After much trial and error trying to make a more healthy meatloaf, I came up with this recipe. It is important to make this on a baking sheet so the liquids can be drained off the meatloaf. Also, do not put the topping on before the meatloaf has cooked for 30 minutes. Turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.

1 ½ pounds ground turkey
¾ cup crushed buttery round crackers
½ cup milk
1 small onion, chopped
1 egg
1 ½ teaspoons salt
2 cloves garlic, minced
¼ teaspoon ground black pepper
½ cup ketchup
¼ cup brown sugar
1 tablespoon Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a jelly roll pan.
  • Mix ground turkey, buttery round cracker crumbs, milk, onion, egg, salt, garlic, and black pepper in a bowl; shape into a loaf and place on the prepared jelly roll pan.
  • Mix ketchup, brown sugar, and Worcestershire sauce in a separate bowl; set aside.
  • Bake meatloaf in preheated oven for 30 minutes; remove from oven and drain liquids. Top meatloaf with ketchup topping. Return loaf to oven and continue baking until no longer pink in the center, about 30 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

2 tablespoons olive oil
2 small onions, 1 finely chopped and 1 cut into half-moon slices
3 tablespoons fresh parsley, chopped
1 1/2 pounds dark meat ground turkey
3/4 cup plus 3 tablespoons seasoned breadcrumbs
1 large egg
1/4 cup plus 3 tablespoons ketchup
1 teaspoon kosher salt, plus more for sprinkling
1 teaspoon freshly ground black pepper, plus more for sprinkling

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat 1 tablespoon oil in a small skillet over medium-low heat until hot but not smoking. Add the chopped onion and saute until softened and brown, about 6 minutes. Add the parsley and cook for another minute. Set aside.
  • In a large mixing bowl, combine the turkey with the breadcrumbs, egg, 1/4 cup of the ketchup, cooked onion mixture, salt and pepper. Mix until fully combined. Form into a loaf and transfer to a 9-by-5-inch loaf pan. Using a pastry brush or the back of a spoon, brush the remaining 3 tablespoons of ketchup over the loaf.
  • Evenly scatter the sliced onions over the loaf, drizzle with the remaining tablespoon of oil and sprinkle with salt and pepper. Bake until the meatloaf is cooked through, 55 to 60 minutes.

1/4 cup olive oil
1 large onion, chopped
2 teaspoons fresh thyme leaves
1 teaspoon minced fresh sage
Kosher salt and freshly ground black pepper
2 cloves garlic, grated
1 tablespoon tomato paste
3 tablespoons Worcestershire sauce
3/4 cup panko breadcrumbs
1/2 cup chicken broth
3 pounds ground turkey
2 large eggs
1/2 cup ketchup

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil.
  • Heat the olive oil in a large skillet over medium heat. Add the onions, thyme, sage, 1 teaspoon salt and 1/2 teaspoon pepper. Cook, stirring often, until the onions are softened, about 10 minutes. Add the garlic and cook 1 minute more. Add the tomato paste and cook for 1 minute, stirring to incorporate. Stir in the Worcestershire. Remove from the heat and allow to cool.
  • Add the panko to a large mixing bowl and pour over the chicken broth so the breadcrumbs soak up the liquid. Add the turkey, eggs, 2 teaspoons salt, 1/2 teaspoon pepper and the cooled onion mixture and mix well with your hands until well combined. Form the mixture into a 10-by-5-inch loaf on the foil-lined baking sheet. Coat the top and sides with the ketchup.
  • Put the meatloaf in the oven and reduce the oven temperature to 350 degrees F. Bake until a thermometer inserted in the center of the loaf reads 165 degrees F, 45 minutes to 1 hour. Let cool slightly before slicing and serving.

3/4 cup chicken stock
1 1/2 teaspoons tomato paste
5 pounds ground turkey breast
1 1/2 cups plain dry bread crumbs
3 extra-large eggs, beaten
3/4 cup ketchup

Steps:

  • Preheat oven to 325 degrees F.
  • In a medium saute pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature.
  • Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Spread the ketchup evenly on top. Bake for 1 1/2 hours until the internal temperature is 160 degrees F. and the meatloaf is cooked through. (A pan of hot water in the oven under the meatloaf will keep the top from cracking.) Serve hot, at room temperature, or cold in a sandwich.

