1/2 to 3/4 cup simple syrup (see Cook's Note)
2 cups loosely packed fresh mint leaves, plus more sprigs for garnish
2 cups amaro, such as Averna
2 cups dark rum
2 cups sweet vermouth
1 1/2 cups fresh lemon juice
1/2 cup fresh orange juice, plus an orange wedge, for garnish
Club soda, for topping off

Steps:

  • Put the simple syrup and mint leaves in a pitcher and muddle with a wooden spoon. Fill the pitcher with ice, then add the amaro, rum, sweet vermouth, lemon juice and orange juice. Pour into a tumbler filled with ice. Top with club soda and garnish with mint sprigs and the orange wedge.

Because of this vegetable's bizarre and unusual appearance, this is the kind of thing people pass over in the market, mostly because they're confused by it and don't know what to do with it, but this recipe shows exactly what to do with it. If you do what I do, you'll be enjoying one of the most delicious vegetables you'll ever have. Serve drizzled with more olive oil or garlic aioli.

2 drizzles olive oil, divided, or as needed
2 heads Romanesco, leaves and stems removed
3 oil-packed anchovy fillets
3 tablespoons olive oil
¼ teaspoon red pepper flakes
1 lemon, juiced
¼ cup plain dry bread crumbs
½ cup finely grated Parmigiano-Reggiano cheese, divided
1 lemon, cut into wedges

Steps:

  • Preheat the oven to 475 degrees F (245 degrees C). Drizzle olive oil into a roasting pan or baking dish.
  • Cut Romanesco into quarters, being sure to cut directly through the thick center core, so that they stay together when roasted. Set aside until needed.
  • Add anchovies and 3 tablespoons olive oil to a large mixing bowl and use the back of a fork to mash the anchovies into a paste. Add red pepper flakes and lemon juice and stir with a fork to combine.
  • Toss Romanesco in the dressing until the pieces are thoroughly coated. Sprinkle with bread crumbs and 1/2 of the Parmigiano-Reggiano cheese and toss until evenly coated.
  • Transfer Romanesco into the prepared pan, cut side-down. Scrape all cheese and crumbs from the mixing bowl and scatter over the top. Grate the remaining Parmigiano-Reggiano to cover the tops and lightly drizzle with olive oil.
  • Bake in the preheated oven until the cheese is browned and the Romanesco is tender, as tested with the tip of a knife in the cores, about 20 minutes. Serve immediately with fresh lemon wedges.

1/2 cup chopped onion
1 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups canned tomatoes
4 cups cooked spaghetti
1 cup grated cheese (mozzarella or cheddar)

Steps:

  • Brown hamburger, onion, salt and pepper.
  • Add canned tomatoes.
  • Place layer of spaghetti in casserole dish.
  • Add half of meat and half of cheese.
  • Repeat layers until all ingredients are used ending with cheese.
  • Bake covered 350F 20-30 mins.
  • Uncover and bake another 10 mins to brown cheese.

1 lb spaghetti, cooked
1 lb ground beef
1 large onion, chopped
2 (28 ounce) cans tomato puree
1 lb American cheese or 1 lb cheddar cheese, cubed or shredded
1/4 cup margarine
salt and pepper

Steps:

  • Cook spaghetti until tender.
  • Brown ground beef with chopped onion.
  • Stir beef,cheese,tomato and salt and pepper to taste into spaghetti and mix well.
  • Dot with margarine.
  • Bake, covered,@ 350 for 45 minutes.

1 can (15 oz.) diced tomatoes
1/2 lb Kraft Cubed Cheddar Cheese (8 oz.)

Steps:

  • Cook spaghetti according to package directions. Drain. Brown ground beef & chopped onion. Season to taste with salt & pepper.
  • In a 1 1/2 qt casserole dish; place spaghetti, ground beef mixture, tomatoes and cheese.
  • Bake 30 minutes covered, 15 minutes uncovered at 350°F.

  • Abbacchio alla Scottadito. You can’t visit Rome without eating lamb. Abbacchio alla Scottadito is also known as ‘lamb finger-burning style’. Lamb chops are seasoned with salt, herbs, and pepper, rubbed with oil, and then grilled.
  • Coda alla Vaccinara. One of the most famous of Rome’s offal dishes, Coda alla Vaccinara is made from oxtail stewed in a tomato sauce or a chocolate base.
  • Trippa alla Romano. It doesn’t get more offal-y than this dish. Trippa alla Romano’s main ingredient is tripe, which is the edible lining from the stomach of cattle.
