15-Minute Broiled Salmon and Broccoli image

This easy sheet tray dinner comes together in a snap thanks to an oft-forgotten workhorse of the kitchen: the broiler. The high heat it provides perfectly chars pre-cut broccoli florets and cooks salmon quickly. The creamy Dijon sauce acts as a protective barrier against overcooking, and keeps the fish moist in the oven.

One 12-ounce bag broccoli florets
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 scallions
1 medium lemon
1/4 cup mayonnaise
2 tablespoons Dijon mustard
Four 6-ounce center-cut skinless salmon fillets

Steps:

  • Preheat the broiler and set a rack 2 inches from the heat.
  • On a large sheet tray lined with aluminum foil, toss the broccoli with the olive oil and a large pinch of salt and pepper. Spread the broccoli out into a singer layer. Broil the broccoli while you prepare the salmon.
  • Thinly slice the scallions and finely grate the lemon zest, then add them to a small bowl with the mayonnaise, Dijon mustard and a pinch of salt and pepper. Whisk to combine.
  • Remove the broccoli from the oven. (Parts of the broccoli should be lightly charred.) Use a spatula to stir the broccoli and move it to the outer edges of the baking sheet. Sprinkle each fillet all over with salt and pepper and place them in the center of the baking sheet. Divide the mayonnaise mixture on top of the fillets, spreading to cover. Broil, rotating the pan halfway through, until the sauce has turned deep golden brown and the salmon is opaque, about 5 minutes. Meanwhile, cut half of the zested lemon into wedges.
  • Divide the salmon, broccoli and lemon wedges among 4 plates and serve immediately.

4 (6-ounce) center cut salmon fillets, skin removed
1 lemon, zested and juiced
Kosher salt and freshly ground black pepper
4 tablespoons canola oil, divided
1 medium Vidalia onion, chopped
2 cloves garlic, minced
1 cup chopped shiitake mushrooms, stems discarded
2 teaspoons chopped fresh thyme leaves
4 cups washed, dried, and loosely packed fresh baby spinach
1/4 cup sour cream
2 frozen puff pastry sheets, defrosted
Chopped fresh parsley leaves, for garnish

Steps:

  • Preheat the oven to 375 degrees F.
  • Brush both sides of the salmon with 1 teaspoon lemon juice and sprinkle with salt and pepper, to taste. Set aside.
  • Warm 2 tablespoons oil in 2 separate skillets over medium-high heat. Add half of the onion and half the garlic to each pan. Season with salt and pepper, to taste, and saute until tender, about 5 minutes. Stir in the mushrooms and thyme into 1 pan and the spinach, lemon zest and remain lemon juice in the other pan. Stir the spinach until it wilts, then transfer it to a bowl and set aside. Saute the mushrooms until they are reduced and tender, about 5 minutes. Turn off the heat and stir in the sour cream. Set aside.
  • Trim the thinner ends of the salmon fillet so you have 4 pieces of even thickness. Unroll a pastry sheet on a lightly floured surface. Pass a rolling pin lightly over 2 or 3 times to seal the seams and lengthen slightly. Cut the pastry sheet into 3 equal strips, using the natural seams as a guide. Roll out the second puff pastry sheet to get 1 more strip. Save remaining puff pastry for another use. Lightly prick the 4 strips with a fork. Put 1 heaping spoonful of mushroom mixture on 1 half of each pastry, top with salmon, then layer with a heaping spoonful of spinach mixture. Wet the edges of the pastry with water and fold over the other half, pressing lightly and folding to seal the edges. Repeat with remaining pastry and filling. Cut 2 vents on the top of each pastry packet and arrange them on a parchment-lined baking sheet.
  • Bake until the pastry is golden and fish is just opaque in the center, about 25 to 30 minutes.
  • Transfer the pies from the oven to serving dishes and garnish with chopped parsley.

100g broccoli , cut into florets
85g watercress , chopped
4 tbsp half-fat crème fraîche
425g pack ready-rolled puff pastry sheets
1 egg , beaten
170g pack poached salmon fillets, flaked
steamed green beans , to serve

Steps:

  • Cook the broccoli in lots of boiling water until tender. Drain and rinse in cold water until cool. Drain well and set aside. In a mini chopper or food processor, blitz the watercress and crème fraîche with some seasoning.
  • Heat oven to 200C/180C fan/gas 6. Unroll the pastry sheets. Place one on a baking sheet. Cut out a 2cm-wide border from the second sheet, like a picture frame, and stick this onto the first sheet with some of the beaten egg. Prick the base all over with a fork. Bake for 10 mins until golden.
  • Cut remaining pastry into 2cm wide strips. Spread on the crème fraîche, scatter with the flaked salmon, broccoli and seasoning, and top with the strips of pastry to make a lattice.
  • Brush with beaten egg and cook for 20-25 mins until pastry is golden and cooked through and the filling is hot. Serve with green beans.

