BACON-SEARED SALMON

I found this recipe in a Fine Cooking magazine and it was suprizingly easy to make and my family now thinks I'm a real chef. And I have to add who doesn't love bacon.

1/4 cup balsamic vinegar
1 tablespoon honey
1/2 teaspoon fresh rosemary, finely chopped
1 tablespoon water
2 slices bacon
4 salmon fillets, 6-oz skin-on, scaled, center cut
1/2 teaspoon salt & freshly ground black pepper

Steps:

  • In a liquid measuring cup, combine the balsamic vinegar, honey, rosemary, and 2 tbs water.
  • Cut the bacon slices in half.
  • Lay a slice of bacon on the flesh side of each piece of salmon and arrangle he salmon, bacon side down, in a 12 inch heavy-duty nonstick skillet.
  • Sprinkle the salmon skin with salt and pepper.
  • Set the skillet over medium-high heat and cook until the bacon is glden and crisp about 4 to 5 minutes from when it begins to sizzle.
  • Turn the salmon and continue to cook until the skin is crisp and the salmon is cooked through, 4 to 5 minutes.
  • Take skillet off heat and transfer the salmon to a platter.
  • Pour off the fat and return to medium-high heat.
  • Stir the vinegar mixture well and add it to the skillet.
  • Simmer until slightly thickened, 1 to 2 minutes. Pour over salmon and serve.

½ cup olive oil
¼ cup balsamic vinegar
4 cloves garlic, pressed
4 (3 ounce) fillets salmon
1 tablespoon chopped fresh cilantro
1 tablespoon chopped fresh basil
1 ½ teaspoons garlic salt

Steps:

  • Mix together the olive oil and balsamic vinegar in a small bowl. Arrange the salmon fillets in a shallow baking dish. Rub garlic onto the fillets, then pour the vinegar and oil over them, turning once to coat. Season with cilantro, basil, and garlic salt. Set aside to marinate for 10 minutes.
  • Preheat your oven's broiler.
  • Place the salmon about 6 inches from the heat source, and broil for 15 minutes, turning once, or until browned on both sides and easily flaked with a fork. Brush occasionally with the sauce from the pan.

1/4 cup balsamic vinegar
1/4 cup water
1 1/2 tablespoons fresh lemon juice
1 tablespoon brown sugar, packed plus
1 teaspoon brown sugar, packed
4 salmon fillets, skin on (center cut)
salt & freshly ground black pepper
2 teaspoons olive oil

Steps:

  • Stir together balsamic vinegar, water, lemon juice, and brown sugar in a small bowl.
  • Pat salmon dry and season with salt and pepper.
  • Heat oil in a 12-inch nonstick skillet over medium high heat, not smoking. Increase heat to high, add salmon skin side up, and sear until well browned, about 4 minutes.
  • Turn fish over and sear until just cooked through, 3 to 4 minutes more.
  • Transfer salmon to plates and carefully add vinegar mixture to skillet (liquid will bubble vigorously and steam).
  • Simmer, stirring, until thickened and reduced to about 1/3 cup, about 2 minutes.
  • Spoon glaze over salmon.
  • Serve and enjoy!

1/4 cup balsamic vinegar
1/4 cup water
2 tablespoons fresh lemon juice
1 tablespoon packed dark brown sugar
1 teaspoon packed dark brown sugar
4 (6 ounce) salmon fillets, with skin
salt & freshly ground black pepper
2 teaspoons canola oil (or vegetable oil)

Steps:

  • Stir together vinegar, water, lemon juice and brown sugar in a small bowl.
  • Pat salmon dry and season with salt and pepper.
  • Heat oil in a 12" nonstick skillet over moderately high heat but not smoking.
  • Increase heat to high, add salmon skin side up, and sear until well browned (about 4 minutes).
  • Turn fish over and sear until just cooked through (3 to 4 minutes more).

My husband found this recipe somewhere online a while ago and it has become my absolute favorite salmon dish. Tip: salmon should be no thicker than 1"and sliced into 2" wide pieces. Pepper measurements are approximate.

1 tablespoon olive oil or 1 tablespoon canola oil
1 1/2 lbs salmon
1 teaspoon fresh ground pepper
1/3 cup balsamic vinegar
1 tablespoon Dijon mustard

Steps:

  • Dust salmon with freshly ground pepper, flesh side up.
  • Heat oil in the pan on high heat until oil gets a little smoky.
  • Starting with pepper-side down, sear 3 minutes each side.
  • Remove salmon from pan and reduce heat to medium.
  • Immediately place balsamic vinegar in pan, where it will reduce quickly.
  • Add Dijon and mix until well blended.
  • Starting with pepper-side down, place salmon into glaze, coating both sides completely and turn fire off.
