SPAGHETTI WITH GARLIC, OLIVE OIL AND RED PEPPER FLAKES



Spaghetti with Garlic, Olive Oil and Red Pepper Flakes image

1 pound dried spaghetti
1/2 cup extra-virgin olive oil
3 cloves garlic cloves
1 tablespoon red pepper flakes, plus more if desired
1/4 cup chopped fresh flat-leaf parsley
1 tablespoon chopped fresh basil leaves
1 tablespoon chopped fresh mint leaves

Steps:

  • Bring 6 quarts of salted water to a boil in a large pot. Add the pasta and cook until al dente, 6 to 8 minutes. Drain the pasta in a colander, reserving 2 tablespoons of the pasta water. The reserved pasta water will help create the sauce. Do not rinse pasta with water -- you want to retain the pasta's natural starches so that the sauce will stick.
  • Heat the olive oil in a large saute pan over medium heat. Add the garlic and saute until light brown and fragrant. It's important not to burn the garlic or else it will become bitter. Remove and discard the browned garlic. Add the red pepper flakes and saute for 1 minute. Carefully add the pasta and toss to coat in the flavored oil. Add the reserved pasta water and cook, stirring, to create a sauce, 1 minute.
  • Remove the pan from the heat and top with the fresh herbs.

4 medium onions, chopped
1/2 cup canola oil
12 cups chopped peeled fresh tomatoes
4 garlic cloves, minced
3 bay leaves
4 teaspoons salt
2 teaspoons dried oregano
1-1/4 teaspoons pepper
1/2 teaspoon dried basil
2 cans (6 ounces each) tomato paste
1/3 cup packed brown sugar
Hot cooked pasta
Minced fresh basil, optional

Steps:

  • In a Dutch oven, saute onions in oil until tender. Add the tomatoes, garlic, bay leaves, salt, oregano, pepper and basil. Bring to a boil. Reduce heat; cover and simmer for 2 hours, stirring occasionally., Add tomato paste and brown sugar; simmer, uncovered, for 1 hour. Discard bay leaves. Serve with pasta and basil, if desired.

1 lb bow tie pasta (farfelle)
1 lb asparagus (1-2 bunches)
1 lb mushroom, sliced (white or baby bellas)
1 cup mascarpone (one 8 oz container)
1/2 cup parmesan cheese, shredded
1/2 teaspoon nutmeg
1/4 cup butter
1/4 cup toasted walnuts or 1/4 cup pine nuts

Steps:

  • cut asparagus into 1-2 inch pieces.
  • in a large skillet, (deep if you have it) melt butter.
  • saute mushrooms and asparagus.
  • meanwhile, cook pasta in water with salt according to package.
  • drain pasta, reserving a cup of the salty starchy water.
  • add the pasta to the cooked mushrooms and asparagus.
  • stir in the mascarpone and parmesan cheese.
  • add water if you need to (i usually only add a couple TBS).
  • add nutmeg.
  • garnish with nuts and extra parmesan.
  • **sometimes I add cajun chicken or shrimp on top too!

6 ounces uncooked spaghetti
1/2 cup egg substitute
1/2 cup grated parmesan cheese, divided
3 ounces reduced-fat cream cheese
1/2 cup reduced-fat sour cream
1/2 cup chopped green pepper
1/2 pound fresh mushrooms, sliced
4 garlic cloves, minced
2 tablespoons butter
2 cups meatless spaghetti sauce
1/2 cup shredded part-skim mozzarella cheese

Steps:

  • Cook spaghetti according to package directions; drain. Add the egg substitute and 1/4 cup Parmesan cheese. Press onto the bottom and up the sides of a 9-in. deep-dish pie plate coated with cooking spray. In a bowl, beat the cream cheese, sour cream, green pepper and remaining Parmesan cheese. Spread over spaghetti crust., In a nonstick skillet, saute mushrooms and garlic in butter until tender. Spoon over cheese mixture. Spread with spaghetti sauce. Bake, uncovered, at 350° for 20 minutes. Sprinkle with mozzarella cheese; bake 5 minutes longer or until cheese is melted. Let stand for 10-15 minutes before cutting.

2 tablespoons olive oil
2 cups chopped green bell pepper
2 cups chopped onion
16 ounces sliced pepperoni sausage
2 cups shredded mozzarella cheese
1 cup grated Parmesan cheese

Steps:

  • In a large pot with boiling salted water cook angel hair pasta until al dente. Drain well.
  • In a large skillet over medium heat saute the chopped green bell peppers and onion in olive oil until tender. Stir in pepperoni slices until soft and heated through.
  • In a large bowl combine the drained pasta, sauteed vegetables ,and grated mozzarella and Parmesan cheese. Stir to evenly distribute ingredients. Pour out into a 2 quart microwave and oven safe dish.
  • Bake at 350 degrees C (175 degrees C) for 20 minutes. If using microwave, cook for 2 to 3 minutes.
