THE BEST PHILLY CHEESESTEAK RECIPE
Steps:
- For the Sauce: Add all of the ingredients to a medium-size pot and cook over low heat stirring often until hot and thick. Keep warm.
- Add 1 ½ tablespoons of clarified butter to a large frying pan or flattop over medium-high heat and cook the onions until lightly browned and soft, about 10 minutes. Set to the side.
- Add the remaining 1 ½ tablespoons of clarified butter to the pan and add in the sliced steak.
- Cook for 2-4 minutes or until lightly browned and cooked throughout.
- Add ½ of the cooked onions to the top of the beef, season with salt and pepper and mix together until combined.
- To Serve: Add the sliced buns cut side down onto the other side of the pan or flat top to heat up and lightly toast.
- Evenly divide the sliced cooked steak between the lightly toasted buns and top off with the remaining caramelized onions and cheese sauce.
- Serve hot.

BAKED SALMON STEAK
Something I created myself when trying to figure out what to do with some salmon steaks, spinach, chives, and thyme ended up being very delicious. Serve with sweet potato fries and acorn squash or with your choice of sides.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8-inch baking dish with olive oil.
- Pour 1/4 cup olive oil in a shallow bowl and dip salmon steaks in oil to coat. Stir garlic salt, onion salt, paprika, black pepper, and salt together in a small bowl; sprinkle seasoning onto salmon. Place salmon steaks into the prepared baking dish and sprinkle with chives, thyme, and spinach leaves. Sprinkle Parmesan cheese over the fish and seasonings.
- Bake in the preheated oven until the salmon is cooked through and the flesh flakes easily, about 45 minutes.

SALMON CHEESESTEAK
Steps:
- Preheat the oven to 425° F.
- Place the sliced peppers, onions, and mushrooms on a sheet pan covered in foil or parchment paper for easier cleanup. Place the salmon on the sheet pan, skin side down. Drizzle everything with olive oil and season with your favorite steak seasoning.
- Roast in the oven for 15 - 18 minutes, turning the veggies once during the roasting process.
- Meanwhile, slice the hoagie rolls in half, butter the inside generously, and place the buttered side down on a separate sheet pan. Place the rolls in the oven when there are just a few minutes left for the salmon (12-minute mark) and toast the rolls for 2-3 minutes until golden brown. Remove the rolls from the oven and turn over so the buttered, toasted side is facing up. Place 2 slices of provolone cheese on the bread and place back in the oven for another minute or so until the cheese is melted.
- Remove the salmon, veggies, and cheese bread from the oven. Flake the salmon with a fork. Place the salmon onto the cheesy bread, then top with the roasted peppers, mushrooms, and onions.
