EASY GREEK CHICKEN
These Greek Chicken Bites are a wholesome and delicious way to prepare a chicken dinner super quick. They are loaded with flavor and taste great on their own, or in pitas, wraps, gyros or your favorite greek dish.

Steps:
- Cut the chicken breast into 1-2" chunks. Place them in an airtight container and add the greek seasoning, lemon juice, and 1 tbsp of olive oil. Mix to evenly coat chicken and let rest in the refrigerator for 15 minutes.
- Heat the remaining oil in a large skillet over high heat. Add the chicken spreading in a single layer. Let it cook without stirring for 3-5 minutes or until it gets a nice brown sear on the side touching the pan. Flip the chicken over and cook an additional 2-4 minutes or until the chicken is cooked through (165˚F internal temp.)
- Serve hot and enjoy!

- In a glass dish, mix the olive oil, garlic, rosemary, thyme, oregano, and lemon juice. Place the chicken pieces in the mixture, cover, and marinate in the refrigerator 8 hours or overnight.
- Preheat grill for high heat.
- Lightly oil the grill grate. Place chicken on the grill, and discard the marinade. Cook chicken pieces up to 15 minutes per side, until juices run clear. Smaller pieces will not take as long.

- Cut 3 slits in each chicken breast to allow marinade to penetrate. In a small bowl, whisk together olive oil, lemon juice, garlic, salt, pepper, and paprika for about 30 seconds. Place chicken in a large bowl, and pour marinade over. Using your hands, work marinade into chicken. Cover, and refrigerate overnight.
- Preheat grill for medium heat, and lightly oil grate.
- Cook chicken on grill until meat is no longer pink and juices run clear.

- In a large skillet, heat 2 teaspoons oil over medium heat. Add chicken; saute until no longer pink, 7-9 minutes. Remove and keep warm., In same skillet, heat remaining oil; add the next 6 ingredients. Cook and stir until onion is translucent, 2-3 minutes. Stir in garlic; cook 1 minute more. Add water; bring to a boil. Reduce heat; simmer, uncovered, until vegetables are tender, 3-4 minutes. Return chicken to skillet; add olives. GREEK-STYLE SEASONED CHICKEN
I just love this seasoning and so I tried it on chicken breast. I originally planed on putting it on the barbecue, but it was raining so hard outside that I pan fried it.

- Remove any fat from chicken breast and cut each breast into two strips.
- In a large zip lock bag, add oil, seasoning and garlic. Mix and put in chicken breast strips. Marinate for 1 hour.
- In a medium skillet, add butter and then add the marinated chicken to butter and cook (covered) for approx 20 minutes, turning once. Test chicken to see if done (180 degrees) Remove from pan and serve with a vegetable and rice. I would recommend a yogurt type sauce, but I didn't make one at this time. Greek Style Seasoning: Add all ingredients to a small blender and mix well. Put into a glass container with a lid.
GREEK STYLE BAKED CHICKEN
This is one of those quick tasty recipes which we enjoyed at a friends recently. It is very important that you do not overcook the chicken. I have also tried with with halibut and it tasted wonderful.

- Prehead oven to 400 degrees.
- Use a well greased baking dish just big enough to fit the chicken breasts.
- Sprinkle chicken with freshly ground black pepper and set aside.
- In a bowl, toss together tomatoes, bell pepper, parsley, oregano, garlic and feta.
- Spoon over chicken and drizzle with olive oil.
- Bake 25 - 30 minutes or until chicken is no longer pink.
- P.S. More seasoning can be added to suit individual tastes.
