2 large eggs
2 teaspoons sugar
1 cup 2% milk
3 teaspoons vanilla extract
1 cup all-purpose flour
1/4 teaspoon salt
Oil for deep-fat frying
ICING:
2 cups confectioners' sugar
1 teaspoon vanilla extract
1 to 3 tablespoons water

Steps:

  • In a small bowl, beat eggs and sugar; stir in milk and vanilla. Combine flour and salt; gradually add to batter until smooth., Heat 2-1/2 in. of oil to 375° in a deep-fat fryer or electric skillet. Place rosette iron in hot oil, then dip in batter, three-fourths up the sides of iron (do not let batter run over top of iron). Immediately place in hot oil; loosen rosette with fork and remove iron. , Fry rosettes, a few at a time, until golden brown, 1-2 minutes on each side. Remove to paper towel-lined wire racks. Repeat with remaining batter. , For icing, combine the confectioners' sugar, vanilla and enough water to achieve a dipping consistency. Dip edges of rosettes into icing; let dry on wire racks.

2 eggs
1 tablespoon white sugar
1 cup sifted all-purpose flour
1 cup milk
1 teaspoon vanilla extract
¼ teaspoon salt
vegetable oil for frying
sifted confectioners' sugar

Steps:

  • Combine eggs, sugar and salt; beat well. Add remaining ingredients and beat until smooth.
  • Heat a rosette iron in deep, hot oil (375 degrees) for 2 minutes.
  • Drain excess oil from iron. Dip in batter to 1/4 inch from the top of the iron, then dip iron immediately into hot oil (375 degrees).
  • Fry rosette until golden, about 30 seconds. Lift out; tip upside down to drain. With fork, push rosette off iron onto a rack placed over paper towels.
  • Reheat iron 1 minute; make next rosette.
  • Sprinkle rosettes with confectioners' sugar.

This is a holiday drink in the caribbean. I love the deep clear red color of this drink!!! This is how a good friend of mine makes it. The optional ingredients are commonly used.

hibicus fresh edible flower (Roselle, if not sure, look it up)
water (1.5 cups per 1 oz roselle)
ginger, fresh grated (or thinly sliced)
sugar, to taste
clove
cinnamon stick
allspice
orange peel
rum

Steps:

  • Be sure the seed pod are removed from the roselle.
  • Place everything you are using except the sugar in a big pot and boil.
  • Strain and add sugar.
  • Serve cold and pour over ice.
  • For adults add rum.

The story of the Roselle highlights the creative process at Employees Only. After seeking a hibiscus cordial, bar manager Robert Krueger infused the dried blossoms into syrup for a delicious result. The citrus and floral elements immediately suggested a pairing with gin, and the botanicals in Tanqueray No. 10 specifically led to grapefruit. A quick shake revealed that the red of the hibiscus turns an iridescent rose when mixed-inspiring the drink's name. The resulting drink is a reminder that a confident bartender should never be afraid of mixing a pink drink-or of drinking one, for that matter.

Number Of Ingredients 4

1 1/2 ounces Tanqueray No. 10 gin
1 ounce Hibiscus Cordial (page 158)
3/4 ounce freshly squeezed lime juice
1/2 ounce freshly squeezed grapefruit juice

Steps:

  • Pour the gin, cordial, and juices into a mixing glass. Add large cold ice cubes and shake vigorously. Strain into a chilled cocktail glass.
  • Dominant Flavors: floral hibiscus and grapefruit
  • Body: medium
  • Dryness: medium
  • Complexity: low to medium
  • Accentuating or Contrasting Flavors: citrus and juniper
  • Finish: medium tannic hibiscus with juniper following
