Fresh jalapeños give this quick and easy roasted salmon dish its kick; honey and balsamic vinegar give it a sweet finish. A nutty-tasting wild rice pilaf completes this healthy dinner that comes together in just 30 minutes.

5 skinless salmon fillets, fresh or frozen (1 1/4 lbs.)
2 tablespoons balsamic vinegar
1 tablespoon honey
¼ teaspoon salt
⅛ teaspoon ground pepper
1 cup chopped red and/or yellow bell pepper
½ to 1 small jalapeño pepper, seeded and finely chopped
2 scallions (green parts only), thinly sliced
¼ cup chopped fresh Italian parsley
2 2/3 cups Wild Rice Pilaf (see Associated Recipes)

Steps:

  • Thaw salmon, if frozen. Preheat oven to 425 degrees F. Line a 15-by-10-inch baking pan with parchment paper. Place the salmon in the prepared pan. Whisk vinegar and honey in a small bowl; drizzle half of the mixture over the salmon. Sprinkle with salt and pepper.
  • Roast the salmon until the thickest part flakes easily, about 15 minutes. Drizzle with the remaining vinegar mixture.
  • Coat a 10-inch nonstick skillet with cooking spray; heat over medium heat. Add bell pepper and jalapeño; cook, stirring frequently, just until tender, 3 to 5 minutes. Remove from heat. Stir in scallion greens.
  • Top 4 of the salmon fillets with the pepper mixture and parsley. Serve with pilaf. (Refrigerate the remaining salmon for another use, see Note.)

For the rice:
1/3 cup wild rice
2 Tbsp. butter
1/2 medium onion, chopped
1/2 cup long grain white rice
1-1/4 cups chicken or vegetable stock
1 tsp. minced fresh thyme
1/3 cup pecan pieces
1/3 cup dried cranberries
For the fish:
4 (5 oz.) salmon fillets
1/3 cup orange juice
2 Tbsp. melted butter
Salt and white pepper to taste
1 tsp. minced fresh thyme

Steps:

  • Place the wild rice in a small pot with 1-1/2 cups of water and boil until firm-tender, about 20 minutes. Drain well and set aside. Preheat the oven to 425 degrees F. Melt the butter for the rice in a medium-sized pot set over medium heat. Add the onion and cook until tender, about 5 minutes. Add the white rice, stock, thyme, pecans, cranberries and reserved wild rice. Bring to a boil and then cover, reduce the heat to its lowest and cook until the white rice is tender, about 15 to 20 minutes. Meanwhile, place the salmon in a non-stick or parchment paper-lined baking dish. Drizzle with the orange juice and butter; sprinkle with the salt, pepper and thyme. Bake for 12 to 15 minutes, or until cooked through.Spoon the rice onto four dinner plates. Set the salmon on top of the rice, spoon the fish's pan juices over top, and serve.

This dish will highlight the magnificant flavor and texture of our salmon with onion and shitake mushroom wild rice pilaf wrapped up in golden puff pastry. Serve with a rich, creamy dijon tarragon sauce. A little time consuming but worth every minute. Wow your guests!

1/2 cup long grain white rice
1/2 cup wild rice
1 bay leaf
1 cup low sodium chicken broth
1/2 cup minced fresh onion
2 tablespoons butter
2 tablespoons fresh lemon juice
6 ounces fresh shiitake mushrooms, chopped
2 sheets frozen puff pastry
1 1/2 lbs king salmon fillets, skinless cut into 4 serving portions
1 egg, beaten with
1 teaspoon water
2/3 cup bottled clam juice
1 1/4 cups whipping cream
3 tablespoons fresh tarragon, minced
1 tablespoon Dijon mustard

Steps:

  • Boil wild rice and bay leaf in water for 45 minutes. Drain.
  • Meanwhile, Melt butter in pan, saute mushrooms and onions until onions are soft and mushrooms release juices.
  • Add white rice and saute about 2 more minutes.
  • Add chicken broth and lemon juice, bring to boil.
  • Reduce heat to low, cover and simmer 20 minutes.
  • Mix drained wild rice with cooked rice pilaf and cool.
  • Butter large baking sheet.
  • Roll out each sheet of pastry to 12" square.
  • Cut each sheet into 4 squares.
  • Mound rice evenly onto 4 squares.
  • Top each rice mound with salmon.
  • Fold up and seal the corners of each filled square (the edges will not cover salmon).
  • Place the remaining 4 squares on top of each of the 4 filled squares. Tuck corners under and pinch seams together.
  • Save any remaining rice for another use.
  • Cover and chill for 30 minutes.
  • Brush with egg mixture and bake at 400 for 30 minutes.
  • Serve with sauce.
  • This makes 4 large servings. For smaller servings, cut the fish into 8 portions and fill each of 8 squares with rice and salmon. Pull up corners of each square and pinch the seams, completely enclosing and sealing the filling. Bake for only 20 minutes.
  • For Sauce:.
  • Combine whipping cream and bottled clam juice. Boil and reduce until thickend appx. 20 minutes.

1/2 cup chopped yellow onion
Kosher salt
2 cups pure wild rice (10 to 12 ounces)

Steps:

  • Melt 2 tablespoons of the butter in a medium saucepan, add the onion, and cook over low heat for 5 to 10 minutes, until translucent. Add 5 cups of water, 2 teaspoons of salt, and the wild rice. Bring to a boil, reduce the heat to very low, and simmer, covered, for 50 minutes to 1 hour, until the rice is tender. Drain well.

4 pieces of purchased puff pastry, each cut to be just larger than a piece of salmon
4 (4 to 6-ounce) pieces salmon
1/4 cup sliced almonds
1/4 cup purchased pesto
2 tomatoes, sliced

Steps:

  • Preheat the oven to 400 degrees F.
  • On a foil-lined baking sheet, place the 4 pieces of puff pastry. Also place the 4 pieces of salmon, being careful to make sure they are not touching. Sprinkle each piece of salmon with 1 tablespoon of the sliced almonds. Bake for 10 minutes.

1 1/4 cups crème fraîche or whipping cream
3 tablespoons minced fresh dill

Steps:

  • For salmon, rice, pastry:
  • Bring medium saucepan of salted water to boil. Add rice; boil uncovered until just tender, about 18 minutes. Drain.
  • Melt butter in heavy medium skillet over medium-low heat. Add leek; sauté until beginning to soften, about 4 minutes. Add mushrooms.   • For dill sauce:
  • Combine clam juice and wine in heavy small nonaluminum saucepan. Boil until reduced to 1/3 cup, about 9 minutes. Reduce heat to medium. Whisk in creème fraîche. Boil until reduced to 1 cup, about 5 minutes. Remove from heat. Stir in dill. Season with salt and pepper.
  • If crème fraîche is unavailable, heat 1 cup whipping cream to lukewarm (85°F). Remove from heat and mix in 2 tablespoons buttermilk. Cover and let stand in warm draft-free area until slightly thickened (24 to 48 hours, depending on temperature of room). Refrigerate until ready to use.
  • Transfer salmon packages to plates. Spoon Dill Sauce around and serve.

3 medium eggs , 1 lightly whisked
250g pack ready-cooked lemon basmati rice (we used Tilda)
3 tbsp low-fat crème fraîche
small bunch parsley , chopped
1 ½ tbsp caper , rinsed and chopped
4 spring onions , sliced
3 hot-smoked salmon fillets (about 225g/8oz), skin removed, flaked
100g ready-roasted red pepper from a jar, drained and chopped
plain flour , for dusting
500g pack all-butter puff pastry
new potato , to serve (optional)

Steps:

  • Boil 2 of the eggs in a small pan of water for 8 mins. Cool under cold water, peel and quarter. In a large bowl, mix the rice, crème fraîche, parsley, capers, spring onions, salmon and peppers. Season well.
  • On a lightly floured surface, divide the pastry into 2, then roll out each piece to a rectangle about 27 x 21cm, making one slightly larger than the other. Lay the smaller rectangle on a baking sheet and spoon the rice mix on top, leaving a small border around the edge. Nestle the egg quarters in the rice. Brush the pastry edge with a little beaten egg, then top with the remaining pastry and seal the edges well with a fork. Trim any excess pastry. Chill for 15 mins. Meanwhile, heat oven to 220C/200C fan/gas 7.
  • Brush the parcel all over with beaten egg and make a small slit in the top. Bake for 25 mins until golden and hot. Serve in slices with new potatoes, if you like.