1 (9 inch) pastry for double-crust pie (top and bottom crust)
12 ounces salmon, cooked or canned
2/3 cup broccoli, chopped and cooked
2 eggs, hard-boiled and sliced thinly
1/3 cup celery, finely chopped
1/4 cup scallion, thinly sliced
1/2 teaspoon dried dill
1/8 teaspoon pepper
1 cup mayonnaise
1 cup swiss cheese, shredded and divided

Steps:

  • In a medium bowl mix celery, scallions, dill, pepper, mayo and 1/2 the swiss cheese. Set aside.
  • Bake bottom pastry only, at 425* for about 10 minutes or until just barely lightly browned. Reduce oven temp to 375*.
  • Flake half the salmon into lighlty browned pie shell. Layer the broccoli over the salmon then layer the sliced eggs over the broccoli. Pour 1/2 the mayo mixture over the eggs.
  • Top with remaining salmon, then remaining mayo mixture, then reserved swiss cheese.
  • Cover with top pastry and brush with egg wash. Bake at 375* for 30 minutes or until golden brown. This pie can be made ahead and frozen.

1 tablespoon butter
1-1/2 cups cooked wild rice
1 can (7-1/2 ounces) salmon, drained, bones and skin removed
1 large egg, beaten

1/2 cup grated Parmesan cheese
3 cups frozen chopped broccoli, thawed and drained
1-1/2 cups shredded cheddar cheese, divided

Steps:

  • In a large skillet, saute onion in butter until tender. Remove from the heat; stir in rice and salmon. 750g medium potato , cut into wedges
1 head broccoli , trimmed and broken into florets
200ml tub crème fraîche
2 tbsp wholegrain mustard
2 large or 4 small salmon fillets , cut into large pieces
handful grated parmesan

Steps:

  • Put the potato wedges into a shallow microwave-proof baking dish, then cook on High for 10 mins until almost tender all the way through (turn the wedges halfway through to ensure even cooking). Add the broccoli, re-cover and cook for another 3 mins or until the florets just give with a knife. If you don't have a microwave, boil instead.
  • Heat grill to medium. Mix the crème fraîche and mustard together with a little seasoning. Nestle the salmon in among the potatoes and broccoli, then spoon over the crème fraîche mix, making sure most of the broccoli is covered with sauce. Sprinkle with the cheese and grill for 5 mins until the sauce is bubbling, the tips of the potatoes are golden and the salmon is just cooked.

6 potatoes, peeled
1 small onion, minced
1 clove garlic, minced
1 tablespoon butter
1 (6 ounce) can red salmon, undrained
1 teaspoon dried thyme
1 cup milk
2 (9 inch) unbaked pie shells
1 to taste salt and pepper

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool and chop.
  • In a medium saucepan, cook onions, garlic and butter over medium heat until vegetables become transparent in color.
  • Add onion/garlic mixture, salmon and thyme to cooked potatoes. Mash all together with milk, adding just enough to bring about a mashed potato consistency. Spread evenly into pie shell.
  • Place second pie shell over top of salmon mixture. Cut slits into the upper shell, then pinch edges of both pie shells together. Bake on lower rack of oven for 45 minutes.

1/2 teaspoon ground nutmeg

  • Preheat oven to 400°. In a small skillet, melt butter over medium heat. Add green onions; cook and stir until crisp-tender, about 3 minutes. Remove from heat. 3/4 cup short-grain brown rice
1 1/2 cups water, spring water if you have it
1 teaspoon dark sesame oil
1/8 teaspoon sea salt
1/4 cup salad dressing, I like to use a Miso-Vinegerette
2 tablespoons Dijon mustard
1 cup white cheddar cheese, grated
1 (15 1/2 ounce) can salmon, drained and crumbled
1 (6 ounce) can water chestnuts, drained and chopped. You can also use dried chestnuts if you have them. Prepare them ahead of time
1 cup broccoli, chopped
2 eggs
2 teaspoons milk

Steps:

  • Preheat a 12" dutch oven to about 375 degrees. This is done over a light bed of coals with the lid loaded moderately, but evenly.
  • Place the water In another pot and bring to a boil. Lower the heat. Add the rice, cooking oil, and salt. Cover and simmer for 45 minutes, or until rice is cooked.
  • Mix the cooked rice, salad dressing, mustard, and cheese.
  • Press this mixture into the bottom and sides of a well oiled 9" pie pan.
  • Bake the crust in the dutch oven for 10 minutes. Be sure to place the pie pan on a trivet to allow the air to circulate and prevent burning on the bottom.
  • Remove the pie pan and set aside.
  • Make an even layer of the salmon in the pie crust.
  • Sprinkle the chopped water chestnuts and broccoli over the top of the salmon.
  • Wisk the eggs and milk together and pour over the top.
  • Place the pie pan bake in the oven.
  • Cover and bake for 40 minutes.
  • Remove and let cool for 15 minutes.
  • Slice and serve.
