SAUSAGE AND MUSHROOM BAKED RIGATONI
Italian sausage and sauteed mushrooms make this three-cheese pasta bake special.

Steps:
- Preheat the oven to 450 degrees F. Bring a large pot of salted water to a boil.
- Heat 2 tablespoons of the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of tomatoes and 1 cup of water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly, add the basil and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Discard the basil. Season with salt and pepper.
- Meanwhile, heat the remaining 1 tablespoon oil in a large skillet over medium-high heat. Add the sausage and cook, breaking up any clumps with a wooden spoon, until brown, about 5 minutes. Transfer the sausage to a large bowl with a slotted spoon. Add the mushrooms to the skillet and cook, stirring occasionally and reducing the heat slightly if necessary, until golden brown, about 6 minutes. Add the mushrooms to the bowl with the sausage.
- Cook the rigatoni in the salted boiling water until very al dente, about 2 minutes less than the package directions. Drain the pasta and add it to the bowl.
- Add the tomato sauce and half of the provolone and pecorino to the bowl and stir well to combine. Transfer the pasta to a 3- to 4-quart baking dish and dollop spoonfuls of the ricotta on top. Top with the remaining provolone and pecorino. Bake, uncovered, until browned, about 15 minutes. Let the pasta stand about 10 minutes before serving. Sprinkle with chopped basil.
SAUSAGE-AND-MUSHROOM PASTA BAKE
Steps:
- Heat oven to 375°F.
- Remove and discard casings from sausage if necessary; crumble into large skillet. Cook on medium heat until evenly browned, stirring frequently. Remove sausage from skillet with slotted spoon; set aside.
- Add mushrooms to reserved drippings in skillet; cook 3 to 4 min. or until mushrooms are lightly browned, stirring frequently. Remove from heat. Add pasta, pasta sauce, sausage and 1/2 cup cheese; mix lightly.
- Spoon into 8-inch square baking dish sprayed with cooking spray; top with remaining cheese.
- Combine bread crumbs and oil; sprinkle over pasta mixture.
- Bake 20 min. or until heated through.

MARSALA AND MUSHROOM PASTA BAKE

- Set up your grill for indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
- Bring a large pot of salted water to a boil on the direct heat side of the grill and cook the pasta 3 minutes less than the package directions. Place a large sauté pan over the direct heat side of the grill. Add the butter and once melted, add the mushrooms and a pinch of salt. Stir and cook for 1 minute so the mushrooms soak up some of the butter. Then add the onions, garlic and thyme. Stir and cook until the onions are translucent and the mushrooms are slightly browned, 2 to 3 minutes. Stir in the flour, coating all of the vegetables. Deglaze the pan with the marsala, smoothing out any lumps. Stir in the vegetable stock and milk. Season with salt, pepper and nutmeg and bring to a simmer.
- Add the cooked pasta, parsley and mushroom marsala mixture to an extra-large mixing bowl. Mix to combine well, then transfer back to the sauté pan. Top with the mozzarella and Parmesan. Place the sauté pan on the indirect heat side of the grill, close the grill with the lid and bake until the cheese is melted and golden brown in some spots, 3 to 5 minutes. Remove from the grill and serve!

- Cook penne in a pasta pot of boiling salted water (2 tablespoons salt for 6 quarts water) until al dente. Reserve 1/2 cup pasta-cooking water, then drain pasta and transfer to a flameproof 3-quart baking dish.
- Preheat broiler.
- Meanwhile, cook sausage in 1 tablespoon oil in a 12-inch nonstick skillet over high heat, stirring occasionally and breaking up any large pieces, until no longer pink. Transfer with a slotted spoon to a bowl, leaving fat in skillet.
- Add remaining tablespoon oil to skillet along with mushrooms and garlic, then cook over high heat, stirring occasionally, until mushrooms are golden, about 3 minutes.
- Return sausage to skillet along with cream, reserved 1/2 cup cooking water, a rounded 1/4 teaspoon salt, and 1/4 teaspoon pepper and boil over high heat, stirring once or twice, until thickened, about 4 minutes. Pour over pasta, then stir in Parmigiano-Reggiano, 1/2 cup mozzarella, and salt to taste. Spread evenly in baking dish and top with remaining mozzarella.
- Broil 3 to 4 inches from heat until golden brown in spots, about 5 minutes.

Steps:
- Saute sausage in heavy large pot over medium-high heat until brown, about 12 minutes.
- Using slotted spoon, transfer sausage to large bowl.
- Add oil to drippings in pot.
- Add mushrooms and onions; saute until tender and brown, about 15 minutes.
- Stir in 1 cup chopped basil, oregano, and garlic; sauté 1 minute.
- Add wine; cook until almost absorbed, about 4 minutes.
- Add sausage and crushed tomatoes; cover and simmer over medium heat until thickened, about 25 minutes.
- Add diced tomatoes and butter; simmer until tomatoes are soft, stirring frequently, about 15 minutes.
- Season with salt and pepper.
- (Can be made 1 day ahead. Cool slightly. Chill uncovered until cold, then cover and refrigerate. Bring to simmer before continuing.).
- Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally.
- Drain well; return to pot.
- Pour sauce over pasta; toss to coat.
- Add 1/2 cup cheese and 1/2 cup basil; toss to combine.
- Season with salt and pepper.
- Transfer pasta to serving dish.
- Serve, passing remaining cheese separately.

- Bring a large pot of lightly-salted water to a boil; cook the penne uncovered, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain and return to the pot.
- Meanwhile, heat 1 tablespoon of the olive oil in a large skillet over medium-high heat. Cook and stir the sausage in the hot oil until crumbly and no longer pink, about 7 minutes: remove from the skillet, leaving the fat in the pan, and set aside. - Add the sausage meat and red pepper flakes and sauté for about 10 minutes, until the meat is cooked through. Remove from the pan and set aside.

- Dry-fry the sausage meat in a non-stick pan for 8-10 mins until browned, breaking it up with a wooden spoon, then remove and set aside. Fry bacon and mushrooms for 5-8 mins until golden, return the sausage meat and keep warm.
- Cook the pasta following pack instructions. Make the sauce by beating together the Parmesan, egg yolks, most of the parsley and the crème fraîche. When the pasta is cooked, drain, reserving a ladle of the cooking water.
