2 cups dark rum
1 1/2 cups freshly squeezed lime juice
2/3 cup sugar syrup (see note)

Steps:

  • Combine the rum, lime juice and syrup. Fill a cocktail shaker halfway with ice and fill two-thirds full with the cocktail mixture. Shake for 30 seconds and pour into frosted martini glasses. Serve ice cold.

  • Grate the zest of 2 limes; set aside. Squeeze the juice into a saucepan; add 8 thin slices ginger and 2 cups unsweetened pineapple juice. Boil until reduced to 1/2 cup, 8 to 10 minutes. Strain, then add the lime zest, 1 cup apricot preserves and 1/4 cup dijon mustard.

Steps:

  • Quarter lemons and place in single layer on cookie sheet. Place in freezer until frozen. Place in ziplock bag and remove as needed. Lemons can be frozen whole but they will be mushy when defrosted although the juice will be fine.
  • You can also freeze lemon slices the same way.
  • The juice can be frozen in ice cube trays for use layer as well as the zest.

2 tablespoons apricot preserves
1 teaspoon spicy brown mustard
4 (8 ounce) fresh salmon fillets

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Mix apricot preserves with mustard.
  • Place salmon fillets on the prepared baking sheet. Brush 1/2 of the apricot mixture over top.
  • Bake on the top rack of the preheated oven for 16 minutes. Pull from the oven and brush with remaining apricot mixture. Cook until salmon flakes easily with a fork, about 2 more minutes.

2 lemons
3 tablespoons unsalted butter, melted
2/3 cup light brown sugar, firmly packed
1/2 cup slivered almonds
1/2 cup whole almond
1 1/2 inches gingerroot, peeled, coarsely chopped
1/3 cup butter, softened
2/3 cup granulated sugar
1 egg
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups reduced-fat buttermilk

Steps:

  • Preheat oven to 350 degrees F.
  • Finely grate lemons for zest, then set zest aside. Remove white pith from lemons, then thinly slice, discarding seeds.
  • Coat 9"x9" cake pan with cooking spray.
  • Pour in melted butter, then arrange lemon slices in concentric pattern over butter.
  • Sprinkle with brown sugar & slivered almonds.
  • In food processor, combine whole almonds, reserved lemon zest & ginger, then pulse until combined & slightly moist.
  • In large bowl combine butter & sugar, beating with mixer at medium speed until fluffy.
  • Add egg & extracts & beat until blended.
  • In another bowl sift or wisk together flour, baking powder, baking soda & salt.
  • Add flour mixture to butter mixture alternately with buttermilk, beating at low speed after each addition.
  • Stir in almond mixture, then pour batter on top of lemons.
  • Bake 25-35 minutes until top is golden brown.
  • Remove from oven & cool 5 minutes on wire rack, before inverting onto serving plate.
