1 lb loose breakfast-style pork sausage
3 medium apples, divided
1 small yellow onion, diced
1 tablespoon granulated sugar
maple syrup, to serve

Steps:

  • 3 medium apples, divided.
  • Heat the oven to 400 degrees.
  • 2. In a blender, combine the eggs, flour, milk, yogurt, vanilla, cinnamon and salt. Blend until very smooth, then set aside. Alternatively, the batter can be made in a bowl using a whisk.
  • 3. Coat a large cast-iron or oven-safe nonstick skillet with cooking spray, then heat it over medium-high. Add the sausage and cook, breaking up the meat, until just starting the brown, about 10 minutes.
  • 4. Meanwhile, peel and core 2 apples, then cut them into 1/2-inch chunks. Add the cut apples and onion to the skillet, then saute until they are just tender, about 6 to 8 minutes. Spread the sausage-apple mixture evenly over the bottom of the skillet and remove the pan from the heat.
  • 5.Core the remaining apple then cut it crosswise into very thin slices. A mandoline is best for this, but a food processor or careful knife work is fine, too.
  • 6. Pour the batter evenly over the sausage-apple mixture. Tilt the pan as needed to ensure it spreads evenly in the pan. Arrange the apple slices over the top of the batter; it's fine if they overlap. Sprinkle the apples with the sugar, then bake for 20 minutes.

2 tablespoons granulated sugar, divided
1/4 teaspoon ground cinnamon

1/2 cup all-purpose flour
1/4 teaspoon kosher salt
Confectioners' sugar
Pure maple syrup, for serving

Steps:

  • Preheat the oven to 425 degrees F.
  • Peel, core, and slice the apple 1/8 inch thick. Melt 3 tablespoons of the butter in a 9-inch ovenproof crêpe pan or skillet over medium to medium-high heat. Add the apple, 1 tablespoon of the granulated sugar, and the cinnamon and toss well. Sauté the apple for 5 to 7 minutes until tender, tossing occasionally. Spread the apple out in the pan and keep hot over low heat.
  • Meanwhile, melt the remaining tablespoon of butter in the microwave. In a medium bowl, whisk together the milk, eggs, melted butter, and vanilla. In a small bowl, combine the flour, the remaining tablespoon of granulated sugar, and the salt. Whisk the flour mixture into the milk mixture, whisking until there are no lumps. Pour the batter over the cooked apple in the hot pan and immediately place in the oven.
  • Bake for 12 to 15 minutes, until the pancake is puffed and the edges start to get crispy and browned. Dust lightly with sifted confectioners' sugar, cut in wedges, and serve hot with maple syrup.

1 teaspoon cinnamon
1 tablespoon sugar
1 apple, cored and chopped
3 eggs
3/4 cup all-purpose flour
3/4 cup milk

Steps:

  • Preheat oven to 425 degrees. Place butter, cinnamon and sugar in a 9-inch cake pan. Set in the oven while preparing the other ingredients. Core and chop apple and place in baking pan with butter mixture, swirl around and return to oven. On a blender or food processor, mix together eggs and flour, process/blend until smooth. Pour in milk to blender, blending again until smooth.
  • Remove pan from oven and carefully pour batter into prepared pan. Bake in a preheated oven for 10 mintues or until set and ligthly browned. Serve immediately!

⅔ cup whole milk, at room temperature

2 tablespoons unsalted butter - melted, cooled, and divided

⅓ cup shredded white Cheddar cheese
1 teaspoon sliced fresh chives
½ teaspoon minced fresh thyme

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Place a 12-inch cast iron skillet into the oven while it preheats.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Combine eggs, milk, flour, 1 tablespoon butter, salt, and pepper in a blender; blend until batter is smooth and thin, about 2 minutes.
  • Carefully remove cast iron skillet from oven using an oven mitt and pour remaining 1 tablespoon butter into the skillet, quickly and carefully swirling to coat the skillet with butter. Pour batter into the skillet and transfer to the oven.
  • Bake in the oven until puffed around the edges and cooked through, 18 to 20 minutes.

I found this recipe on a site called Food for Tots. Looks baby friendly. A wonderful light egg soufflé that kids are sure to love and it's easy to make! Dutch babies also make a good dinner meal accompanied by Canadian Bacon or Ham and take less of the cook's time than regular pancakes.

1/3 cup butter or 1/3 cup margarine
2 medium apples
2 teaspoons cinnamon
3 tablespoons sugar
4 eggs
1 cup milk
1 cup flour

Steps:

  • Preheat oven to 425°F Put butter into a 3 to 4 quart frying pan and place in oven to melt.
  • While butter is melting, peel and core 2 medium apples, then cut them into thin slices.
  • Remove the pan from the oven and add cinnamon and sugar to the melted butter.
  • Stir in the sliced apples.
  • Return pan to oven for about 3 minutes.
  • Put the eggs and milk into a blender and whip at high speed for 1 minute.
  • Set the blender to low speed and slowly add the flour until well blended.
  • Remove the pan from oven and pour egg batter over the butter and apples.
  • Bake for 20-25 minutes or until the pancake is raised and golden brown.
  • Cut in wedges and dust with powdered sugar.
  • Serve immediately.

I know most people know Dutch Babies as a sweet breakfast food- but not in my family! Sausage and cheese make this breakfast classic more hearty.

4 eggs
1 cup flour
1 cup milk
1/2 teaspoon kosher salt
1/8 teaspoon fresh ground pepper
1 cup cheese, shredded (use a good melting type like cheddar or Jack)
1 cup cooked sausage (you can use crumbly sausage or even better, smoked sausage cut into bite sized pieces)
2 tablespoons butter or 2 tablespoons margarine

Steps:

  • Preheat oven to 425 degrees.
  • Put margarine and sausage into the baking dish and place in the oven to heat about 5 minutes before you add the batter. Keep a close eye on it because it will burn if you let it.
  • Blend eggs, milk, salt, and pepper in a blender or with a mixer. Add the flour 1/4c at a time until just incorporated evenly (don't overmix otherwise you'll activate the gluten in the flour and have a thick dutch baby rather than a fluffy one).
  • Add batter immediately after it's ready to hot baking dish.
  • Sprinkle cheese over the batter and bake for 20-25 minutes, until puffy and Golden brown.
  • Let it cool a few minutes before cutting- it will deflate during this period.
  • Enjoy!
  • Note: this is my family recipe, and it was is told to me as a ratio- 1/4 milk & flour for every egg- feel free to go up or down a size on your baking dish just adjusting according to the ratio!
