate chips, stirring frequently. Remove from heat and set aside to cool.
  • In a medium bowl, stir together the melted chocolate mixture with the sugar, eggs and vanilla. Sift together the flour, baking powder and salt, stir into the chocolate mixture. Finally, stir in the chopped nuts and remaining chocolate chips.
  • Drop dough by rounded teaspoonfuls onto unprepared cookie sheets. Press a miniature marshmallow into the center of each cookie. Bake for 7 to 8 minutes in the preheated oven. Remove from baking sheets immediately to cool on wire racks.

1/2 cup butter or margarine, softened
1/4 cup water
1/4 cup packed brown sugar
1 egg
1 cup chopped nuts
3 cups miniature marshmallows
1/2 cup M&M's® chocolate candies, if desired
1/3 cup Betty Crocker™ Rich & Creamy chocolate frosting

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease or spray bottom and sides of 13x9-inch pan. In large bowl, stir together dry cake mix, butter, water, brown sugar and egg until well blended. Stir in nuts; spread in pan.
  • Bake 20 minutes. Sprinkle with marshmallows. Bake 10 to 15 minutes longer or until marshmallows are puffed and golden. Sprinkle with candies.
  • In small microwavable bowl, microwave frosting uncovered on High 10 to 15 seconds. Drizzle over bars. Cool completely, about 1 hour. For easier cutting, use plastic knife dipped in hot water. For bars, cut into 6 rows by 4 rows. Store loosely covered.

Water, vegetable oil and egg called for on brownie mix box
1 cup semisweet chocolate chips
1 1/3 cups miniature marshmallows
1/3 cup chopped peanuts

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom only of 8- or 9-inch square pan with shortening or cooking spray. Make brownie batter as directed on box. Stir in 2/3 cup of the chocolate chips. Spread in pan.
  • Bake brownies as directed on box. Immediately after removing from oven, sprinkle with miniature marshmallows, remaining 1/3 cup chocolate chips and the peanuts. ½ cup vegetable oil
1 egg
1 (12 ounce) container prepared chocolate frosting

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Mix cake mix, oil, and egg together in a bowl. Spread batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 15 minutes. Remove pan and leave oven on.

2½ cups semi-sweet chocolate chunks, (or morsels, divided)
2 tablespoons unsalted butter
¾ cup (150 g) granulated sugar
2 large eggs, (room temperature)
2 tablespoons whole milk
2 teaspoons vanilla extract
1 cup (125 g) all-purpose flour
¼ cup (30 g) unsweetened cocoa powder
1 teaspoon baking powder
½ teaspoon kosher salt
½ cup (54 g) chopped almonds
½ cup (25 g) mini marshmallows

Steps:

  • Preheat oven to 325°F. Line two cookie sheets with parchment paper.
  • In a medium microwave-safe bowl, add 1 cup of the chocolate morsels and the butter. Heat in the microwave for 15 seconds. Stir and then heat for another 15 seconds. Stir. If the chocolate is mostly melted do not heat again. (If the chocolate seizes or hardens a bit it is okay.) Set aside.
  • While the chocolate is cooling, add sugar, eggs, milk, and vanilla to a large bowl. Whisk well until they are completely incorporated, light, and airy.
  • Add the slightly warm chocolate to the egg mixture and whisk continuously until fully combined and smooth.
  • Add the flour, cocoa powder, baking powder, and salt. Stir well to incorporate, but don't over mix. The mixture should be very loose, just like a brownie mix.
  • Stir in the remaining 1½ cups of the chocolate chunks and the almonds, reserving a little of each to press into the tops of the cookies, if desired.
  • Set the cookie dough in the freezer for 15 minutes.
  • When ready, using a 3 tablespoon scoop, scoop the cookie dough and place each cookie 2 inches apart on the lined baking sheets.
  • Top with reserved chocolate chunks, almonds, and mini marshmallows, pressing down slightly. This will give the cookies that 'rocky road' look. (Note: When adding the marshmallows, try to keep them in the middle of the cookie dough ball.)
  • Bake for 13-15 minutes. Let cool on the cookie sheet before serving. Store leftovers in an airtight container.

1 egg, at room temperature
1/2 teaspoon vanilla extract
1/4 cup toated walnuts, pecans, or peanuts, coarsely chopped
1 cup semisweet chocolate chips
1/4 cup (4 tablespoons) unsalted butter
1 ounce unsweetened chocolate
2 ounces cream cheese
1/4 cup whole milk
1 cup confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees. Lightly grease and flour a 9x13-inch pan.
  • To make the first layer: Place the butter and chocolate in a small pan and cook over the lowest possible heat until almost all the chocolate has melted. Off heat, add the sugar, eggs, vanilla, flour, nuts, and baking powder and mix well. Press into the prepared pan and set aside.
  • To make the second layer: Place the cream cheese, sugar, flour, butter, egg, and vanilla in the bowl of a mixer fitter with a paddle and mix until smooth and fluffy. Scrape down the sides of the bowl, add the nuts, mix to combine, and spread over the first layer. Sprinkle with the chocolate chips and transfer to the oven. Bake until slightly golden on the edges, about 20 to 25 minutes.
  • Sprinkle the second layer with the marshmallows and return the pan to the oven until the marshmallows are just melted but not colored, about 3 minutes.
  • To make the frosting: Place the butter and chocolate in a small pan and cook over the lowest possible heat until almost all the chocolate has melted. Add the cream cheese and milk and mix until smooth. Add the confectioners' sugar and vanilla and mix until smooth. Immediately pour the frosting over the marshmallows and briefly swirl the two mixtures together. Cool in the pan and cut into 36 to 48 bars. Cover and refrigerate.

1-15.25 oz. box chocolate fudge cake mix
⅓ cup vegetable oil
2 eggs
1 tbsp vanilla extract
2 tbsp water
3/4 cup milk chocolate chips

Steps:

  • Preheat oven to 350°. Line a 9x9 baking pan with parchment paper and spray with nonstick spray.
  • In a large bowl combine cake mix, oil, eggs, vanilla extract and water. This can done either by hand or with a hand held mixer.
  • Pour the batter into the prepared 9x9 pan and spread out into an even layer. Sprinkle a few additional chocolate chips on top of the batter. Bake for 23-28 minutes. To get the fudgy texture you know and love be sure to not over bake. Remove from the oven and allow to cool completely.
  • Once cool, pull up on the parchment paper and remove all of the brownies. Cut them into 12 squares. Serve with a scoop of ice cream and store leftovers in an airtight container at room temperature or in the refrigerator for up to 4 days.
