SANDY D'AMATO'S TUNA NOODLE CASSEROLE (LIGHTER)
For the Make it Lighter Game, I've lightened up WI Cheesehead's "Recipe #203659" By changing to low-fat or fat-free versions of the dairy products, omiting the olives and using baked chips for topping. This is now lighter and healthier.

Steps:
- Cook noodles, then drain in collinder and cool. Set aside.
- In same pot, melt margarine over medium heat. When melted add onion and celery. Sweat 4 minutes.
- Add flour and cook, stirring, 1 to 2 minutes - do not brown.
- Add bay leaf, dry mustard, skim milk and half and half and bring to a boil while stirring.
- Add Worcestershire sauce, salt, pepper, and hot pepper sauce and simmer 2 minutes.
- Add the grainy mustard, peas and cheese and remove from heat. Stir till chesse is melted. Add lemon juice, dill, stir.
- Add noodles and tuna to the sauce and mix throughly.
- Preheat oven to 350°F
- Place in a 9x9-inch or 11x7-inch baking dish and sprinkle with chips and cheese. Lightly spritz with cooking spray.
- Bake in preheated oven 25 to 30 minutes until hot, bubbly and crisp on top.

LIGHTER THAN MOM'S TUNA-NOODLE CASSEROLE

- Preheat oven to 400°F. Spray 8 x 8 x 2-inch glass baking dish with vegetable oil spray. Whisk wine and cornstarch in small bowl to blend. Whisk flour in heavy medium saucepan to remove any lumps. Gradually add milk to flour, whisking until smooth. Add broth and thyme and whisk over medium heat until liquid thickens and boils, about 4 minutes. Add cornstarch mixture and whisk until liquid boils and is smooth, about 1 minute. Remove from heat. Add Neufch‰tel cheese and whisk until melted. Stir in both cans of tuna with their liquid and frozen peas. Season to taste with salt and pepper.
- Meanwhile, cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain pasta. Return to pot.
- Add tuna mixture to pasta; stir to blend well. Transfer to prepared baking dish. Sprinkle with potato chips. Bake until top is golden and sauce bubbles around edges of dish, about 25 minutes.
EASY CREAMY NO BAKE TUNA NOODLE CASSEROLE
Tuna casserole was the first recipe I learned, but I didn't like the heavyness of 'cream of' soups. So I came up with this stove top version, with a milk based sauce its much lighter. Still creamy, delicious and full of flavor. Once you try it you won't go back.

Steps:
- Boil water for pasta, cook according to package. Add frozen peas & carrots in last 4 minutes of cooking.
- Heat 1 tbsp butter in skillet, add onion and celery, season with 1/4 tsp salt and 1/4 tsp black pepper. Cook on low for 10 minutes, until soft.
- In sauce pan, heat 2 tbsp butter, 1tbsp flour, whisk, 2 minutes. Gradually whisk in milk. Add parmsean cheese, salt, pepper, white pepper, paprika, garlic powder, dried rosemary. Heat on low until thickened.
- Add tuna and lemon pepper, to onion and celery.
- Add tuna mixture to sauce, stir well. Toss with drained pasta and veggies.
- Add more cheese if desired.

REDUCED FAT DIJON TUNA NOODLE CASSEROLE
This recipe is lower in fat than many, but better than any tuna noodle casserole I've tasted. Even my husband (that hates tuna) loved it! I typically use fresh Parmesean cheese, but for this one, I only had prepackaged grated cheese on hand. It turned out great!

- 1. Preheat oven to 500 degrees.
- 2. Cook noodles. Omit salt. Drain. Return pot to medium heat. Add butter. Add onion and cook until onion is translucent, stirring occasionally. Sprinkle with flour, until a paste forms. Gradually stir in milk, cook 5 minutes (or until slightly thickened), stirring with a wisk. Stir in cream cheese, mustard, salt, and pepper, cook 2 minutes, stirring constantly.
- 3. Remove pan from heat. Stir in noodles, peas, 1/4 cup Parmigiano-Reggiano cheese, and tuna. Spoon mixture into a shallow, 2 quart baking dish coated with cooking spray. Top with remaining cheese. Broil 3 minutes or until golden and bubbly. Let stand 5 minutes prior to serving.

- Place medium sauce pot over medium heat. Add butter and, when melted, add onion and celery. Sweat 4 minutes.
- Add flour and cook, stirring, 1 to 2 minutes - do not brown.

- Add Worcestershire sauce, salt pepper, and hot pepper sauce and simmer 2 minutes.

- Toss reserved noodles with tuna.
- Add lemon juice, dill, olives and the reserved sauce.

- TOPPING: Combine all ingredients and mix well.
