CREAMED SALMON ON BISCUITS



Creamed Salmon on Biscuits image

For those of you who are alittle older it is a dish served alot in the 40's and 50's. It is also a good way to get Omega 3 without paying for a salmon fillet. A quick meal.

Number Of Ingredients 10

2/3 cup chopped onion
2/3 cup chopped celery
1 tablespoon olive oil
3/4-1 cup frozen baby peas
1 tablespoon pimiento
1 can campbell cream of mushroom soup
3/4 cup milk
1 packet chicken of the sea salmon
salt and pepper
1 package refrigerated biscuit, of your choice

Steps:

  • In olive oil saute onions and celery until soft, in a 10 inch skillet.
  • Add soup that has been mixed with milk to skillet.
  • Add pimento, peas and pouch of salmon to mix, salt and pepper to taste and simmer for 15 minutes.
  • Bake biscuits as directed on package.
  • Serve biscuits and ladle salmon mix over them.
  • May use baked potatoes or toast instead of biscuits.
  • Serve with a salad.

1 cup frozen peas, thawed
1/4 cup 2% milk
1/4 cup mayonnaise
2 tablespoons finely chopped green pepper
1/4 teaspoon lemon-pepper seasoning
1 cup shredded cheddar cheese
TOPPING:
1 cup biscuit/baking mix
1/3 cup 2% milk
2 tablespoons mayonnaise

Steps:

  • In a large bowl, combine the salmon, peas, milk, mayonnaise, green pepper and lemon-pepper. Transfer to a greased 9-in. pie plate. Sprinkle with cheese. , Combine the biscuit mix, milk and mayonnaise just until moistened. Drop eight mounds onto salmon mixture. , Bake at 425° for 10-15 minutes or until bubbly and biscuits are golden brown.

1 (4.2-ounce) package Kedem Vanilla Tea Biscuits, crushed into small bits (not powdery, but smaller than big pieces)
3-pound side of salmon
Glicks Cooking Spray
2 tablespoons olive oil
3 tablespoons Dijon mustard
1 tablespoon Heaven & Earth Lemon Juice
2 tablespoons Manischewitz Honey
2 teaspoons kosher salt
2 tablespoons Haddar Teriyaki Sauce
fresh parsley, checked, finely chopped
1 lemon, juiced
flaky salt

Steps:

  • Preheat oven to 400 degrees Fahrenheit. and line a baking sheet with Gefen Parchment Paper. Set aside.
  • In a small bowl, combine olive oil, Dijon mustard, lemon juice, honey, and kosher salt. Set aside.
  • Place the side of salmon on the prepared baking sheet. Using a spoon, spread the honey-mustard mixture on top in a thin layer. Drizzle the teriyaki sauce over and fully coat with the crushed tea biscuits.
  • Coat the top of the salmon with cooking spray and bake uncovered in a preheated oven for 25 minutes. Remove from oven and garnish with desired toppings. Serve at room temperature.

⅓ cup all-purpose flour
½ teaspoon salt
ground black pepper to taste
1 ½ cups milk
1 (14.75 ounce) can salmon, drained and bones removed
1 cup drained canned diced tomatoes
¼ cup shredded Cheddar cheese
3 drops Worcestershire sauce
1 ¾ cups all-purpose flour
¼ cup shredded Cheddar cheese
4 teaspoons baking powder
1 teaspoon salt
⅓ cup shortening
1 cup milk

Steps:

  • Prepare casserole: Melt butter in a saucepan over medium heat. Add onions and cook until transparent, about 5 minutes. Whisk in flour, salt, and pepper and stir until the mixture becomes paste-like and light golden brown, about 5 minutes. Gradually whisk milk into the flour mixture, and bring to a simmer over medium heat. Cook and stir until the mixture has thickened, 5 to 10 minutes.
  • Stir in salmon, tomatoes, Cheddar cheese, and Worcestershire. Pour into a 2-quart casserole dish and set aside.
  • Preheat the oven to 450 degrees F (230 degrees C).
  • Prepare biscuits: Mix flour, Cheddar cheese, baking powder, and salt together in a bowl. Cut in shortening until mixture resembles fine crumbs. Make a well in the middle and pour in milk; stir quickly until combined. Drop large spoonfuls of biscuit batter around the edge of the casserole dish.
  • Bake in the preheated oven until biscuits are golden brown, about 20 minutes.

2 tablespoons light brown sugar
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
1/4 cup panko breadcrumbs
1/2 cup parsley leaves, chopped
2 tablespoons unsalted butter, melted
1 1/2 pounds skin-on salmon fillet, preferably center-cut
1 tablespoon Dijon

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil. Mix the brown sugar, paprika, garlic powder, cayenne pepper, 1 teaspoon kosher salt and a generous amount of freshly ground black pepper in a small bowl. Mix the panko with the parsley, butter, 1/4 teaspoon kosher salt and a few grinds of black pepper in another small bowl.
  • Place the salmon skin-side down on the prepared baking sheet and spread the surface with the Dijon. Press the brown sugar mixture all over the salmon then top with the breadcrumb mixture. Crimp all four sides of the foil to create a border around the salmon, this will help collect the juices so they don't spread and burn. Bake until the breadcrumbs are golden brown, and the salmon is firm and flakes easily when pressed, 15 to 18 minutes. Cut into four equal portions for serving.

2 cups all-purpose flour
1 tablespoon sugar
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup buttermilk
2 eggs
¼ cup butter, melted
2 tablespoons snipped fresh dill plus additional for serving
4 ounces smoked salmon (lox-style), divided
½ cup whipped cream cheese, softened

Steps:

  • Preheat oven to 400 degrees F. Line a muffin pan with twelve Reynolds® Foil Baking Cups; set aside. In a large bowl stir together flour, sugar, baking powder, baking soda, and salt. Make a well in the center of flour mixture; set aside.
  • Whisk together buttermilk, eggs, butter, and dill in a 2-cup measure. Add all at once to flour mixture. Gently stir just until moistened (batter should be lumpy). Chop 2 ounces of the smoked salmon. Gently fold in salmon.
  • Spoon batter into prepared muffin cups, filling each three-fourths full.
  • Bake for 15 minutes or until golden. Cool in cups on a wire rack for 5 minutes.
  • Split the muffins and spread split sides with cream cheese. Sandwich some of the remaining 2 ounces smoked salmon in between muffin halves. Garnish with additional fresh dill.

1 small sweet red pepper
1 salmon fillet (8 ounces)
1/2 cup finely chopped carrot
1 tablespoon chopped shallot
1 tablespoon canola oil
2 garlic cloves, minced
3 tablespoons all-purpose flour
1 can (14-1/2 ounces) chicken broth
2 cups 2% milk
1 teaspoon seafood seasoning
1/4 teaspoon Liquid Smoke, optional

Steps:

  • Broil red pepper 4 in. from the heat until skin blisters, about 5 minutes. With tongs, rotate pepper a quarter turn. Broil and rotate until all sides are blistered and blackened. Immediately place pepper in a bowl; cover and let stand for 15-20 minutes. Peel off and discard charred skin. Remove stems and seeds. Set roasted pepper aside., Broil salmon 4 in. from the heat for 8-12 minutes or until fish flakes easily with a fork. Break salmon into small pieces; set aside. , In a large saucepan, saute carrot and shallot in oil until tender. Add garlic; saute 1 minute longer. Stir in flour until blended. Gradually add broth. Bring to a boil; cook and stir for 1-2 minutes or until thickened. , Transfer to a blender; add roasted pepper. Cover and puree until smooth. Return to the pan.
