Coconut Flour Salmon Cakes Gluten Free SCD PALEO image

So eloquent and redic delic as an appetizer, snack quick grab from the fridge, or as entree for family and guests at holiday celebrations. Great tradition on meatless Good Friday! They are especially wonderful at the end of the night, with a glass of red wine (truly [an anti-inflammatory see here),|https://www.ncbi.nlm.nih.gov/pmc/articles/PMC2777480/] and candle light. Hitting your body with many safety signals FEELS and TASTES so great! The best: this recipe is way better than traditional restaurant versions which have filler ingredients like breadcrumbs, mayonnaise, and Worcestershire. Using coconut flour and eggs as binder, they hold their shape beautifully! Enjoy!

Coconut Flour Salmon Cakes:
2-6 oz cans of Wild Planet Sustainable Caught Wild Alaska Pink Salmon
2 eggs, beaten
1/4 c chopped red onion
1-2 cloves garlic finely chopped
1 tsp Savory Spice Blend (see below)
2 tsp SCD Delicious Homemade Dijon Mustard (find the recipe posted here or see my Pinterest Condiment board)
1-2 tsp coconut flour
coconut oil for frying
Savory Spice Blend. Tip: Make it in bulk to have on hand. I use it in many recipes!
1/2 Tbsp each sage, rosemary, sea salt, paprika
1 Tbsp each garlic granules and onion granules
1 tsp black pepper

Steps:

  • Drain the salmon.
  • Combine all ingredients except coconut flour & coconut oil.
  • If the mixture is runny, sift coconut flour on top and mix well.
  • Heat enough coconut oil to create ~ 1/8" layer on the bottom of a cast iron skillet.
  • Using a 1/4 cup measuring cup, scoop up and drop 3 or 4 spoonfuls of batter onto the hot skillet; flatten slightly. Here's my big tip: Don't crowd the salmon cakes! Leave room between them and they will brown beautifully!
  • Saute or fry until a gorgeous golden crust forms; flip and repeat.

1/3 cup finely chopped onion
1 large egg, beaten
5 saltines, crushed
1/2 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/8 teaspoon pepper
1 can (14-3/4 ounces) salmon, drained, bones and skin removed
2 teaspoons butter

Steps:

  • In a large bowl, combine the first 6 ingredients. Crumble salmon over mixture and mix well. Shape into 6 patties. , In a large skillet over medium heat, fry patties in butter for 3-4 minutes on each side or until set and golden brown.

1 (14.75 ounce) can salmon, drained and flaked
1 (7.5 ounce) can salmon, drained and flaked
1 (4 ounce) packet saltine crackers, crushed
2 eggs, beaten
2 tablespoons mayonnaise
1 ½ teaspoons Worcestershire sauce
1 ½ teaspoons fresh lemon juice
1 teaspoon red pepper flakes
1 teaspoon dry mustard
2 tablespoons vegetable oil, or as needed

Steps:

  • Mix both amounts of salmon, crushed crackers, eggs, mayonnaise, Worcestershire sauce, lemon juice, red pepper flakes, and dry mustard together in a bowl. Chill in refrigerator to allow flavors to combine, 30 minutes. Form mixture into 6 patties.
  • Heat vegetable oil in a skillet over medium heat; fry the salmon patties until golden brown, about 4 minutes per side.

1 cup bread, crumbs fine (Scd legal)
1/2 cup chopped onion
1/4 cup chopped parsley
2 eggs, beaten
2 tablespoons lemon juice
1/8 teaspoon pepper

lemon wedge

Steps:

  • Drain salmon, reserving 1/3 cup liquid; flake. In medium bowl, combine salmon, scd bread crumbs, onion, and parsley.
  • Add reserved salmon liquid, eggs, lemon juice, and pepper; mix well.
  • Shape into 6 patties. In skillet, fry salmon patties in olive oil over medium heat until lightly browned on both sides.

1 egg
¼ cup chopped onion
½ cup seasoned dry bread crumbs
1 tablespoon olive oil

Steps:

  • Drain and reserve liquid from salmon. Mix egg, onion, bread crumbs and salmon together.
  • Make into patties. If mixture is too dry to form into patties, add reserved liquid from salmon.
  • In a frying pan, heat olive oil. Place patties in pan. Brown on each side, turning gently. Drain on paper towels and serve.