1 cup onion, chopped
3 garlic cloves, minced
1 1/4 lbs ground turkey
1/2 cup breadcrumbs
1 egg (or 1/4 cup egg substitute)

Steps:

  • Melt butter in a skillet.
  • Cook onion and garlic in melted butter for 5 minutes, stirring occasionally.
  • Place mixture in a large bowl to cool for 5 minutes.
  • Combine turkey, bread crumbs, egg, 1/4 cup of the katchup, Worcestershire sauce, salt, and pepper with onion mixture.

  • Bake in a 350 degree oven for 50-55 minutes.

My family, and everyone I have ever served it too love it and can't believe that it is low fat, low cholesterol. And recently I started substituting oatmeal for bread crumbs since my husband's doctor put him on an even stricter diet than before. It is easy, there is no need to sauté the onions, bell pepper and garlic before mixing with the rest of the ingredients. It is also moist and very tasty. I usually serve with baked sweet potatoes and fresh green beans. It makes GREAT sandwiches the next day.

1 lb ground turkey breast
1/2 cup fat free egg substitute or 2 eggs
1/4 cup bell pepper, finely diced
1/2 cup onion, chopped
1 teaspoon dried oregano

2 teaspoons bottled minced garlic or 6 garlic cloves, minced
2 tablespoons Dijon mustard

  • Spray 9 x 5 loaf pan with cooking spray.
  • Combine all ingredients except tomato sauce and 1 tbsp Worcestershire in large bowl and mix well.
  • Add more egg if too dry, or add more oatmeal crumbs if too wet.
  • Press turkey mixture into pan.
  • Bake at 375°F for 45 minutes.
  • Mix tomato sauce and remaining 1 tablespoon Worcestershire together in small bowl.
  • Remove meatloaf from oven and pour tomato sauce mixture over meatloaf.
  • Return to oven for an additional 15- 20 minutes.
  • If using 99% Fat Free ground turkey breast meat, there is no need to drain fat before pouring tomato sauce on and returning to oven.
  • If you use the regular ground turkey, which is about 7% fat you might want to drain the fat off before pouring the tomato sauce on the loaf.

¾ pound ground turkey
¾ pound lean ground beef
1 small onion, chopped
1 cup milk
1 cup seasoned bread crumbs
1 large egg
1 teaspoon dried rosemary
½ teaspoon salt
¼ teaspoon ground black pepper
⅓ cup ketchup
2 tablespoons brown sugar
2 tablespoons prepared yellow mustard

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch loaf pan with cooking spray.
  • Combine ground turkey, ground beef, onion, milk, bread crumbs, egg, rosemary, salt, and pepper in a mixing bowl. Press into the prepared pan.

SARASOTA'S CLASSIC MEATLOAF

My all time favorite. I have my Recipe #399886, my Recipe #403644 and I also make my Mexican Meatloaf Stuffed Pepper Rings. But still this is my favorite. I have 5 secrets which I think really make the difference. 1) I saute my vegetables first; 2) I use fresh bread soaked in milk, NO dried bread crumbs for me; 3) Fresh herbs if possible; 4) A mix of beef, pork and veal; and 4) Do NOT over mix your meat. This was a recipe we served in our restaurant as our signature dish, and it always sold out. Served with sour cream and chive mashed potatoes and pan seared green beans in a balsamic butter. NOTE: Sometimes I will take this recipe and make 2 smaller loafs. Just free formed, but that way I eat one and slice the other and freeze for meatloaf sandwiches or for another dinner. Just adjust the cooking time accordingly.

1 lb ground beef (I do not use lean for this)
1/2 lb ground pork
1/2 lb ground veal
1 cup onion, very fine diced
1/2 cup celery, very fine diced
1/3 cup carrot, very fine diced
1 tablespoon minced garlic
3 slices bread, should equal about 1 cup (regular every day bread)
1 cup milk
2 large eggs, beaten (if using extra large or jumbo, just use 1)
1 tablespoon Worcestershire sauce
1 tablespoon steak sauce (like A1)
1 tablespoon fresh marjoram (or 1 teaspoon dried oregano)
1 tablespoon fresh thyme (or 1/2 teaspoon dried)
3 tablespoons fresh parsley
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon butter (to saute the vegetables)
1 cup ketchup
1/2 cup brown sugar
1 tablespoon cider vinegar

