Moist, delicious, almost fool-proof salmon. This salmon is wrapped in parchment paper and steamed in the oven. No fishy taste in your mouth, no fishy smell in your house. Just a delicious meal.

4 (4 ounce) salmon fillets
1 lemon, juice only
salt and ground black pepper to taste
4 12x18-inch pieces of parchment paper
1 lemon, thinly sliced
½ cup green onions, chopped
8 spears fresh asparagus, cut into 1-1/2 inch pieces
4 teaspoons olive oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Rinse salmon fillets in cold water, place onto a plate, and squeeze a lemon over the salmon. Sprinkle fillets with salt and black pepper.
  • Fold a piece of parchment paper in half crosswise, and center a salmon fillet on one side of the paper. Place 1 or 2 lemon slices on top of the salmon, and surround with 2 cut-up asparagus spears. Sprinkle 2 tablespoons of green onion over the lemon slices, and fold the parchment paper over the salmon. Fold the edges of the paper over several times, all around the open edges, to seal the salmon into a parchment paper envelope. (Do not tape the parchment paper closed.) Place the sealed envelopes onto a baking sheet, and brush the tops of each packet with about 1 teaspoon of olive oil.
  • Bake in the preheated oven until the asparagus is tender and the salmon is opaque and slightly flaky, 20 to 25 minutes. To serve, place a packet onto a plate, and cut open the paper to release the aroma.

Fold a fillet into a cut piece of parchment, and then layer it with seasonings or perhaps vegetables or citrus fruit. Then simply bake the packets until done. The steam created by the parchment produces reliably moist salmon, and opening the individual packets at the table makes for a fun way to start dinner.

4 (6- to 8-ounce) skin-on salmon fillets
Cut vegetables, fresh herbs and/or slices of lemon, lime or orange

Steps:

  • Heat the oven to 400 degrees. Cut 4 large heart-shaped pieces of parchment paper or foil, and place them on a sheet pan. Fold the parchment or foil in half down the middle, place a fillet with its garnishes and seasonings on one side of each, fold the other side over and crimp the rounded edge tightly closed.

Parchment paper or heavy-duty foil
2 teaspoons olive oil
2 medium potatoes, thinly sliced
1/2 teaspoon salt
1/4 teaspoon pepper
1 lb. salmon fillets, cut into 4 pieces
1 cup julienne-cut (2x1/8x1/8-inch) carrots
2 medium tomatoes, seeded, diced
8 sprigs of fresh herbs (such as dill, oregano or basil)

Steps:

  • Heat oven to 400°F. Cut four 15-inch rounds of parchment paper. Fold each in half; unfold. Lightly brush 1/2 teaspoon oil onto each parchment round to within 1 inch of edge.
  • Arrange potato slices evenly on half of each parchment round. Sprinkle with half of the salt and pepper. Top each with salmon; sprinkle with remaining salt and pepper. Top each with carrots, tomatoes and 2 herb sprigs.
  • To seal each packet, fold untopped side of parchment round over topped side. Fold open edge over several times, folding and twisting until packet is completely sealed. Place packets on ungreased cookie sheet.
  • Bake at 400°F. for 15 to 20 minutes, depending on thickness of fillets. Carefully unwrap 1 packet to check if fish flakes easily with fork; re-wrap and continue baking if not done.
  • Remove packets from oven; let stand 5 minutes before serving. Place packets on individual serving plates. Cut X-shaped slit in top of each packet; carefully tear back paper to serve.

3 tablespoons unsalted butter
1/2 pound Shiitake or Portobello mushrooms, cut julienne
3 shallots, peeled, sliced
1 teaspoon coarse salt
1/2 teaspoon finely ground black pepper
1 small chayote, seeded, cut julienne
1/4 cup dry white wine
3 sprigs epasote, leaves roughly chopped
1/2 lemon, juiced

Steps:

  • Preheat oven to 375 degrees. Cut out 4 heart shapes from parchment or foil, each 14 inches wide by 9 inches long. Lightly butter foil, if using. Place seasoned salmon on 1 side of parchment or foil. Heat medium skillet on medium high heat. Add butter and melt. Add mushrooms and saute until slightly golden. Add shallots, salt and pepper. Cook 2 minutes. Add chayote and wine. Cook until almost dry. Add epasote and lemon juice. Cool. Divide mixture between salmon fillets, mounding slightly. Fold second half of parchment over salmon, enclosing completely. Fold edges over to secure tightly.
  • Place parchment packages on baking sheet. Bake until packets are puffed and salmon is cooked through, about 10 minutes.

2 (13-inch) parchment paper sheets
salt and ground black pepper to taste
1 tablespoon salted butter, melted
2 sprigs fresh oregano
1 lemon, sliced

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Place each salmon fillet in the center of a parchment paper sheet. Season with salt and pepper and drizzle with melted butter. Arrange oregano and lemon slices down the length of each fillet.

2 garlic cloves, thinly sliced
1 red chili pepper, deseeded and finely chopped
1 large shallot, thinly sliced
1 carrot, peeled and cut into thin matchsticks
8 sugar snap peas, halved lengthways
8 stalks sprouting purple broccoli
8 green olives
1 tablespoon chopped flat leaf parsley
2 salmon fillets
12 new potatoes
6 fennel seeds, crushed
dill, finely chopped, to serve

Steps:

  • For the salmon en papillote:
  • Preheat the oven to 375°F
  • Cut 2 pieces of greaseproof paper, measuring about 9in square. Drizzle with olive oil.
  • Sprinkle over the garlic, chili and shallot and arrange the vegetables and salmon fillets on top. Season with salt and pepper. Wrap up the paper to form parcels, folding the edges to seal. Place on a baking sheet and bake for 10-15 minutes. Meanwhile cook the potatoes.
  • For the crushed new potatoes:
  • Boil the potatoes until they are just cooked (but not soft). Mash roughly with the back of a fork and place on a lightly oiled baking tray. Sprinkle with the crushed fennel seeds.
  • Turn up the oven to its highest setting and roast the potatoes until crisp and golden. Sprinkle with dill and serve with the parcels of salmon.

2 tbsp light soy sauce
1 tbsp rice wine vinegar
thumb-sized piece of ginger , finely grated
1 garlic clove , finely grated
2 skinless salmon fillets (about 140g each)
1 courgette , ends trimmed and spiralized into thin noodles
1 carrot , peeled, ends trimmed and spiralized into thin noodles
2 bulbs of pak choi (about 200g), leaves separated
1 red chilli , thinly sliced, deseeded if you like
Thai jasmine rice , to serve (optional)

Steps:

  • Heat oven to 180C/160C fan/gas 4. Before you prep the veg mix together the soy, vinegar, ginger, garlic and some black pepper in a bowl. Add the salmon fillets, cover and leave to marinate for 10 mins at room temperature or up to 2 hrs in the fridge.
  • Tear two large sheets of baking parchment, big enough to encase the fish and vegetables in and put onto a baking tray.
  • Divide the vegetables between the centre of the paper and top each with a marinated salmon fillet and the sliced chilli. Bring the sides of the parchment up over the salmon and pour half of the remaining marinade over each fillet then scrunch the paper tightly together to seal the fish in a parcel.
  • Roast for 20-25 mins, until the salmon is just cooked through and flakes into large pieces. Serve the fish in the parcel with some rice, if you like.
