This is a simple recipe for salmon fillet or salmon steak. With just a hint of seasoning, you can bring out the delicious taste of the salmon. Serve with tartar sauce and lemon.

1 pound salmon fillets or steaks
¼ teaspoon salt
½ teaspoon ground black pepper
1 teaspoon onion powder
1 teaspoon dried dill weed
2 tablespoons butter

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Rinse salmon, and arrange in a 9x13 inch baking dish. Sprinkle salt, pepper, onion powder, and dill over the fish. Place pieces of butter evenly over the fish.
  • Bake in preheated oven for 20 to 25 minutes. Salmon is done when it flakes easily with a fork.

Number Of Ingredients 19

1 sheet prepared frozen puff pastry dough (recommended: DuFour)
1 egg
2 (6-ounce) skinless salmon fillets
Kosher salt and freshly ground black pepper
About 1/3 bottle (1 1/2 cups) dry white wine
1 fresh bay leaf
3 to 4 slices lemon
1 tablespoon extra-virgin olive oil
1 sweet onion, chopped
3 to 4 small ribs celery, chopped
1 large Idaho potato, chopped
1 tablespoon crab boil seasoning (recommended: Old Bay)
2 cups chicken stock
1 cup heavy cream
2 tablespoons butter
2 tablespoons all-purpose flour
1 tablespoon Dijon mustard
1/2 cup frozen peas, optional
1/4 cup chopped fresh dill

Steps:

  • Preheat the oven to 425 degrees F.
  • Choose 4 bowls or shallow small casseroles to serve in and use one of them as a template to cut out 4 pastry pieces the size and shape of your serving dishes. Use a sharp paring knife to work around your dish. Arrange the pastry on a nonstick baking sheet or on a parchment paper-lined baking sheet. Beat the egg with a splash of water and brush the dough with egg wash. Bake for 10 to 12 minutes, or until deeply golden and puffed.
  • Meanwhile, season the fish with a little salt and pepper. Place the salmon in a small skillet with the wine, just enough to come up to the top of the fillets. Add the bay leaf and lemon slices. Bring the fish to gentle boil, lower the heat, and then simmer for about 8 to 10 minutes, or until opaque.
  • While the fish poaches, in a medium Dutch oven over medium-high heat, heat the extra-virgin olive oil. Add the onion, celery, and potatoes. Season with salt, pepper, and crab boil seasoning. Cover and sweat the vegetables for 8 minutes, stirring occasionally.
  • Turn off the heat under the salmon. Remove the salmon to a dish and flake it up. Strain the broth and reserve about 1 to 1 1/2 cups.
  • Add the chicken stock, reserved fish stock, and cream to the vegetables. While it comes to a boil, make a roux in small skillet. Melt the butter, and then whisk in the flour. Add the stock and whisk for 1 minute. Stir in the Dijon. Add the roux to the soup and cook for about 3 to 4 minutes to thicken the chowder to the consistency of loose gravy.
  • Add in the peas, flaked salmon, and dill and heat through. Serve in individual dishes topped with pastry tops.

What could be more Irish than salmon and cabbage and bacon. Recipe from Michael Shlow. Add diced potatoes to the cabbage and you have a complete Irish meal that's a far cry from corned beef and cabbage.

1 head savoy cabbage (3/4 head regular green cabbage can be substituted)
6 slices bacon, cut into 6 to 8 pieces each
1 onion, cut into small dice
1 cup water (plus additional if needed)
24 ounces salmon fillets, skin removed
1 teaspoon chopped fresh dill (plus additional for garnish)
4 tablespoons extra virgin olive oil (plus additional for drizzling over finished dish)
4 teaspoons butter
1 lemon, juice of
salt and pepper

Steps:

  • Halve the cabbage lengthwise, cut out the core, then remove the leaves and slice them into 2-1/2-inch squares.
  • Preheat the oven to 250°F.
  • Place the bacon in a medium sauce pot over medium heat. Render the bacon until cooked but not crispy.
  • You should have approximately 2 ounces (4 tablespoons) fat; if you have more, discard the excess.
  • Add the onion and sauté for 1 minute.
  • Add the cabbage and water and let simmer uncovered until the cabbage is tender, about 15 minutes.
  • If all the water evaporates during cooking, add more as needed until the cabbage is very tender.
  • Meanwhile, place the salmon fillets on a nonstick sheet pan.
  • Drizzle 1 tablespoon of the olive oil over each fillet.
  • Season with salt, pepper, and half the dill. Top each fillet with a teaspoon of butter and place in the oven.
  • Cook 15 to 18 minutes for medium rare, 21 to 24 minutes for medium (depending on the thickness of the fish), and if you cook it any longer than that, I can't be held responsible.
  • When the cabbage is meltingly soft and tender, season with salt, pepper, and the rest of the dill.
  • Keep warm while the salmon finishes cooking.
  • Remove the salmon from the oven and drizzle with the lemon juice.
  • To serve:.
  • Divide the cabbage between four dinner plates, top with the salmon fillets, and drizzle a little more olive oil over the fish.
  • Season with freshly ground pepper, sprinkled on and around the fish.
  • Garnish with additional fresh dill, if desired, and serve.

