ROCKY ROAD COOKIE BARS RECIPE

- ● Pre-heat oven to 350°. ● Pour melted butter at the bottom of a 13″x9″ pan. ● Sprinkle graham cracker crumbs all over the pass and pat until butter is absorbed into crumbs. ● Pour sweetened condensed milk evenly over the graham cracker layer. ● Spread chocolate chips evenly over the sweetened condensed milk. ● Add a layer of crushed walnuts. ● Cover with coconut flakes. ● Bake for approximately 22 minutes in the pre-heated 350° oven. ● Pull pan from the oven and top off with mini marshmallows. ● Bake for an additional 8-10 minutes, or until marshmallows are medium toasted brown color. ● Allow to cool for 20 minutes before cutting into squares.
CHOCOLATE ROCKY ROAD COOKIES

- Preheat oven to 400 degrees F (200 degrees C). In a small sauce melt together the butter and 1/2 cup of the chocolate chips, stirring frequently. Remove from heat and set aside to cool.
- In a medium bowl, stir together the melted chocolate mixture with the sugar, eggs and vanilla. Sift together the flour, baking powder and salt, stir into the chocolate mixture. Finally, stir in the chopped nuts and remaining chocolate chips.
- Drop dough by rounded teaspoonfuls onto unprepared cookie sheets. Press a miniature marshmallow into the center of each cookie. Bake for 7 to 8 minutes in the preheated oven. Remove from baking sheets immediately to cool on wire racks.

- Preheat the oven to 350 degrees F.
- Spray a 9-inch by 13-inch cake pan with nonstick spray.
- Line the bottom of the pan with a layer of graham crackers. It's OK to overlap a bit.
- Sprinkle the graham crackers with the marshmallows.
- Sprinkle the marshmallows with the chocolate chips.
- Sprinkle the chocolate chips with the cashews.
- In a small saucepan over low heat, combine the butter and brown sugar. Stir the mixture constantly until the sugar is dissolved.
- Turn off the heat, move the saucepan to a cool burner, and stir in the vanilla.
- Drizzle the contents of the saucepan evenly over the contents of the cake pan.
- Bake at 350 degrees F for 10 to 12 minutes or until the marshmallows are golden on top.
- Cool in the pan on a wire rack.
- When the cookies are cool, cut into brownie-sized bars and serve.

ROCKY ROAD BARS
Steps:
- Preheat the oven to 350 degrees. Lightly grease and flour a 9x13-inch pan.
- To make the first layer: Place the butter and chocolate in a small pan and cook over the lowest possible heat until almost all the chocolate has melted. Off heat, add the sugar, eggs, vanilla, flour, nuts, and baking powder and mix well. Press into the prepared pan and set aside.
- To make the second layer: Place the cream cheese, sugar, flour, butter, egg, and vanilla in the bowl of a mixer fitter with a paddle and mix until smooth and fluffy. Scrape down the sides of the bowl, add the nuts, mix to combine, and spread over the first layer. Sprinkle with the chocolate chips and transfer to the oven. Bake until slightly golden on the edges, about 20 to 25 minutes.
- Sprinkle the second layer with the marshmallows and return the pan to the oven until the marshmallows are just melted but not colored, about 3 minutes.
- To make the frosting: Place the butter and chocolate in a small pan and cook over the lowest possible heat until almost all the chocolate has melted. Add the cream cheese and milk and mix until smooth. Add the confectioners' sugar and vanilla and mix until smooth. Immediately pour the frosting over the marshmallows and briefly swirl the two mixtures together. Cool in the pan and cut into 36 to 48 bars. Cover and refrigerate.
ROCKY ROAD OATMEAL COOKIES
When Chanie asked me to write about oatmeal cookies this month, I was a bit stumped. Soon after starting this column, I came up with an oatmeal cookie that was really well received... So what could I do different this time? When I mentioned the assignment to my talented photographer Saraizel, her first reaction was "Rocky Road," and I thought that was genius. The chocolate hides the whole wheat flour and oats, and which kid doesn't love marshmallows? My requirements for this recipe were that it needed to be a one-bowl, no-mixer, no-margarine recipe. - In a large bowl, whisk together the oil, sugars, eggs, and vanilla.
- Add flour, cocoa, baking powder, baking soda, and salt. Mix until well combined. Stir in oats and marshmallows.
- Refrigerate for a minimum of one hour.

- Heat oven to 350°F.
- Spray cookie sheets with cooking spray.
- Beat butter and sugars with electric mixer until creamy.
- Add eggs and vanilla; beat well.
- Add coffee if using or milk substitute and mix well.
- Add combined flour, baking soda and salt; mix well.
- Stir in oats (and extra flour if using old fashioned), chocolate chips and walnuts.
- To shape cookies, flatten 1 heaping Tbsp of dough in palm of hand.
- Arrange 4 marshmallows in center; wrap dough around marshmallows to cover completely.
- Repeat with remaining dough and marshmallows.
- Space cookies 2" apart on cookie sheets.
- Bake 10-12 minutes or until edges are golden brown.
- (Do not overbake; centers of cookies should still be soft.) Let stand 2 minutes on cookie sheets; remove to wire racks.
- Cool completely.
- Store tightly covered.

ROCKY ROAD FUDGE BARS
A bar cookie with all of the flavors of the popular rocky road ice cream.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
- In a medium saucepan, melt chocolate and butter over low heat, stirring occasionally. Remove from the heat and add 1 cup sugar, 1 cup flour, baking powder, vanilla, 2 eggs and walnuts. Stir until well blended. Spread evenly into the bottom of the prepared pan.
- For the next layer, in a medium bowl, beat the 6 ounces of cream cheese (reserve 2 ounces of the package of cream cheese for the next layer) with the 1/2 cup of sugar, egg, 2 tablespoons of flour, 1/2 teaspoon of vanilla, and 1/4 cup of butter. Mix until fluffy and smooth. Spread evenly over the first layer.
- Sprinkle the 1/4 cup of chopped nuts and chocolate chips over the second layer. Bake for 25 to 35 minutes in the preheated oven. Then sprinkle the miniature marshmallows over the top and bake for 2 minutes longer.
- Begin to prepare the icing while the bars are in the oven. In a medium saucepan, melt together the 1/4 cup of butter, 1 square of chocolate, remaining 2 ounces of cream cheese and 1/4 cup of milk. Remove from heat and stir in 3 cups of confectioners' sugar and 1 teaspoon of vanilla. Beat until smooth. Pour over the marshmallows and swirl together. Refrigerate until firm, cut into squares.