Steps:

  • Vegetables -- First. I just used my mini food processor to fine chop the vegetables - saves tons of time, but you can chop them by hand if you want. In a small saucepan melt the butter and saute the onion, celery, carrot and garlic on medium heat. Don't cook them too fast, you want them to sweat slowly for about 5 minutes until they are tender.
  • Base -- Then transfer the vegetables to a large bowl .Add in the egg, steak sauce, worcestershire, oregano, thyme, parsley, marjoram or dried oregano (both will well, I just love the fresh marjoram if you have it), salt and pepper. Mix well to combine.
  • Bread -- In a flat pan or dish, add the milk and soak each slice of bread just for a few seconds and then squeeze out most of the milk. Add the bread slices breaking them up into the bowl. Save the milk, don't throw it out. Mix the bread crumbs inches.
  • Meat -- Quick Note: You can use all beef for this, but I really prefer the mix. You could also, substitute turkey for the veal if you want, but - Beef, Veal and Pork are my favorites.
  • Now, add in the meat. You can use a spoon, but honestly, I use my hands to mix everything together. You don't want to over mix as the meat can get tough.
  • Loaf -- I prefer to free form my loaf rather than using a loaf pan, but if you want, you can use a loaf pan. If using a pan, I line it with parchment paper, but I really prefer to form mine on a cookie sheet lined with parchment paper. This way when you glaze the meat loaf you can glaze the sides as well. This is the way we always did it in the restaurant. As mentioned above, you can make 2 smaller loafs vs 1 loaf, the cooking time is all that changes.
  • Glaze -- In a small bowl, mix the ketchup, brown sugar and cider vinegar together.
  • Cook -- Middle shelf in a 350 degree oven. Depending on on thick you make your loaf, it should take between 50 minutes to 1 hour 15 minutes. I make mine fairly thick so it takes just about 1 hr 15 minute Bake for about 40-45 minutes and then glaze. Cook another 10-15 min and glaze one more time. Once done, remove and let rest 5 minutes before slicing.
  • Serve -- Just slice and enjoy! As I said, sour cream and chive potatoes and pan seared green beans are my favorite with this dish.

It is just a favorite of mine. A have a few other meatloaf recipes made with turkey, but this is by far my favorite. Well worth it. Serve with the standards with a twist. For baked or mashed potatoes - try mashed cauliflower, or mashed parsnips which are really good. And peas or green beans for me, but try some balsamic beans or creamed peas with parmesan. In fact I have some ground turkey and need to use it up, so it may just be dinner later this week. By all means if you prefer the tomato based sauce, that is fine. I just like this for a change.

4 scallions, save the whites for the topping (greens only)
1/2 cup roasted red pepper, chopped
1 large large egg
3 slices fresh bread
1 cup milk
2 teaspoons Worcestershire sauce
2 tablespoons barbecue sauce
3 teaspoons minced garlic
1 tablespoon italian seasoning (a all purpose seasoning will work great)
salt
pepper
1 1/2 cups barbecue sauce
1/2 cup orange marmalade
scallion, fine minced (the whites)

Steps:

  • Bread -- soak the slices of bread in the milk and then squeeze the milk out. Crumble and break it up and add to a large bowl.
  • Meatloaf -- Then to that same bowl add all the other ingredients, except for the turkey and the ingredients for the topping and mix well to combine. Then add in the turkey and mix being careful to over mix. Over mixing can make tough meatloaf.
  • Bake -- I like to use a baking sheet and free form my meatloaf but you could certainly use a loaf pan. I line a baking sheet and than form the meatloaf in a loaf type of shape. Bake in a 375 degree oven for about 45-50 minutes until done. It really depends on how thick or what type of pan you cook the loaf inches.
  • Sauce -- Mix the BBQ sauce, marmalade, and scallions and spoon or brush on the top of the loaf after the meatloaf is cooked half way. Then brush on again in another 10-15 minutes. And then right at end if you have any sauce left, brush or spoon on the remaining sauce and cook just another couple of minutes before finishing.
  • Serve -- Let set 5 minutes before slicing.
  • Don't forget you can always use a traditional tomato sauce or ketchup topping if you prefer, but I love this for a twist. Enjoy!