1 tablespoon fennel seeds
1 tablespoon coriander seeds
1 1/2 teaspoons whole black peppercorns
2 tablespoons fresh tarragon, coarsely chopped
2 tablespoons fresh dill, coarsely chopped
Grated zest of one orange
Grated zest of one lemon
1 tablespoon kosher salt
1 teaspoon sugar
4 7-ounce salmon fillets, as thick as possible, preferably with skin
1 tablespoon unsalted butter, or to taste
1/3 cup thinly sliced onion
3/4 cup chicken or vegetable stock
1/2 teaspoon ground cardamom
1 small head savoy cabbage, quartered, cored and thinly sliced
Salt and freshly ground white pepper
1/2 cup plain yogurt
2 tablespoons Dijon mustard
1 tablespoon canola oil

Steps:

  • Grind fennel seeds, coriander seeds and peppercorns together and mix with tarragon, dill, orange and lemon zest, kosher salt and sugar. Reserve one tablespoon of this mixture.
  • Place each salmon fillet on a piece of plastic wrap, sprinkle each fillet on all but skin side with spice mixture, wrap each tightly, place on plate and refrigerate for four hours.
  • About an hour before serving time, melt butter in heavy 3- or 4-quart saucepan. Add onion and 2 tablespoons of stock. Cook over medium heat until onion is tender; then, stir in cardamom. Add cabbage and remaining stock, and season to taste with salt and pepper. Cook, stirring from time to time, until cabbage is tender, 15 to 20 minutes. Remove from heat and set aside in warm place. Add more butter if desired.
  • Mix yogurt and mustard together, and stir in reserved spice mixture. Set aside at room temperature.
  • Preheat oven to 475 degrees. Remove fish from plastic wrap, and gently scrape off the spice mixture.
  • Heat oil in heavy ovenproof skillet large enough to hold fish. Use two skillets if necessary. Place fish in pan or pans, skin side up, and sear for one minute. Turn fish over and place in oven in pan or pans and roast 4 to 6 minutes. The salmon should be barely done in the center.
  • Gently reheat cabbage.
  • Remove salmon from pan and remove the skin with sharp knife.
  • Spoon mound of cabbage on each of 4 warm dinner plates. Place a salmon fillet on top of cabbage. Spoon a ribbon of sauce on each plate and serve with mashed potatoes.

1 pound carrots, peeled and cut into fine julienne

Steps:

  • In a kettle of boiling water blanch the cabbage for 1 minute, transfer it with tongs to a work surface, and let cool until it can just be handled. Cut the outermost cabbage leaf free at the core remove the leaf gently in one piece, being careful not to tear it, and remove 3 more leaves in the same manner. Arrange a leaf on each of 4 plates. Cut enough of the remaining cabbage into 1/8-inch-thick shreds to measure 2 cups packed loosely, reserving the rest for another use. In a steamer set over boiling water arrange in order the carrots, the turnips, the parsnips, and the shredded cabbage, steam the vegetables, covered, for 8 to 10 minutes, or until they are just tender, and in a heated bowl toss them with the butter, the vinegar, the minced dill, and salt and pepper to taste. Mound the vegetable mixture in the cabbage leaves and garnish it with the dill sprigs.

1 head savoy cabbage, halved, cored, and roughly chopped
6 slices bacon
1 onion, diced
1 cup water
4 salmon fillets, 4-6 ounces each, skin removed
1 teaspoon chopped fresh dill, plus more for garnish
4 tablespoons olive oil
2 tablespoons butter
1 lemon, juice of
salt, to taste
black pepper, to taste

Steps:

  • Preheat oven to 250°F In medium saucepan, place bacon and heat over medium. Cook, stirring occasionally, until fat is rendered from bacon and bacon is beginning to crisp. Add onion and cook for an additional minute, then add cabbage and water. Bring to a boil, then simmer until cabbage is tender, 20-25 minutes, adding more liquid if necessary. Once very tender, season with salt, pepper, and half the dill.
  • In the meantime, season salmon fillets with salt and pepper and place salmon on non-stick sheet pan. Drizzle olive oil over fillets, top with half the dill, and finish with small knob of butter. Cook 15-18 minutes for medium rare, or up to 25 minutes for medium, depending on thickness of fish. Remove from oven and drizzle with lemon juice.
  • Divide cabbage and salmon among plates and garnish with more fill, if desired. Serve immediately.
