A quick way to make crispy home fries. Great for breakfast or as a side dish. Potatoes may be shredded and cooked in the same manner for crispy hash browns.

Season with salt and pepper. Cover with a lid, and cook for 10 minutes. Remove the lid, and cook for another 10 minutes, turning frequently until brown and crisp on all sides..

2 russet potatoes
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon salt
½ teaspoon pepper
1 teaspoon chili powder
½ teaspoon dried oregano
2 cloves garlic, minced
2 tablespoons fresh cilantro, minced
½ cup fresh orange juice
¼ cup fresh lime juice
½ lb flank steak
1 tablespoon canola oil
½ cup shredded Pepper Jack cheese
sour cream
guacamole
1 tomato, diced
fresh cilantro leaf
cotija cheese, grated

Steps:

  • Preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper.
  • Cut the potatoes into wedges. In a large bowl, combine the potatoes, olive oil, salt, garlic powder, and paprika until each fry is fully coated.
  • Place the fries on the baking sheet and bake for 30-35 minutes, or until the fries are crispy and golden brown.
  • In a medium bowl, combine the salt, pepper, chili powder, oregano, garlic, cilantro, orange juice, and lime juice. Add the flank steak and marinate for 20 minutes.
  • Heat a cast-iron skillet with the canola oil over medium heat. Cook the steak for 3 minutes on both sides for medium-cooked steak. Remove the steak and let it rest for 10 minutes.
  • After 10 minutes dice the steak.
  • In an ovenproof skillet, place the baked french fries, Pepper Jack cheese, and diced carne asada, then broil until the cheese is melted.
  • Before serving, top with sour cream, guacamole, diced tomatoes, cilantro, and grated cotija cheese.

2 small sweet potatoes or yams, scrubbed and cut into 1-inch wedges
1/4 cup olive oil
1 1/2 tablespoons seafood seasoning
1/4 teaspoon kosher salt

Steps:

  • Preheat the oven to 450 degrees F. Place a rimmed baking sheet in the oven as it preheats for about 10 minutes.
  • Place the russet potatoes and sweet potatoes in a large bowl. Drizzle with the olive oil and sprinkle with the seafood seasoning and salt. Toss well to coat evenly.
  • Using a hot pad or towel, remove the hot baking sheet from the oven and pour in the wedges.

4 russet potatoes (about 2 pounds), peeled and cut into a 3/4-inch pieces
Kosher salt
5 slices bacon (about 4 1/2 ounces)
3 tablespoons vegetable oil, like soy, peanut, or corn
1 medium yellow onion, thinly sliced
Freshly ground black pepper
1 tablespoon chopped fresh parsley leaves, optional
Pinch cayenne pepper, optional

Steps:

  • Put the potatoes in a medium saucepan and cover with cold water by about 2 inches. Season with salt. Bring to a boil, lower the heat, and simmer until just tender, about 6 minutes. Drain and set aside.
  • Cook the bacon in a large cast iron skillet over medium heat until crisp, about 4 to 5 minutes. Transfer to a paper towel-lined plate. Pour all but 1 tablespoon of the bacon drippings into a small bowl and set aside. Add the onion and cook, stirring, until golden brown, about 8 minutes. Transfer to a bowl.
  • Wipe out the skillet and return to medium-high heat. Heat the remaining bacon fat and 2 tablespoons vegetable oil in the skillet. Add the potatoes, season with salt and pepper to taste, and arrange in a single layer. Cook, without stirring, until well browned on 1 side, about 4 minutes. Using a spatula, turn the potatoes in small sections, and continue cooking, turning occasionally, about 6 minutes or until well browned. Pommes de Terre Sarladaises are served often and everywhere in the Dordogne region of France. A 'hachis' of parsley and garlic is used in many dishes of the area. You can leave out the cèpes if necessary. 'Cèpes' are a naturally growing woodland mushroom much appreciated in France. You can buy bottled cèpes elsewhere in specialty stores.

1 1/2 lbs medium potatoes
3 tablespoons goose fat
1 teaspoon salt
1/2 teaspoon pepper
4 cepe mushrooms
4 garlic cloves
1 bunch fresh parsley

Steps:

  • Peel the potatoes. Rinse them and dry them. Cut them into 1/4-inch thick slices.
  • Heat the goose fat in a large, heavy pot over a medium-high heat. When it is good and hot, put the potatoes in and cover them. Lower the heat to low, and let them cook 1/2 hour.
  • Skin the garlic, and chop them in a food processor or by hand. Chop the parsley.
  • When the potatoes have cooked 1/2 hour, turn them gently with a long handled spoon so the crispy bottom bit moves towards the top. Add more goose fat if it is necessary.
  • Add the chopped garlic, add the salt and pepper, cut the cèpes in half and add them to the pot, cover and cook for another 10 minutes.
  • Finish cooking by turning the heat to high to brown the potatoes once again. Add the parsley. Turn them again with a spoon. Turn onto a platter and serve.
  • This goes well with roasts, duck of any kind, chicken, omelettes, or just anything, really!
