Steps:
- Preheat oven to 350 degrees. Grease two cookie sheets.
- In small bowl, combine flour, baking soda, and salt.
- In large bowl, with mixer at medium speed, beat butter until creamy. Gradually add sugar and beat until light and fluffy.
- Beat in sour cream, lemon extract, and vanilla.
- Reduce speed to low; beat in flour mixture just until blended.
- Drop dough by rounded teaspoons, 1 inch apart, on prepared cookie sheets.
- Bake until set and golden around edges, 10-12 minutes.
- Cool 1 minute on cookie sheets; with wide spatula, transfer cookie to wire racks to cool completely.

SABTA IRENE'S 1-1-1 SOUR CREAM & BUTTER COOKIES WITH JAM FILLING

- Mix together flour, butter and sour cream. Add sugar and pinch salt. Once dough is formed, roll into a ball, cover and chill for 30 minutes. Remove from fridge, roll out using a floured rolling pin on a flat surface. Cut dough into little 3 inch squares; place a small spoonful of jam and or nuts/cinammon filling on one side of square. Then fold other side of square over to form a triangle. Pinch down the edges of the cookie to hold in the filling. Brush top of cookie with egg wash. Bake batches on cookie tray in oven at 350 degrees for approx 10 minutes - until golden brown. Remove and cool on wire rack.
SOUR CREAM COOKIES W/ BURNT BUTTER ICING
This is a cookie recipe that has been in the Reese family for generations. I guarantee that you can't eat only one. Very addictive!

- Mix together:.
- Shortening, granular sugar & eggs.
- Stir in:.
- Sour cream and vanilla.
- Sift together & stir in: (an electric mixer may be used).
- Flour, soda, baing powder and salt until well mixed.
- Chill in refridgerator for at least 1 hour.
- Drop rounded spoonfuls about 2" apart on parchment paper lined cookie sheets (trust me, this is crucial) Bake in preheated oven at 400 degrees for 8-10 minutes or, when touched lightly with finger, almost no imprint remains.
- Icing: (Icing lovers may want to double, I recomend it!).
- While cookies are cooling, melt butter and boil until golden brown, but not dark brown!
- Remove from stovetop.
- Blend in powdered sugar gradually.
- Stir in vanilla and 1-2 tbsp of hot tap water until icing is smooth and creamy looking. Spread on cookies with butter knife.
- **You may want to use different food colorings to suit the holiday/occation**.

BETTY'S SOUR CREAM SUGAR COOKIES
These are a favorite cookie from my childhood that my Mom Betty made alot less frequently. She was a fabulous cook and baker. I did not appreciate all the work rolled out cookies took vs drop or other easier methods till I was grown. My daughter loves these and like my Mom I don't make them every year. While I've found easier recipes that imitate some other time consuming ones, I've never tasted any cookie that comes close to these. I usually made them as trees and sprinkled with green sugar. I occasionally made them for Valentines Day in heart shape with red sprinkles.

- Mix shortening, butter, sugar, eggs and vanilla thoroughly in a large bowl Blend the flour, baking powder, soda, salt and nutmeg all together in another bowl.
- Add flour mixture to sugar mixture alternating with sour cream. It will be somewhat stiff at end.
- Divide dough and roll out 1/4 inch thick on well floured surface.
- Cut with 2" cutter and place on greased cookie sheets.
- Sprinkle with sugar.
- Bake at 425°F for 8-10 minutes, or till lightly browned.Depending on the size of the cookie you may need to adjust the baking time. Also be sure and clean off the excess sugar after each batch or will burn onto sheet,and burn bottom of cookies with high heat baking.

- Sift together flour, soda, and salt.
- Combine in a large bowl the butter, sugar, egg, and flavoring. Beat for 2 minutes. Add aour cream and then the flour mizture gradually.
- Set oven 400 degrees to preheat.
- Roll on lightly floured surface to 1/4 inch thickness. Sprinkle with sugar and roll in lightly.
- Cut with floured cutters and place on cookie sheet. Bake for about 12 minutes until golden brown.
- Another way to make is too not sprinkle with sugar and put different colored frostings on top.
GREAT GRANDMA'S SOUR CREAM DROP COOKIES
This recipe was on a card tucked into my mom's recipe box; it's pretty similar to a number of variations that seem to be from the 1930s. A note said "flavor with whatever you like" and of all the flavors I played around with, I thought lemon zest balanced the sweet dough the best. These bake up into tender little cakes that make a great base for whoopie pies. Once baked, they freeze well (thaw for an hour or so on the counter to eat), but start losing their tenderness after more than one day at room temperature.

