ROLL-YOUR-OWN FAJITAS
It's always fun to assemble fajitas at the table, and it makes it easier for people to pick and choose ingredients depending on dietary requirements too

Steps:
- Mix the cumin, coriander and cayenne with some salt and pepper, then set aside. Heat half the oil in a frying pan, then throw in the onion, peppers and half the spice mix. Cook for about 3 mins. Tip the vegetables into a bowl.
- Place pan back on the heat with remaining oil, then fry the steak and remaining spice mix together for 4 mins until cooked through. Tip the steak into a separate bowl, garnishing with coriander. Heat the wraps. Bring everything to the table and let everyone help themselves.

Steps:
- Mix together the ingredients for the Fajita rub.
- Heat 1 tablespoon of oil in a large, nonstick skillet over medium heat. Toss in the sliced bell peppers and onion, sprinkle over 2 teaspoons of the fajita spice rub, and sauté until soft, about 8 minutes.
- Using a sharp knife, carefully slice the chicken breast in half. Lay a sheet of plastic wrap over the chicken breast and flatten the meat with a mallet or rolling pin.
- Spread a quarter the sautéed pepper mixture evenly on the chicken breast. Roll the breast and skewer with toothpicks so that the roll holds its shape.
- Slice the roll into ½-inch (1¼ cm) pieces, making sure each piece is held together with a toothpick.
- Season each roll on both sides with the fajita spice rub.
- Heat the remaining 1 tablespoon of oil in the skillet and fry the chicken rolls about 3 minutes on each side until fully cooked.
- Let rest 5 minutes before serving.

STEAK FAJITA ROLLS RECIPE BY TASTY
Here's what you need: olive oil, onion, garlic, green bell pepper, red bell pepper, yellow bell pepper, chili powder, paprika, cayenne powder, cumin, garlic powder, dried oregano, salt, pepper, flank steak, monterey jack cheese, long wooden toothpicks or cut wooden skewer

Steps:
- Preheat the oven to 350˚F (180˚C).
- Heat a large ovenproof skillet over medium heat and add the oil. Sauté the onion, garlic, and bell peppers until soft, about 5 minutes.
- Combine the chili powder, paprika, cayenne, cumin, garlic powder, oregano, salt, and pepper in a dish, and use the mixture to season the flank steak with on both sides. Lay the steak flat on a cutting board with the grain running up and down. Place the sautéed onions and peppers in the middle of the steak, leaving an inch or so on both ends. Cover the onions and peppers with a layer of cheese.
- Tightly roll up the meat from left to right; this will ensure that you cut against the grain when you slice the meat. Stick toothpicks through the sides of the roll to help it hold its shape and use a sharp knife to cut in between the toothpicks.
- Return the skillet to high heat, add the steak, and sear until a nice crust has developed, about 3 minutes. Flip and repeat with the other side. Transfer the skillet to the oven and bake for 10 minutes, or until cooked to your preference.
