TOMATILLO SALSA
This is a standard Mexican salsa that you find everywhere in Mexico. Tomatillos have a natural acidic and fresh note that gives them a little sparkle. (They keep that sparkle even after they're cooked.) Tomatillo salsa is a natural with the flavors of grilled meat, but it is a great do-ahead, have-on-hand salsa to freshen up anything off the grill or out of a skillet.

Steps:
- Pull the husks from the tomatillos and wash them under cool water until they no longer feel sticky. Cut them into quarters and put them into the work bowl of a food processor. Add the onion and garlic and process until smooth. Add the cilantro, jalapeno and lime juice and process until the jalapeno is finely chopped.
- Scrape the mixture into a small saucepan. Season lightly with salt and bring to a boil over medium heat. Cook, stirring occasionally, until most of the liquid is boiled off and the salsa looks relish-y, about 15 minutes. Cool before using. The sauce can be refrigerated for up to 1 week. If refrigerated, you may want to add a little salt and/or lime juice to the salsa before serving.
COSTA DEL SOL BARBEQUE SAUCE
A barbeque sauce straight from the sun-filled Spanish Costas. This will light up any barbeque.

Steps:
- Combine ketchup, brown sugar, red onion, honey, vinegar, butter, red chile pepper, garlic, cayenne pepper, paprika, salt, and black pepper in a saucepan; bring to a boil. Reduce heat to low and simmer, stirring occasionally, until sauce is slightly thickened, about 20 minutes. Blend with a hand blender until smooth.

SALSA DEL SOL
This salsa is chock-full of sun-loving ingredients like tomatoes, olives and capers. It's a splendid accompaniment to grilled halibut steaks, pork chops, sliced eggplant or sourdough bread.

- Preheat oven to 450°F. Place onion wedges on baking sheet. Brush with 1 tablespoon olive oil. Sprinkle with sugar. Season onion wedges with salt and pepper. Roast onion wedges until golden brown, turning occasionally, about 30 minutes.
- Combine all remaining ingredients in large bowl. Chop roasted onion. Mix onion and remaining 1 tablespoon olive oil into tomato mixture. Season salsa to taste with salt and pepper. (Salsa can be prepared 1 day ahead. Cover tightly and refrigerate. Bring salsa to room temperature before using.)

ESCABECHE CASA DEL SOL (MARINATED VEGETABLES)
This recipe appeared in Cooking Light magazine as a vegetable salsa to serve as an appetizer or with chips. I love the pickled jalapenos and carrots that are served in some of the Mexican restaurants here in Texas and this recipe sounds very close; except that it also includes jicama, zucchini and cauliflower. This dish takes some time to prepare; however, the recipe states that it should last up to 2 weeks in the refrigerator, but should be served at room temperature.

- Preheat oven to 400 degrees. Place peppercorns, thyme, marjoram, oregano, and bay leaves on a triple layer of cheesecloth. Gather the edges of the cheesecloth together, and tie securely. Remove white papery skin from garlic head (do not peel or separate the cloves), trim about 1/4 inch from top of garlic. Combine the garlic, carrot, oil and onions in a Dutch oven. Bake, uncovered, at 400 degrees for 30 minutes. Stir vegetables, add spice bag to onion mixture. Bake an additional 25 minutes or until vegetables are tender. Peel garlic cloves, place garlic, vegetables and spice bag in a large bowl.
- Drain jalapenos over a bowl, reserving liquid. Place the dutch oven over medium-high heat; stir in the reserved jalapeno juice and vinegar, scraping pan to loosen browned bits. Add water, and bring to a boil. Add cauliflower and jicama; cover, reduce heat, and simmer for 5 minutes. Remove from heat; add cauliflower mixture, jalapenos, and zucchini to vegetable mixture. Let stand at room temperature 2 hours, stirring every 30 minutes. Discard spice bag, cover and store in refrigerator. Vegetable mixture can be stored up to 2 weeks in the refrigerator; serve at room temperature.