- Preheat the oven to 400 degrees F (200 degrees C). Line two rimmed baking sheets with parchment paper.
- Cream sugar, shortening, and butter together in the bowl of a stand mixer on medium-high speed until light and fluffy, about 1 minute.
- Mix in sour cream and lemon zest on low speed until no streaks of sour cream remain. Add eggs, one at a time, mixing on medium-low just until there are no streaks of yolk, and scraping down the sides of the bowl between additions. AWESOME SOUR CREAM SUGAR COOKIES WITH HOMEMADE ICING
This recipe was passed down through the generations from my Great Grandmother. It has been a tradition in our family to make them every Christmas and it becomes an all-day event where we make cookies all morning and decorate them all afternoon. The recipe is pretty simple and the most time-consuming part of the process is decorating, especially when you're in my family and it becomes an artistic competition!

- Sift together flour, baking soda, and salt in bowl and set aside.
- Cream butter sugar, egg and vanilla. Beat 2 minutes.
- Add sour cream and beat well.
- Add dry ingredient mix (flour, baking soda, and salt) and blend well.
- Roll on floured board to desired thickness. (1/4 inch thick will create thick cookies that will stay moist for up to two weeks).
- Cut into desired shapes with cookie cutters.
- Bake on greased cookie sheet at 325°F for 12 minutes.
- Allow cookies to cool completely before decorating.
- Pour bag of confectioner sugar into bowl.
- Whisk the 1 stick butter (melted), 1 tbsp almond extract, and 1/2 can evaporated milk in separate bowl until well mixed.
- Slowly blend into the powered sugar a bit at a time until the icing is a good consistency for decorating. Will not take the entire mixture.
- Pour icing into smaller bowls and use food coloring to make icing into different colors.
- Decorate with icing as desired.
- Use remaining butter, almond, evap.milk mixture to freshen up the icing as it hardens over time. Re-heat the mixture in the microwave before adding to the icing. Add to the icing a few drops at a time until the icing becomes spreadable again. You may have to add more food coloring to freshen up the color.
- Use sprinkles, candy, and a lot of imagination to decorate cookies.
- Lay decorated cookies on wax paper to dry, it will take icing about 2 hours to firm onto cookie but once dry you can store them in an airtight container.

- 1. Cream butter and brown sugar; add eggs, one at a time, beating well after each addition; add vanilla. 2. Sift dry indredients together and add alternating with sour cream to creamed mixture. 3. Drop by teaspoonfuls onto greased cookie sheet. 4. Bake at 350 for about 12 minutes. (I do 7 or 8). 5. Cool and frost. 6. Frost with Brown Butter Frosting. - Sift together the flour, baking powder, baking soda and salt; set aside. In a large bowl, cream together the shortening and sugar until smooth. NANA'S BUTTER COOKIES WITH MILK-JAM FILLING
The caramelized milk jam makes for a decadent little sandwich, but these cookies are amazingly good simply eaten on their own.

- Using an electric mixer on high speed, beat butter, powdered sugar, and vanilla in a medium bowl until light and fluffy, about 4 minutes. Reduce speed to low; add milk, salt, and 2 1/2 cups flour and mix just to combine. Form dough into a 1/2"-thick disk and wrap in plastic. Chill until firm, at least 1 hour.
- Let dough sit at room temperature to soften slightly, about 5 minutes. Roll dough out between 2 sheets of parchment paper until about 1/8" thick. Cut out rounds with a floured 2 1/2"-diameter cookie cutter. Cut out a circle in half of the rounds with a 3/4"-diameter cookie cutter and transfer to 2 parchment-lined baking sheets, spacing 1" apart.
- Whisk egg and 1 teaspoon water in a small bowl and brush tops of cookies with egg wash. Bake cookies, rotating halfway through, until golden brown, 12&endash;15 minutes. Transfer baking sheets to wire racks and let cookies cool.
- Combine milk, sugar, and baking soda in a large saucepan; scrape in vanilla seeds and add pod. Bring just to a boil over medium heat, stirring to dissolve sugar. Reduce heat and simmer, whisking occasionally, until mixture is reduced to about 1 1/4 cups (it will darken and separate, with little bits visible), 80&endash;90 minutes. Strain milk jam through a fine mesh sieve into a medium bowl and let cool.
- Spoon a small amount of milk jam onto flat side of a cookie without a hole and sandwich with a cookie with a hole. Repeat with remaining cookies and filling. Dust with powdered sugar, if desired.
